half a batch of cornbread (2 to 3 cups when chopped)
1 (0.4-ounce) packet buttermilk ranch dressing mix
1 cup mayonnaise
1/2 cup buttermilk
1 (14.5-ounce) can of pinto beans, drained and rinsed
1 (16-ounce) can of whole kernel corn, drained
1 small green bell pepper, finely chopped
1 small sweet onion, finely chopped
2 ripe tomatoes, seeded and chopped
2 cups shredded sharp cheddar cheese

Steps:

  • In a small bowl, combine ranch dressing mix, mayo, and milk. Mix well and refrigerate.
  • Cut cornbread into 1 inch cubes and place in the bottom of a large bowl or trifle bowl.
  • Top cornbread layer with rinsed pinto beans.
  • Next, layer drained corn.
  • Top with chopped green bell pepper.
  • Add chopped sweet onion.
  • Next, add chopped tomatoes.
  • Add shredded cheddar.
  • Pour ranch dressing mixture on top; refrigerate for several hours to allow the flavors to develop.

1 package (8-1/2 ounces) cornbread/muffin mix
1 cup sour cream
1 cup mayonnaise
1 envelope ranch salad dressing mix
3 large tomatoes, seeded and chopped
1/2 cup chopped sweet red pepper
1/2 cup chopped green pepper
1 cup thinly sliced green onions, divided
2 cans (15 ounces each) pinto beans, rinsed and drained
2 cups shredded cheddar cheese
10 bacon strips, cooked and crumbled
3-1/2 cups frozen corn, thawed

Steps:

  • Prepare and bake cornbread mix according to package directions, using an 8-in. square baking dish. Crumble when cool., Mix sour cream, mayonnaise and salad dressing mix until blended. In a separate bowl, combine tomatoes, peppers and 1/2 cup green onions. , In a 3-qt. glass bowl, layer half of each: cornbread, beans, tomato mixture, cheese, bacon, corn and dressing. Repeat layers. Top with remaining green onions. Refrigerate 3 hours.

1 package (8-1/2 ounces) cornbread/muffin mix
1 cup mayonnaise
1/2 cup sweet pickle relish
2 cans (15 ounces each) pinto beans, rinsed and drained
4 medium tomatoes, chopped
1 medium green pepper, chopped
1 medium onion, chopped
10 bacon strips, cooked and crumbled

Steps:

  • Preheat oven to 400°. Prepare cornbread batter according to package directions. Pour into a greased 8-in. square baking pan. Bake until a toothpick inserted in center comes out clean, 15-20 minutes. Cool completely in pan on a wire rack., Coarsely crumble cornbread into a large bowl. In a small bowl, mix mayonnaise and relish., In a 3-qt. trifle bowl or glass bowl, layer a third of the cornbread and half of each of the following: beans, tomatoes, pepper, onion, bacon and mayonnaise mixture. Repeat layers. Top with remaining cornbread. Refrigerate, covered, 2-4 hours before serving.

This tastes like SUMMER! Try to use the best produce you can find, it makes a huge difference in the taste.

1 box(es) jiffy cornbread mix
2 cup(s) kraft ranch dressing
1 - green pepper, chopped (or 1/2 red and 1/2 green is also good)
1 medium red onion, chopped (must be red)
1 can(s) whole kernel corn
1 can(s) red kidney or pinto beans
2 medium tomatoes, chopped
2 cup(s) cheddar cheese, shredded
1 pound(s) bacon, fried crisp

Steps:

  • Prepare cornbread, bake and set aside to cool. Once cool, crumble into dish.
  • Drain and mix together corn and beans. Put this over cornbread.
  • Chop and mix together onion, tomato and pepper. Put this over beans/corn.
  • Cover with the cheese.
  • Pour Ranch dressing over this. Crumble crisp bacon over this. Cover and refrigerate overnight. It won't taste right until it sits overnight!
  • You can also use Mexican cornbread and chili style beans for this recipe, if you want a spicier version. You can even throw in a bit of chopped Jalapeno!

1 1/4 cups milk
1/4 cup vegetable oil
1 1/2 cups yellow cornmeal
3/4 cup flour
1 teaspoon salt
1/4 cup white sugar
2 1/2 teaspoons baking powder

Steps:

  • Beat eggs, milk and oil together.
  • Add all dry ingredients to wet and mix well.
  • Pour mixture into greased 8"x8" cake pan.
  • Bake 400F for 25-30 minutes or until toothpick inserted in the center comes out clean.
