2 pkg (8 oz. each) cream cheese
1 pkg (8 oz.) shredded Colby cheese
1 pkg (8 oz.) shredded mozzarella cheese
2 Tbsp onion
5-6 Tbsp Catalina dressing
4 oz beef

Steps:

  • Mix the first 5 ingredients together.
  • Then shape into two balls and roll the balls in the beef. Wrap with cling wrap.
  • Put in fridge until firm. Serve with crackers.

The cheese ball is a stalwart of the Midwest cocktail party, where it can be fashioned from processed Cheddar cheese and port wine, or pineapple and cream cheese. This recipe relies on the leftover ends of good cheese or even just one kind of good-quality, sharp cheese like Gruyère. The idea of adding butter comes from Vivian Howard, the North Carolina chef who features a cheese ball with blue cheese, chopped dates and bacon in her cookbook "Deep Run Roots." She calls hers a party magnet, and indeed, for all of the shade thrown at cheese balls, they are often the first thing to be eaten. They can be served with chutney, jam or simply alongside the best-quality crackers you can find.

Yield 1 12-ounce cheese ball, about 8 to 10 servings

Number Of Ingredients 10

4 tablespoons good-quality salted butter
1 cup shredded sharp, flavorful cheese, in any combination that might include Gruyère, Cheddar or blue cheese
3 ounces fresh goat cheese
4 ounces cream cheese
1 heaping tablespoon finely chopped scallions
1/4 teaspoon cayenne
1/4 teaspoon fish sauce
1 tablespoon lemon juice
1/3 cup chopped, salted roasted pecans
1 heaping tablespoon chopped flat leaf parsley

Steps:

  • Allow the butter and cheeses to come to room temperature. They should sit out of the refrigerator for at least 30 minutes.
  • Put everything except the pecans and parsley in the bowl of a stand mixer fitted with the paddle attachment. Beat until smooth, scraping down the sides of the bowl once or twice. It should take about 4 minutes.
  • Plop the mixture onto a piece of waxed paper and gently form into a ball. Place in the refrigerator for at least 15 minutes or until firm enough to work with.
  • Mix the pecans and parsley together on a large plate or a cutting board, then roll the cheese ball in the mixture. Cover any surfaces with a sprinkling of the mixture and pat into the sides until you have an evenly coated ball.
  • Wrap well in plastic wrap and refrigerate. When ready to serve, let the ball sit out for at least a half hour to soften. Serve with good plain crackers or small toasts.

I received this recipe from a very dear friend a few years before she passed away..I was never a cheeseball fan until she had me to try this one...I fell 'head over heels in love'..it is the ONLY cheeseball I eat. It is requested for all holiday/family functions...My D-I-L's mother even called me a few years back and ordered 12...

3 pkg (8 oz.each) cream cheese, room temp.
1 Tbsp worcestershire sauce
1 1/2 tsp garlic powder
5-6 green onions, finely chopped
1 tsp accent
3 pkg (approx. 3 oz. each)chipped beef, finely diced

Steps:

  • 1. Reserve approx. 1 package of diced meat for garnish.
  • 2. Thoroughly mix all the other ingredients.
  • 3. When thoroughly mixed place in a pretty bowl or shape into a ball. Depending on size you want, you can get 2 to 3 cheeseballs from one recipes.
  • 4. Cover top with the reserved meat and then cover with plastic wrap.
  • 5. Refrigerate until well chilled, over night is best, so the flavors all have time to blend.
  • 6. Serve with a variety of crackers. ***My favorites are: Ritz, Club, and Townhouse..I personally do not care for the flavored crackers with this cheeseball..But you might like them very well..
  • 7. **I like using the chipped ham luncheon meat also to make this recipe..these pkgs. of meat are the ones that usually hang in the lunch meat section of grocers' cooler dept...in my local Save-A-Lot they cost about $.45/pkg.
  • 8. **This meat dices much easier when frozen, if you are dicing by hand as I do.
  • 9. **I will be experimenting with my new food processor for doing all the chopping and dicing..should make this a very quick and easy recipe!!

There are two other very similar recipes posted but I wanted to share my sister's presentation. Even klutz's can do this and it makes it special. I love the simple ingredients and pure cheese flavor. Or use your favorite cheese ball and borrow the presentation.

Yield 1 cheese ball

Number Of Ingredients 4

2 (8 ounce) packages cream cheese
3 -4 ounces crumbly blue cheese
1/4 cup minced onion, you pick the type of onion
1 package whole almond

Steps:

  • Mix all ingredients except almonds and form to shape of a pine cone on serving tray.
  • (Imagine a pine cone hanging from a branch. Now mentally slice that pine cone in half lengthwise and lay it on your serving tray. That's the shape you want to make.) Starting at the"bottom" of the pine cone lay almonds down flat on cream cheese with narrow end at bottom and wider, rounded end at top.
  • Continue with more rows of almonds across the pinecone, slightly overlapping each row on the previous row.
  • Remember that branch the pine cone was hanging from?
  • Place your piece of evergreen like that.
  • Obviously, don't use something poisonous or you can use a piece of silk (artificial) evergreen.
  • They make some very attractive ones now.
  • Or skip all that, form it into a ball and roll it in chopped pecans.
  • Serve at room temperature.
