HOMINY CASSEROLE

Easy, creamy and cheesy Hominy Casserole is a side dish that is sure to impress. This is not your average dish, it takes hominy to a whole new level.

2 30 ounce cans hominy, rinsed and drained (I used one white hominy can and one golden hominy )
1 cup sour cream
1 6 ounce can diced green chilis
2 cups monterey jack cheese (shredded)
1/2 cup Parmesan Cheese (shredded)

Steps:

  • Preheat oven to 350 degrees. In a medium sized bowl combine hominy, sour cream, green chilis and Monterey Jack cheese. Spread evenly into a 2 quart casserole dish. Top with Parmesan Cheese.
  • Bake for 1 hour or until golden and bubbly.

We love hominy this way. My family doesn't like plain hominy so I started adding cheese and green chiles and now they ask for more.

2 can(s) white or yellow hominy
1 can(s) chopped green chilies
1 cup(s) cheddar cheese
pinch(es) salt and pepper

Steps:

  • Drain juice out of one can of hominy and add both cans to 2 qt pot. Bring to simple boil and cook till water cooks down. Add green chilies cook till hot and add cheese, salt and pepper. Stir till melted. Serve hot! Enjoy!

29 ounces hominy, rinsed and drained
1/2 cup heavy cream
3 tablespoons butter
1/4 cup finely chopped onion
1 fresh jalapeno, minced
1 can chopped mild green chili
1/2 cup monterey jack cheese
salt and pepper

Steps:

  • Process hominy and cream in food processor pulsing for 5 seconds, until coarsely ground.
  • Melt butter in pan over medium heat.
  • Add onions and jalapeno cook 2 minute stir in chilies and the hominy mixture.
  • Cook stirring constantly until it begins to bubble about 3-5 minutes.
  • Remove from heat and stir in cheese.
  • Salt and pepper to taste.

1/8 to 1/4 teaspoon cayenne pepper
1 cup sour cream
1/3 cup half-and-half cream
2 tablespoons minced fresh cilantro, divided

Steps:

  • In a large saucepan, saute the chicken and onion in oil until chicken is no longer pink. Add the hominy, beans, broth, chilies and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. , Remove from the heat; stir in the sour cream, half-and-half and 1 tablespoon cilantro. Sprinkle with remaining cilantro.

1 garlic clove, minced
1 cup sour cream
3/4 cup shredded cheddar cheese, divided
1/4 cup milk
1 can (4 ounces) chopped green chilies
1/4 teaspoon ground cumin
3 cans (15 ounces each) golden hominy, drained

Steps:

  • In a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. Stir in hominy. , Pour into a greased 2-qt. baking dish. bake, uncovered, at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese.

1 1/2 cups sharp cheddar cheese, grated
1 can chopped green chili
