ITALIAN-STYLE MONTE CRISTO SANDWICHES

- Heat a large griddle or cast-iron skillet over medium heat.
- Prepare the sandwiches by spreading 4 slices of the bread with preserves. Top with a slice of cheese, 2 slices of folded prosciutto, then another slice of cheese. Spread the remaining bread slices with Dijon and set in place over the cheese.
- In a large shallow bowl, beat the eggs with the milk or cream, Parmesan, and parsley. Nest the butter in a paper towel and wipe it across the hot pan. Dip the sandwiches into the egg mixture and cook the sandwiches until deep golden, about 3 to 4 minutes on each side.
- Toss the arugula with the lemon juice, extra-virgin olive oil, and salt and pepper, to taste, in a large serving bowl. Cut the sandwiches from corner to corner and serve alongside the salad.

- Preheat oven to 350 degrees F.
- In a large bowl, whisk together eggs, cream, vanilla, sugar, cinnamon, and salt and set aside.
- Lay the 8 slices of bread out on a flat surface. Lay 1 slice of cheese on each slice of bread. Then on 4 slices of the bread lay 1 slice of ham. On the other 4 slices lay 1 slice of turkey. Top all 8 slices with 1 slice of Swiss. Make 4 sandwiches and coat with egg mixture.
- *Cook's Note: You may add more Swiss, turkey or ham, if desired
- In a large skillet over medium-heat melt the butter.
- Add the sandwiches to the pan and cook until golden brown, about 3 minutes on each side.
- Remove the sandwiches to a sheet pan and place in the oven. Bake until the cheese has melted and the sandwiches are warm throughout, about 5 minutes.
- In a large bowl, whisk all of the ingredients together until smooth.
- Cut the sandwiches into quarters and serve with the cranberry syrup.

- Heat a griddle pan or large skillet over medium-high heat; cook bacon until done (about 5 minutes); remove to paper towels to drain.
- Drain off fat from skillet; reheat griddle over medium heat.
- In a bowl, beat eggs with half-and-half, nutmeg, and pepper.
- Add in 1 tablespoon butter to the griddle and let it melt.
- Turn 4 slices bread in the egg batter then place on griddle; turn bread after it browns (2-3 minutes); spread mustard on 2 slices bread and top the other 2 slices with cranberry sauce.
- Place a slice of cheese on each slice; add 2 slices bacon, ham, and turkey to bottoms then set tops in place and press sandwiches together.
- Turn the sandwiches a couple of times and let set a minute or 2 to melt cheese and warm meats.
- Repeat to make 2 more sandwiches; cut sandwiches from corner to corner to serve.
- Heat syrup in microwave for 30 seconds; drizzle syrup over sandwiches at table or serve syrup in small ramekins for dipping.
