- Hard boil eggs
- Peel and slice eggs lengthwise
- Scoop out the yolk

- Place eggs in a single layer in a saucepan and cover with enough water that there's 1 1/2 inches of water above the eggs. Heat on high until water begins to boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 14 minutes, then rinse under cold water continuously for 1 minute.
- Crack egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter. Mash the yolks into a fine crumble using a fork. Add mayonnaise, vinegar, mustard, salt, and pepper, and mix well.
- Evenly disperse heaping teaspoons of the yolk mixture into the egg whites. Sprinkle with paprika and serve.

SUPER SIMPLE DEVILED EGGS
Some people like to add cayenne pepper, some like sweet pickles, but this is my favorite way to make these. Note, for easy to peel eggs, don't buy and boil the same day. Let them hang out in the fridge for 2-3 days. I'm not sure why, but it seems to work for me.

- 1. Hard boil the eggs Place 1 dozen eggs in a pan so they all sit on the bottom. Cover with water and bring to a boil. Once boiling, turn off the burner, and cover the pan. Let sit for 20 minutes. After 20 minutes, gently pour off the hot water and cool eggs under running cold water.
- 2. Once eggs have cooled, peel and cut in half.
- 3. Place egg yolks and all the other ingredients into a zipper bag. This makes for the easiest mixing, clean up and it is a piping bag!!
- 4. Squish all the ingredients around in the bag until well mixed. Once well mixed, taste and add salt, pepper or mayo as necessary.
- 5. Squeeze all the mixture into the corner of the bag, cut a small hole in the corner and pipe into each empty white half. Sprinkle with paprika to garnish
- 6. If you are going to a party, don't fill the eggs until you get there. It's much easier that way. Sometimes I add dill pickle. If you choose to, grate, then chop them very fine.
