Provided by ltrodrigu

Number Of Ingredients 12

2 cups sugar
12 tablespoons unsalted butter, at room temperature
3 large eggs
1 cup plus 1 tablespoon cake flour
1 cup plus 1 tablespoon all-purpose flour
2 teaspoons baking powder
Pinch of kosher or sea salt
3/4 cup whole milk
3/4 teaspoon pure vanilla extract
3 medium baking apples, peeled, cored, halved, and thinly sliced
3/4 cup heavy cream
1 1/2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees. Butter a 10-inch round, 2-inch-deep cake pan and line the bottom with parchment paper. In a large bowl, using an electric mixer, beat 1½ cups sugar and butter until light in color, 3-5 minutes. Scrape down bowl as necessary and continue beating until mixture is very light in texture and color, several minutes more. Beat in eggs one at a time, scraping bowl between additions. Sift together both flours, baking powder and salt. Alternate between mixing milk and dry ingredients into butter mixture, stopping to scrape bowl as necessary. Add vanilla and mix batter just until smooth. Do not overbeat. Pour batter into prepared pan and spread with a rubber spatula to evenly cover pan. Arrange apple slices in overlapping concentric circles on top of the batter, taking care to completely cover it. Pour cream evenly over apples. Stir together remaining ½ cup sugar and cinnamon and sprinkle mixture over top of cake. Bake until a toothpick inserted in the center comes out clean, 45 minutes. Remove pan from oven, transfer to a rack and let cool completely.

BEST MOIST APPLE CAKE

Best Moist Apple Cake image

Best apple cake we've ever eaten. I've taken three recipes and combined them to create what my family now requests for birthdays! We think the cake is better once it sits for awhile. Even refrigerated and then heated back up, the flavors seem to really stand out. You can substitute pecans for the walnuts.

SUPER MOIST FRESH APPLE CAKE

Super Moist Fresh Apple Cake image

This is one of those cakes that, well, the longer it sets, the better it gets. Oh, don't get me wrong, it is just as delicious warm and fresh out of the oven. The added bonus to this lovely cake is that instead of drying out, it gets more moist as the days pass on, if it lasts that long...

Time 1h5m

Yield 1 Cake

Number Of Ingredients 12

3 eggs
1 1/2 cups oil
2 cups sugar
3 cups flour, sifted
1 teaspoon salt
1 teaspoon baking soda
1 cup pecans or 1 cup walnuts, chopped
2 teaspoons vanilla
4 Granny Smith apples, about 3 1/2 apples (1 shredded, the others chopped fine)
1 cup light brown sugar
1/2 cup butter
1/2 cup milk

Steps:

  • Cream together the eggs, oil and sugar.
  • In a separate bowl, sift the flour, salt and baking soda.
  • Combine all.
  • Now add your nuts, vanilla and apples.
  • Note~this batter is VERY stiff, don't worry, it's suppose to be that way. When the apples cook they add plenty of moisture to the cake to make it moist. Plus, your going to add more moisture when your glaze soaks inches.
  • Pour into a greased and floured 9 X 13 cake pan. Bake at 350 for 45 minutes or until a toothpick comes out clean from the center of the cake.
  • In a sauce pan, combine your glaze ingredients and boil for a few minutes. Set aside.
  • When cake is done, puncture the top of cake with a fork, quite a bit. Pour on your glaze.

APPLE CINNAMON WHITE CAKE

Apple Cinnamon White Cake image

A buttery white cake that comes together in minutes but tastes like you spent all day making it. Adding apples and cinnamon with brown sugar in layers makes this cake into an autumn delight. A scoop of ice cream is especially good with this cake.

1 1/2 cups oil
2 teaspoons vanilla
3 eggs
1/2 teaspoon baking soda
1 teaspoon salt
3 cups flour
3 cups sliced apples
1 cup coconut
1 cup walnut pieces
1 cup brown sugar
1/2 cup butter
1/4 cup milk

Steps:

  • Beat the first six ingredients together in a large mixing bowl.
  • Then add the next four ingredients to the mixture and mix well.
  • Bake in a greased and floured pan at 325 degrees for one and a half hours. (a round pan with a middle is preferred, but I also divided the mixture into ramekin dishes as well and turned out just fine)
  • Let the cake cool down. And remove it to a serving dish. (If using ramekins this step is not necessary).
  • Once removed prick holes all around the cake making sure you don't mutilate it in the process!
  • For the icing:.
  • Mix all three ingredients in a saucepan and boil for one and a half minutes.
  • Pour over cake while topping is warm.
  • The holes pricked into the cake allow the topping to absorb into the cake - a definite tasty must!
