2 large russet potatoes
1 cup prepared spinach artichoke dip
½ cup shredded Irish Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Pierce the potatoes in a couple of places with a sharp knife; place on a baking sheet.
  • Bake in the preheated oven until a knife easily slices through the potato, 45 to 60 minutes. Cool potatoes for 10 minutes.
  • Slice potatoes horizontally; scoop out the flesh with a fork, leaving the skin intact. Mix potato flesh with spinach artichoke dip in a bowl; spoon back into the potato skins and top with Cheddar cheese.
  • Bake in the oven until cheese is beginning to melt, 15 to 20 minutes. Turn on oven's broiler and broil until cheese begin to bubble and brown, 2 to 5 minutes.

My husband and family love these potatoes. You can modify this to fit your families likes and dislikes easily. The sky is the limit on these super easy twice baked potatoes!

4 - baking potatoes
1 medium onion
1 teaspoon(s) salsa (optional)
1 tablespoon(s) sour cream, fat-free
2 stalk(s) green onions
2 slice(s) ham
1/2 teaspoon(s) butter, softened
2 or 3 dash(es) garlic powder or one crushed clove of garlic.

Steps:

  • Clean the potatoes. Put all 4 potatoes in the microwave on the baked potato setting. I've shared this for dinner for four, and ingredients should be adjusted according to your number of potatoes. And you can not overload these enough, you can choose a different meat other than the chopped ham I've chosen, or choose to not use meat at all. Also, I sometimes will add a hot pepper diced up for my family members who enjoy the more spicy foods. They are so easy to make, takes less than one hour total. Super easy!
  • While potatoes are in the microwave, dice onions, 1/2 to 1 clove garlic( garlic according to your like), ham, stalk from the green onion into small pieces. Cream together the sour cream, salsa, butter and spices, ham, and other ingredients. If you use a clove of garlic, do not use the ingredient garlic salt. :)
  • When the potatoes are done microwaving, allow them to cool about ten minutes. After they have cooled a bit, slit them down the middle making sure not to go from end to end. Gently open the potato enough that you can get a small scoop, (I use a small melon ball scoop), clean out the potato leaving only the shell.
  • Mix together the potatoes with all the other ingredients, gently fill each potato shell with the potato mixture. Wrap each potato in foil, and bake for another 30 to 40 minutes in preheated 350 degree oven. Open the foil just enough before taking them out to allow them to brown at the top, sprinkle with your choice of cheese. Simple, easy twice baked potato. Loaded with options of what you would like to load your potato with.
