Yield 2 pizzas (10 slices each).

Number Of Ingredients 21

1 package (1/4 ounce) active dry yeast
2 cups warm water (110° to 115°)
3 tablespoons canola oil
1-1/2 teaspoons salt
4 to 6 cups all-purpose flour
SAUCE:
2 cans (8 ounces each) tomato sauce
1-1/2 teaspoons grated onion
1 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon pepper
TOPPINGS:
4 cups shredded part-skim mozzarella cheese
4 ounces Canadian bacon, diced
1 package (3-1/2 ounces) sliced pepperoni
1 medium sweet red pepper, sliced
1 medium green pepper, sliced
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup chopped onion
1 cup grated Parmesan cheese
1/2 cup minced fresh basil

Steps:

  • Preheat oven to 375°. In a large bowl, dissolve yeast in warm water. Add the oil, salt and 2 cups flour. Beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rest in a warm place for 10 minutes., Combine sauce ingredients; set aside. Divide dough in half. On a floured surface, roll each portion into a 13-in. circle. Transfer to two greased 12-in. pizza pans; build up edges slightly. , Bake for 15 minutes or until lightly browned. Spread with sauce; sprinkle with toppings. Bake until cheese is melted, 15-20 minutes longer.

This is an extremely easy/fast way to prepare a delicious pizza that is light enough to be a snack, serves well as an appetizer, or is so good that is can be devoured alone! I make this often when entertaining guests and it always goes fast. You can make any sort of topping variations. The one below is the classic way I usually prepare it. I cook this also with my family. Each person gets their own tortilla to, as my kids say, decorate.

1 (8 inch) soft flour tortilla
1 teaspoon olive oil
1 pinch garlic powder
salt and ground black pepper to taste
3 tablespoons tomato sauce
1 cooked chicken breast, sliced
½ green bell pepper, chopped
2 green onions, finely chopped
⅓ cup shredded mozzarella cheese
1 pinch dried oregano

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place tortilla on a baking sheet. Brush with olive oil; sprinkle garlic powder, salt, and pepper on top.
  • Bake in the preheated oven until golden, 3 to 5 minutes. Remove tortilla from the oven and spread tomato sauce on top. Arrange chicken breast, green bell pepper, and green onions over tomato sauce; cover with mozzarella cheese.
  • Bake in the preheated oven until cheese is melted, about 5 minutes. Sprinkle oregano over cheese. Slice pizza into wedges using a pizza cutter.

The tortilla pizza is a genius quick meal! It forms the crust of this crispy pie, ideal for an easy dinner or appetizer.

8-inch flour tortillas* (the thicker the better)
3/4 cup Homemade Pizza Sauce (required!)
1 cup shredded mozzarella cheese
Grated or shredded Parmesan cheese, for sprinkling
Additional toppings as desired, chopped bite sized (see above)
Fresh basil, for garnish (optional)

Steps:

  • Preheat the oven to 450 degrees Fahrenheit with a pizza stone if you have one (or a cast iron skillet, if using).
  • Make the Homemade Pizza Sauce.
  • Brush both sides of each tortilla lightly with olive oil. Top each tortilla with 3 tablespoons pizza sauce and 1/4 cup shredded mozzarella. Add a sprinkle of grated Parmesan and a small pinch of salt. Add additional bite-size chopped toppings if desired (but not the basil).
  • Place as many pizzas as fit directly onto the preheated pizza stone, or place one pizza into the preheated cast iron pan. Bake 4 to 5 minutes until crispy and the cheese is melted.
  • Place the pizzas directly onto the oven racks, placing a baking sheet underneath to catch any drips. Bake 5 to 6 minutes until crispy and the cheese is melted.
  • Top with fresh basil, if using. Slice into pieces and serve.

1/2 lb ground beef
1/2 lb bulk pork sausage
1/2 cup onion, chopped
1/2 cup green pepper, chopped
1 (4 ounce) can mushroom stems and pieces, drained, and chopped
1 (2 1/4 ounce) can sliced ripe olives, drained
1/2 lb cooked ham, thinly sliced
8 (10 inch) flour tortillas, at room temperature
2 cups pizza sauce, divided
40 slices pepperoni
40 banana pepper rings
8 ounces shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, cook beef, sausage, onion, and green pepper over medium heat until meat is no longer pink, drain.
  • Stir in mushrooms, and olives, set aside.
  • Place one slice of ham on each tortilla, top with close to 1/2 cup beef mixture, and drizzle with 3 tablespoons pizza sauce.
  • Layer each tortilla with 5 slices pepperoni, 5 banana pepper rings, and 1/2 cup mozzerella cheese.
  • Fold sides of tortillas over filling, and secure with toothpicks.
  • Place in two 13x9 baking dishes and bake uncovered at 400 degrees for 10-15 minutes or until cheese is melted.
  • Warm with the remaining pizza sauce , serve with wraps.
