SOFT CARAMEL POPCORN

Steps:
- Pop popcorn according to package directions and make sure you get rid of any unpopped kernels. This seems like a lot of popcorn but trust me it will get eaten! Place popcorn in a large bowl...larger than you think you will need.
- In a large saucepan melt together the butter, brown sugar, and corn syrup. Bring mixture to a boil. Once it comes to a boil, reduce to medium heat and add the can of sweetened condensed milk. With the rubber spatula, stir constantly for 4-5 minutes scraping the sides and especially the bottom of the pan to prevent any burning. The longer you cook it the firmer it will be. If you like it on the softer side, cook it closer to 4 minutes.
- Pour caramel over popcorn and stir until coated. This will take a lot of stirring to get it all incorporated. It's great warm or at room temperature. Feel free to add in M&Ms, nuts, or drizzle it with chocolate. I like it plain and classic. Enjoy!

- Preheat the oven to 200 degrees F.
- Line a jelly roll pan with parchment paper. Add popcorn to a large pan, spread out in an even layer.
- Melt butter in a large non-stick skillet over medium heat. Once melted, stir in brown sugar, corn syrup, and salt until smooth.
- Bring to a boil over medium heat, stirring occasionally. As soon as the caramel starts to gently boil, boil for 2 minutes, stirring constantly.
- Remove from the heat and stir in baking soda and vanilla.
- Immediately drizzle caramel over popcorn. Toss gently with a spatula until the popcorn is evenly coated.
- Bake at 200 degrees F for 45 minutes, stirring the popcorn every 15 minutes.

- Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
- In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
- Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.

- Combine sugar, corn syrup, margarine, and salt in medium saucepan; bring to boil.
- Reduce heat to medium and add stir in milk; cook, stirring frequently, to soft ball stage (240 degrees).
- Remove from heat then stir in vanilla.
- Pour slowly over popcorn, stirring until caramel is evenly distributed throughout.
- Store caramel popcorn in covered container.
- NOTE: You may vary the amount of popcorn used. I like a little less caramel coating and usually make this recipe with 8 quarts of popcorn.

- 1. Preheat oven to 275 degrees.
- 2. Put popped popcorn in very large bowl or deep kettle.
- 3. In large saucepan over med high heat bring to boil: sugar, butter and corn syrup. Once boiling, boil for 2 minutes stirring continuously.
- 4. Remove from heat. Add baking soda, cinnamon, vanilla and mix well.
- 5. Pour mixture over popcorn, mix gently. Spread over 2 cookie sheets, bake for 30 minutes stirring 1/2 way through. Let cool and enjoy.

Pop on the popcorn setting of your microwave. Listen carefully and remove when the popping slows. Over time you will be able to tell how long you need to pop it.

- Pop half a cup of popcorn in your preferred method of popping corn! :)
- Place remaining ingredients marshmallows, butter and brown sugar for 30 seconds at a time in the microwave.
- Stir to mix well.

- Add 1 tablespoon of the oil to a 4 quart saucepan, and heat over high heat. When oil is hot, add 1/2 cup of popping corn. Keep pan moving constantly. When corn stops popping, remove from heat. Place popped corn in oven to keep warm. Repeat until all corn has been popped. Set aside.
- In a medium saucepan with a candy thermometer inserted, combine butter, sugar, and corn syrup. Stir well and bring to boiling over medium heat. Stir in condensed milk; simmer, stirring constantly, until thermometer reads 238 degrees F (114 degrees C). Stir in vanilla.
- Pour caramel over popped corn and stir to coat. Butter hands lightly; shape popcorn into balls about 3 1/2 inches in diameter.
