AWARD WINNING ALMOND DESSERT BARS

These unbelievably delicious almond dessert bars are so good, they won a 1st place at a local baking contest. The baker of these bars was kind enough to share the recipe with us.

Number Of Ingredients 12

1 cup salted butter (softened to room temp)
1/2 cup powdered sugar
2 cups all purpose flour
2 large eggs (room temp)
1 8oz package regular cream cheese, fully softened
1/3 cup granulated sugar
1 tsp pure almond extract
1 cup powdered sugar
1/4 cup salted butter (softened to room temp)
1 1/2 TB milk (I used whole milk)
1 tsp pure almond extract
Garnish: Almond slices or slivers

Steps:

  • Preheat oven to 350F with rack on lower middle position. Grease a 9x13 pan and set aside.
  • Make the Crust: In a large bowl, combine the butter and powdered sugar; using electric (or stand) mixer fitted with paddle attachment, mix together on medium high speed until light and fluffy, 3-4min. Gently add flour and mix on low speed just until combined. Mixture will be crumbly, so use hands to form a dough ball. Press evenly into prepared glass pan to form bottom crust (I use bottom of a flat glass cup to press down evenly.) Bake 18 minutes or until lightly browned and set. Remove from oven, but leave oven on.
  • While the crust is baking, make Filling: In a large bowl, combine eggs, very-soft cream cheese, and sugar. Whisk together until creamy and no lumps remain (it really helps if your cream cheese is quite soft to start with.) Add almond extract and mix to combine. Evenly pour the filling over crust, using rubber spatula to scrape all filling. Bake 15-20 min or until set. Let dessert cool completely on wire rack.
  • Frost the Bars: In a bowl, combine all frosting ingredients. Whisk until smooth and no more lumps. Evenly frost over cooled dessert bars (be sure bars have cooled completely before frosting.) Cover, chill, and serve with almond slices on top.

Almond Bars are tender, lightly sweetened shortbread-like bars that are so good, you'll find yourself doubling the recipe every single time you make them.

Number Of Ingredients 12

1 cup sugar
1/2 cup butter, room temperature
1 egg, room temperature
1/2 teaspoon almond extract
1 3/4 cups all purpose flour *
2 teaspoon baking powder
1/4 teaspoon kosher salt
1 tbsp milk
1/2 cup sliced almonds
1 cup powdered sugar
1/4 tsp almond extract
1-2 tbsp milk

Steps:

  • Preheat the oven to 325 degrees. Sift together the flour, baking powder and salt and set aside. Cream together the butter and the sugar. Add the egg and the almond extract and then mix until light and fluffy. Slowly add the flour mixture to the butter mixture. Mix until combined.
  • Press the dough into the bottom of a well-greased 9x13 pan. Press with your fingers or a pastry roller to smooth the top of the dough. Using a pastry brush, brush a tiny bit of milk across the top of the dough. Sprinkle with sliced almonds and very lightly press them into the top of the dough.
  • Bake for 18-20 min, or until just barely beginning to brown around the edges. Do not let the bars brown at all. Let cool in the pan for 5 minutes and then cut into bars. If they are too soft to cut, let them cool for a few more minutes. Carefully transfer the bars to a wire rack to cool completely before icing.
  • To make the icing: Add just a tiny bit of milk at a time to the powdered sugar. If the consistency is too thick, it won't drizzle nicely over the bars. If it is too thin, the icing will just melt into the bars. If you are unsure, test a bit of it on the edge of one bar before drizzling the icing over the entire batch.

3/4 cup butter, softened
3/4 cup confectioners' sugar
1-1/2 cups all-purpose flour
3/4 cup seedless raspberry jam
3 large egg whites
6 tablespoons sugar
1/2 cup sweetened shredded coconut
1 cup sliced almonds, divided
Additional confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and confectioners' sugar until light and fluffy. Gradually add flour and mix well. Press onto the bottom of a greased 13x9-in. baking pan. Bake 18-20 minutes or until lightly browned., Spread jam over crust. In a large bowl, beat egg whites until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. Fold in coconut and 1/2 cup almonds. Spread over jam. Sprinkle with remaining almonds. Bake 18-22 minutes or until golden brown. Cool completely on a wire rack. Dust with additional confectioners' sugar if desired.

1 3/4 cups all-purpose flour
1/4 teaspoon salt
2 teaspoons baking powder
1/2 cup margarine or 1/2 cup butter
1 cup sugar
1 large egg
1/2 teaspoon almond extract
milk
1/2 cup sliced almonds
1 cup icing sugar
1/4 teaspoon almond extract
3 -4 teaspoons milk

Steps:

  • Preheat oven to 325°.
  • Stir together flour, baking powder and salt.
  • In a large bowl beat margarine or butter till softened.
  • Add sugar and beat till fluffy.
  • Add egg and the 1/2 teaspoon of almond extract and beat well.
  • Add the flour mixture and beat till well mixed.
  • Divide the dough into fourths, form each portion into a 12 inch roll.
  • Place 2 of the rolls 4 to 5-inches apart on an ungreased cookie sheet.
  • Flatten each roll till it is about 3 inches wide.
  • Repeat with the remaining rolls.
  • Brush each flattened roll with milk and sprinkle about 2 tablespoons of almonds each.
  • Bake in a 325° oven for 12-14 minutes or till edges are lightly brown.
  • While still warm, cut crosswise on the diagonal into 1 inch strips.
  • Cool completely on a wire rack.
  • Stir together the powdered sugar, the almond extract and enough of the 3-4 teaspoons of milk to make a drizzling consistency.
  • Drizzle over the cool bars.

1 cup butter, softened
2 cups flour
1/2 cup sugar
8 ounces cream cheese
2 eggs
1/2 cup sugar
1 teaspoon almond extract
3 cups powdered sugar

3 tablespoons milk
1 -2 teaspoon almond extract

Steps:

  • Mix the 2 sticks of butter, 2 cups of flour, and 1/2 cup of sugar.
  • Pat in a 9 by 13 pan. Bake at 350 degrees for 15 minutes.
  • Beat the cream cheese, 2 eggs, 1/2 cup sugar, and 1 t. almond extract until creamy.
  • Pour over crust.
  • Bake at 350 degrees for 15 minutes.
  • Cool.
  • Mix together 3 cups powdered sugar, 1 stick of butter, 3 T. milk, and 1-2 t. almond extract.
  • Beat with mixer.
  • Spread over bars.

Making traditional Scandinavian almond-flavored cookies just got easier by using a cookie mix.

1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup butter, softened
1 egg
2 tablespoons Gold Medal™ all-purpose flour
1 teaspoon almond extract
1 1/2 teaspoons milk
3/4 cup sliced almonds
1 cup powdered sugar
1/4 teaspoon almond extract
5 to 6 teaspoons milk
3 tablespoons sliced almonds

Steps:

  • Heat oven to 375°F. Line 2 large cookie sheets with cooking parchment paper; spray with cooking spray. In large bowl, mix cookie mix, softened butter, egg, flour and 1 teaspoon almond extract until dough forms.
  • Divide dough into 3 pieces. Place 2 dough pieces on first cookie sheet. Press each piece into 12x2 1/2-inch rectangle, leaving 4 inches between rectangles. Place remaining piece of dough on second cookie sheet, and repeat shaping.
  • Brush each rectangle with 1/2 teaspoon milk; sprinkle with 1/4 cup almonds. Press almonds lightly into tops of dough.
  • Bake one cookie sheet at a time 10 to 12 minutes or until edges are golden brown (center will look soft). Cool 1 minute. Using sharp knife, cut each log into 1-inch diagonal slices, making sure to cut completely through almond slices while cutting. Remove from cookie sheet to cooling rack, leaving slices on parchment paper. Cool completely, about 30 minutes.
  • In small bowl, stir powdered sugar, 1/4 teaspoon almond extract and 5 to 6 teaspoons milk until desired consistency. Drizzle over cookies; sprinkle 3 tablespoons almonds over tops. Let stand about 1 hour or until glaze is set. Store loosely covered at room temperature up to 2 days.

1 can (8 oz) or 1 package (7 oz) almond paste, crumbled into 1/2-inch pieces
1/4 cup sugar
1/4 cup butter or margarine, melted
2 eggs
1/2 cup sliced almonds
2 oz white chocolate baking bar, coarsely chopped (1/3 cup)
2 tablespoons shortening
1/4 cup sliced almonds

Steps:

  • Heat oven to 350°F. In large bowl, stir cookie base ingredients until soft dough forms. Spread in ungreased 13x9-inch pan. Bake 15 to 18 minutes or until light golden brown.
  • Meanwhile, in large bowl, beat almond paste, sugar and 1/4 cup melted butter with electric mixer on low speed until blended. Add 2 eggs; beat until well blended (mixture may be slightly lumpy).
  • Spread almond paste mixture over partially baked base. Sprinkle with 1/2 cup almonds. Bake 15 to 20 minutes longer or until filling is set (filling will puff up during baking). Cool completely, about 1 hour.
  • In 1-quart heavy saucepan, melt white chocolate and shortening over low heat, stirring constantly, until smooth. Pour and spread over cooled bars. Sprinkle with 1/4 cup almonds. Let stand about 30 minutes or until topping is set. For bars, cut into 8 rows by 4 rows. Store covered at room temperature.
