Even if you've never made pizza from scratch, I hope you'll try this recipe. it's the highlight of my favorite casual meal. You have to plan ahead to allow rising time for the dough, but it is easy to work with and the crust is so good.

- Drizzle the olive oil into a large pot over medium-high heat. Add the sausage, ground beef and pepperoni and stir, breaking the meat up as it begins to cook. Continue cooking, stirring occasionally, until brown, and then remove the meat to a plate.
- Add the mushrooms, garlic, bell peppers and onions to the pot and saute until the mushrooms have softened and the others have some color. Add the meat back in along with the tomatoes, tomato paste, pesto, half the parsley, 1 teaspoon of the salt, 1/2 teaspoon of the black pepper and the crushed red pepper flakes. Stir, reduce the heat to low and simmer for 25 to 30 minutes. Add the black olives and stir.
- Preheat the oven to 350 degrees F.
- To make the cheese mixture: Combine the ricotta and eggs in a large bowl. Add the Parmesan, the rest of the parsley and the remaining 1 teaspoon salt and 1/2 teaspoon pepper. Stir the mixture until totally combined.
- To assemble the lasagna: Overlap 4 lasagna noodles in the bottom of a large rectangular baking dish. Spoon half the cheese mixture over the noodles and smooth it out into a flat layer. Lay half of the mozzarella slices on top followed by half of the meat sauce. Repeat these layers once more and top with some extra Parmesan. Bake until heated through and bubbly on the top, 40 to 45 minutes.

This is an adaptation of several recipes I found in some old church cookbooks. Most called for pasta, this one does not and is not missed according to my high carb eating husband. Look for pizza sauce that has no added sugars and one that is lowest in carb counts.

- Brown meats with Italian Seasonings and drain off fat. Add onions, peppers, garlic and mushrooms and saute until tender. Remove from heat and add pizza sauce and most of the pepperoni, mix well.
- Spray a 13X9 Pyrex baking dish with Pam, add meat mixture. Top with most of the black olives. Mix mozzarella and cheddar together and spead over the black olives. Sprinkle with parmesan and decorate the top with the remaining pepperoni and black olives.

- Preheat the oven to 425 degrees F. Dice 3 ounces of the pepperoni. Thinly slice the remaining 1 ounce and set it aside to garnish the dip.
- Heat a medium cast-iron or ovenproof skillet over medium heat until hot. Add the diced pepperoni and cook, stirring, until crisp, 4 to 5 minutes. Add the onions, bell pepper, minced garlic, oregano, 3/4 teaspoon salt and some pepper. Continue to cook, stirring, until the onions are very tender and lightly browned, about 5 minutes.
- Stir in the tomato paste and cook, stirring, until it coats the vegetables and smells lightly toasted, about 1 minute. Stir in the tomatoes with their juice from the can. Reduce the heat and simmer, stirring occasionally, until the mixture is slightly thickened, about 15 minutes. Stir in the olives and Parmesan and remove from the heat. Season with additional salt and pepper.
- Meanwhile, toss the baguette slices with the oil and spread in a single layer on an ungreased baking sheet. Bake until lightly toasted and crisp, 7 to 9 minutes. Rub the slices with the whole garlic clove and set aside to cool.
- Preheat the broiler. Scatter the mozzarella and reserved sliced pepperoni over the dip in the skillet. Place the skillet under the broiler and broil until the cheese is melted and lightly browned, 2 to 3 minutes. Serve the dip warm with the garlic toasts on the side.

- Preheat the oven to 400 degrees F. Line a baking sheet with parchment.
- Heat the sausage in a large nonstick skillet over medium-high heat and cook, stirring to break up the sausage into small crumbles, until browned and no longer pink, about 10 minutes. Transfer the sausage to paper towels to drain and return the skillet to medium heat.

SUPREME PIZZA PASTA SALAD
This recipe comes straight from Rachel Ray's 30 Minute Meals. It really does taste like a Supreme Pizza. The best part is, you make it the day before you want to serve it and refrigerate. The cook time, is really chill time. I put down 2 hours, but it is really better the next day. NOTE: The original recipe calls for a pound of mozzarella cheese, but I only use 1/2 pound. - Preheat the oven to 425 degrees F.
- Whisk together the eggs and ricotta in large mixing bowl and season with salt and pepper.
- Heat 2 tablespoons olive oil in a medium skillet over medium heat. Add the garlic and stir for a few seconds, until fragrant. Add the egg-ricotta mixture and cook, stirring gently, until it starts to set, a few minutes. Transfer to the oven and bake until nearly set, about 12 minutes.

VEGGIE SUPREME PIZZA BAGELS

- For the bagel dough: In the bowl of a stand mixer, combine the flour, brown sugar, yeast and 3/4 teaspoon salt; whisk together. In another bowl, combine the warm water and 1/2 tablespoon barley malt syrup and whisk together, then whisk into the dry ingredients. Stir until it forms a ball, then fit the stand mixer with the hook and knead until smooth, 7 to 10 minutes.
- Transfer the dough to an oiled bowl, then cover with plastic wrap and refrigerate overnight.
- Let the dough sit at room temperature for an hour, then turn it out onto a clean work surface. Divide it into 12 equal pieces and stretch them into smooth balls, making sure to seal any dough seams well. Shape the bagels by sticking your thumb through the center of each ball and using your fingers to gently stretch a 1-inch hole. Cover the bagels with a towel and let rise for 15 minutes.
- Preheat the oven to 450 degrees F. Bring a large pot of water to a boil and add the baking soda and remaining 1 1/2 tablespoons barley malt syrup.
- Line 2 baking sheets with parchment paper or silicone mats (grease well if using parchment), and lay out a clean kitchen towel near your pot of boiling water.
- Working with 4 bagels at a time, boil them for 1 minute on each side (use a timer for this). With a slotted spoon or spatula, transfer them briefly to the kitchen towel to catch any excess moisture, then transfer them to the baking sheets.
- Brush the bagels with the egg wash and sprinkle with dried garlic and the remaining 1/2 teaspoon salt. Bake until golden and the garlic is toasty but not burnt, about 12 minutes. Let cool slightly.
- For the pizza bagels: Lower the oven to 400 degrees F.
- Slice the bagels open and return to the lined baking sheets. Top each with a thin layer of sauce and 1 tablespoon shredded mozzarella, then use 1 banana pepper ring half to make a mouth, 2 olive eyes, a grape tomato nose and broccoli hair. Bake until the cheese is melted, 8 to 10 minutes. Top with freshly grated Parmesan and serve immediately. (These can also keep in the refrigerator for a day or two and reheated in the oven.)
