1 tablespoon vegetable oil
1 medium onion, chopped
1 pound ground beef
1 clove garlic, crushed
1 pound eggplant, diced
¾ cup sliced carrots
¾ cup sliced celery
2 (14.5 ounce) cans Italian diced tomatoes, drained
2 (14 ounce) cans beef broth
1 teaspoon sugar
½ teaspoon ground nutmeg
1 teaspoon salt
½ teaspoon ground black pepper
½ cup dry macaroni
2 teaspoons chopped fresh parsley
½ cup grated Parmesan cheese

Steps:

  • Heat the oil in a skillet over medium heat, and cook the onion, beef, and garlic until beef is evenly brown. Drain grease, and mix in eggplant, carrots, celery, and tomatoes. Pour in beef broth. Mix in sugar, and season with nutmeg, salt, and pepper. Cook and stir until heated through.
  • Mix macaroni into the soup, and continue cooking 12 minutes, or until macaroni is al dente. Mix in parsley. Top with Parmesan chreese to serve.

1/2 pound boneless skinless chicken breasts, cut into 3/4-inch cubes
2 tablespoons olive oil, divided
1 medium onion, chopped
1 medium carrot, finely chopped
1 celery rib, chopped
1 package (12 ounces) frozen fully cooked Italian meatballs, thawed
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup reduced-sodium chicken broth
2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon pepper
3/4 cup shredded Asiago cheese

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute chicken in 1 tablespoon oil until no longer pink; remove and keep warm., In the same skillet, saute the onion, carrot and celery in remaining oil until tender. 1 pound Italian sausage
2 medium onions, peeled and cut into chunks
2 small fennel bulbs, fennel fronds removed, cored, and thinly sliced
2 cloves garlic, minced
1/4 teaspoon fennel seed
4 cups low sodium chicken broth
1 (14-ounce) can Italian plum tomatoes and their juice
1 cup uncooked small pasta such as tubetinni
1 (14-ounce) can canellinni beans, drained and rinsed
1/2 cup loosely packed, roughly chopped Italian parsley leaves
Coarse ground salt and cracked pepper
Pasta Morph, recipe follows
1 pound pasta, cooked to al dente, reserve 1 cup cooking water
Reserved sausage, onion, and fennel mixture
Salt and coarsely ground black pepper
1/2 cup unseasoned bread crumbs
1/4 cup finely grated Parmesan

Steps:

  • Remove the sausage from the casing. Place in a large soup pot or Dutch oven. Turn heat to medium, cook, stirring constantly until browned, about 5 to 7 minutes. Drain on paper towels to remove excess fat. Add onions, fennel, garlic and fennel seeds, toss to combine. Cover and cook, stirring every few minutes until fennel and onions begin to soften, about 12 to 15 minutes. At this point remove 1/2 of the mixture and reserve it for the Pasta Morph.
  • Add chicken broth and tomatoes to the remaining sausage/fennel mixture. Break tomatoes apart with spoon. Bring to a boil, add pasta. Bring back to boil again, reduce to a strong simmer. Cook 8 minutes or until pasta is almost done. Add cannelinni beans and parsley. Cook until flavors have come together and pasta is cooked through. Taste and adjust seasoning with salt and pepper.
  • Toss the pasta and reserved sausage mixture in a large bowl. Add heated pasta water, a little at a time, until a sauce consistency is achieved. Season with salt and pepper, to taste. Top with bread crumbs and cheese.

1 medium onion, chopped
1 stalk celery, chopped
1 carrot, diced
1 eggplant, peeled and diced
3 beef bouillon cubes, dissolved in
4 cups water
1 (28 ounce) can chopped tomatoes with juice
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon nutmeg
1 chopped garlic clove
2 teaspoons sugar
1 bay leaf
1/2 cup uncooked macaroni
2 tablespoons parsley flakes

Steps:

  • Brown beef and onion.
  • Add rest of ingredients EXCEPT macaroni and parsley flakes.
  • Simmer 30 minutes covered.
  • Add last 2 ingredients and simmer for 15 more minutes.

1 medium onion, chopped
1 lb lean ground beef
1 medium eggplant
1 garlic clove, minced
1/2 cup chopped carrot
1/2 cup sliced celery
1 (28 ounce) can pear shaped Italian-style tomatoes
2 (14 ounce) cans beef broth
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon pepper

1/2 cup salad macaroni

Steps:

  • Heat oil and butter in a Dutch oven.
  • Add onion and sauté until limp (about 3 minutes).
  • Add the meat and stir over the heat until it loses its pinkness.
  • Add eggplant, garlic, carrots, celery, tomatoes (break up with fork), beef broth, salt, sugar, pepper, and nutmeg.
  • Cover and simmer for about 30 minutes.
  • Add macaroni and parsley and simmer for about 10 minutes more,or until macaroni is tender.
  • Serve in soup bowls. Pass cheese to sprinkle over.

This recipe is from one of the best recipe books I have ever had, Favorite Recipes II from Sunset Magazine. Every recipe I have ever tried is great. I used some canned chicken broth and when I ran out, I used Better than Bouillon Chicken Base. It was delicious. I used boneless, skinless chicken thighs.

7 cups chicken broth
1/2 cup rice
3 medium carrots, sliced 1/8-inch thick
3 stalks celery, sliced 1/4-inch thick
2 small zucchini, sliced 1/4-inch thick
6 tablespoons butter or 6 tablespoons margarine
6 tablespoons flour
2 cups milk or 2 cups half-and-half
4 cups cooked chicken, chopped into bite-sized pieces
1/2 cup green onion, thinly sliced
salt and pepper, to taste
1/4 cup parsley, minced

Steps:

  • In a 5 qt kettle over high heat, bring broth to boil.
  • Add rice, cover, and reduce heat.
  • Simmer for 10 minutes.
  • Add carrots, celery, and zucchini, cover and simmer until veges are crisp-tender(about 10 more minutes).
  • In a small pan, over medium heat, melt butter.
  • Blend in flour with butter and cook, stirring until bubbly.
  • Gradually stir in half-and-half.
  • or milk. Stir in 1 C of broth from soup mixture. Continue cooking and stirring until sauce boils and thickens. Add to soup mixture.
  • Add chicken and green onions. Season to taste.
  • Cook until just heated through.
  • Sprinkle with parsley.

1 medium onion, chopped
1 pound vegetables, cut into bite-size pieces
1 pound meat (boneless, skinless chicken thighs, etc.)
1 pound potatoes, cut into medium dice, or 2 cans beans
1 cup canned crushed tomatoes
2 cans (16 ounces each) low sodium canned chicken broth
Herbs, spice or flavoring of choice
Salt and ground black pepper

Steps:

  • Heat the oil in a Dutch oven or soup kettle. Add the onions; saute to soften slightly, about 2 minutes. Add remaining vegetables, meat of choice, starch of choice, tomatoes, chicken broth, and dried herb or spice of choice. Partially cover and simmer until vegetables are tender and flavors have blended, about 20 minutes. Add fresh herbs, season with salt and ground black pepper to taste.

6 to 7 Cups Chicken Broth
½ Cup Rice
3 Medium Carrots, sliced
3 Stalks of Celery, sliced
2 Small Zucchini, sliced
6 Tbsp Butter
6 Tbsp Flour
1 Pint Half and Half or light cream
4 Cups Cooked Chicken, chopped into ¾" pieces
½ Cup Green Onions, thinly sliced
¼ Cup Parsley, finely chopped

Steps:

  • In a 5 qt. pot heat chicken broth to boiling. Add rice, cover, reduce heat and simmer for 10 minutes. Add carrots, celery, and zucchini. Simmer covered until vegetables are tender (about 10 minutes). To make a white sauce, melt the butter in a medium saucepan, and blend in the flour. Cook until bubbly (stir constantly). Remove pan from heat and slowly blend in the cream. Add approximately 1 cup of broth from the soup pot. Return the saucepan to the heat and stir until the mixture comes to a boil and thickens. Slowly add the mixture to the soup pot while stirring constantly. Add the chicken pieces, and green onions. Add salt and pepper to taste. Heat until chicken is warmed through. Sprinkle with parsley before serving.

1 1/2 lbs ground beef
1 egg, slightly beaten
1/2 cup soft breadcrumbs
1/4 teaspoon salt
1 tablespoon chopped parsley
1 teaspoon minced garlic
1/4 cup parmesan cheese
2 tablespoons butter
1 (10 1/2 ounce) can beef broth
1 (28 ounce) can diced tomatoes (I prefer tomato puree)
1 envelope dry onion soup mix
2 cups sliced and peeled carrots
2 cups diced potatoes
1/4 cup chopped celery (optional)
1/4 cup chopped parsley
1/4 teaspoon pepper
1/4 teaspoon oregano
1/4 teaspoon basil
1 bay leaf

Steps:

  • In bowl, combine first 7 ingredients with 3 Tablespoons of water.
  • Mix lightly.
  • Shape into about 24 meatballs.
  • In hot butter in large Dutch oven, saute meatballs, a single layer at a time, until browned on all sides.
  • Drain off fat.
  • Set meatballs aside.
  • In same Dutch oven, combine 2 cups water with remaining ingredients.
  • Bring to boiling, then reduce heat, and simmer, covered, but stirring occasionally, 30 minutes.
  • Add meatballs and simmer 20-30 minutes longer.
  • Good served with Parmesan on top.
  • If soups seems too thick, thin with water.

Steps:

1 pound fresh pork neck bones or fresh pork hock
4 cups water
2 cups cabbage thinly sliced
1 cup potato new, cubed
1/2 cup onion chopped
1/2 cup celery sliced
1 tablespoon chicken bouillon
1 garlic large, minced
1/4 teaspoon black pepper
1/4 teaspoon rosemary dried
1/4 teaspoon sage dried, crushed
1/4 teaspoon thyme dried, crushed
1/4 cup flour
1/2 cup water
Salt and pepper
sour cream Dairy

Steps:

  • Bring meat and 4 cups water to a boil in a 3-quart saucepan. Reduce heat, cover and simmer for about 1 hour until meat is very tender. Remove meat set aside.To cooking liquid, add cabbage, potatoes, onion, celery, bouillon granules, garlic, 1/4 teaspoon pepper, rosemary, sage, and thyme. Bring to a boil reduce heat, cover and simmer for 20 minutes until vegetables are tender. Meanwhile, cut meat from bones and cube. Add meat to soup.In a small bowl, stir flour and 1/2 cup water until smooth. Increase heat to medium stir flour mixture into boiling soup and boil until slightly thickened. Taste and add additional salt and pepper if desired.Ladle into individual soup bowls or mugs. Top each serving with a dollop of sour cream and sprinkle with paprika. Note: Leftover cooked ham or poultry can be added along with the cooked pork for a heartier soup.
