8.4 oz pineapple (1/5 pineapple (1 1/2 cups pineapple chunks))
5.8 oz orange (peeled) (1 1/4 medium oranges)
6.25 oz carrot (3 medium carrots)
0.8 oz lime (1/2 lime)
0.25 oz ginger (1 inch chunk ginger root)

Steps:

  • Wash produce thoroughly.
  • Prep the pineapple by removing the green crown and cut into chunks. Peel the oranges and remove the top ends of the carrots.
  • Weigh out the ingredients.
  • Quarter limes (peel on) and place directly into the press. If you do not have a juice press, peel the lime and juice with the rest of the ingredients.
  • Grind the remaining ingredients together and press.

This is a twist on a Jack Lalanne recipe. He includes 1 mango, but I like it without as well! Not too sweet and not to sour. I like this one! NOTE: You can leave the peel on the lime if you want a strong lime flavor, otherwise, cut the peel off the lime as it is difficult to actually peel them by hand.

2 cups baby carrots
1 can (20 ounces) pineapple chunks, undrained
4 teaspoons cornstarch
1/2 teaspoon ground cinnamon
1/2 cup packed brown sugar
1 tablespoon butter

Steps:

  • In a saucepan, bring 1 in. of water to a boil; place carrots in a steamer basket over water. Cover and steam for 8-10 minutes or until crisp-tender. Drain pineapple, reserving juice; set pineapple aside., In a saucepan, combine cornstarch and cinnamon. Add the brown sugar, butter and reserved juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the carrots and pineapple; heat through.
