SAUSAGE GRAVY
A classic Southern-style American dish and a diner staple, homemade sausage gravy is creamy, salty, and the ultimate in breakfast comfort foods.

Steps:
- In a cast iron skillet over medium-high heat, brown the sausage breaking it up as you cook until it's no longer pink. Do not drain the fat.
- Melt the butter, and sprinkle the flour over the cooked sausage. Cook the flour for 2 minutes, then slowly add milk and stir constantly as you pour it in to avoid clumps.
- Bring the mixture to a boil, reduce heat and simmer until it's thickened.
- Season with garlic powder, salt, and pepper. Taste before adding salt, some sausages are saltier than others and may not need additional salt added.
- Serve immediately after cooking over split biscuits.

- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease, reserving about 2 tablespoons in the skillet. Reduce heat to medium-low.
- Stir flour, beef bouillon, and black pepper into sausage until evenly coated and grease is absorbed, 2 to 3 minutes. Gradually stir milk into sausage mixture; add Worcestershire sauce. Simmer gravy, stirring often, until thickened, 10 to 15 minutes.

- Serve 4-6 (or 2 hungy bikers)In a large skillet, fry off the bacon and reserve the grease to a bowl (serve the bacon on the side with breakfast) Cook sausage with a small amount of chicken stock or water to help break down the fat and allow sausage to cook into little pieces Add bacon grease back to pan with sausage Stir in flour, salt, pepper, and powdered beef broth to make your roux Be sure to cook it at least 2 minutes stirring constantly, to get the 'raw flour' taste out Gradually stir in milk. Cook over medium heat, stirring constantly until mixture is thickened. Serve over biscuits
SUPER EASY SAUSAGE GRAVY
I found this recipe in an old Quick Cooking Magazine, and it is the only sausage gravy recipe I have used since. This recipe cooks up quickly on those mornings you just don't have time to make a big fuss over breakfast. The only thing I added was a dash of hot sauce. Thanks to D. - Cook sausage until no longer pink. Do Not Drain.
- Stir in butter until melted.
- Sprinkle with flour.
- Gradually add milk. Mix well.
- Add salt, pepper, and hot sauce.
- Bring to a gentle boil and cook for 2 minutes, stirring constantly.
- Serve over your favorite homemade or refrigerated biscuits.
- I sometimes serve the sausage gravy over leftover potatoes from the previous night's dinner that I have fried up.
- Recipe says serves 4, I find we rarely get more than 2 servings, so I often will double this.
