Number Of Ingredients 8

1 pkg 16oz elbow macaroni, cooked per package instructions and drained
3 Tbsp butter
3 Tbsp flour
4 c milk
1 1/2 lb velveeta cheese, cut into small cubes
salt and pepper to taste
1 sleeve of saltine crackers, crushed
3 Tbsp butter, melted

Steps:

  • 1. In saucepan, melt 2 Tbsp of butter. Add flour, combine well. Add milk and cheese, cooking over low-medium heat. Stir constantly, until cheese is fully melted and sauce is slightly thickened. Add salt and pepper and stir.
  • 2. Place cooked macaroni into a large baking dish. Pour cheese sauce over the noodles.
  • 3. In small saucepan, melt 3 Tbsp butter. Remove from heat. Pour in crushed saltine crackers and stir to cover crackers with butter.
  • 4. Sprinkle buttered crackers evenly over the top of the macaroni.
  • 5. Bake in 350 degree oven for about 25-30 minutes or until hot and bubbly and cracker crumbs are slightly browned.

1 cup milk
1/2 cup KRAFT Shredded Mozzarella Cheese

Steps:

  • Heat oven to 375°F.
  • Prepare Dinner in large saucepan as directed on package. Stir in milk and mozzarella.
  • Spoon into 1-1/2-qt. casserole sprayed with cooking spray; sprinkle with cheddar.
  • Bake 20 min. or until heated through.

Mac and cheese is one of the all-time comfort foods. When my kids' taste finally outgrew the boxed stuff, I came up with this recipe to satisfy their need for cheese (my daughter, in particular, is a cheese junkie). I'm sure this recipe contains influences from my Mother and Grandmother. It goes great with other comfort food staples like meatloaf, roast, pork roast, etc.

24 ounces macaroni
1/2 cup butter
1/2 cup flour
4 cups milk
16 ounces Velveeta cheese (sometimes I use even more)
1 pinch white pepper or 1 pinch black pepper
1 -2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°F.
  • Prepare macaroni according to package directions.
  • Melt butter in a large pan.
  • Whisk flour into melted butter to create a light roux (paste).
  • Slowly whisk milk into the roux, whisking constantly to avoid lumps.
  • Allow milk and roux to heat for about one minute, then begin adding the Velveeta.
  • Continue to gently whisk the mixture until all Velveeta has melted, then add a pinch of white or black pepper.
  • After macaroni has cooked, drain the water from the pot and mix in the cheese sauce.
  • Once the macaroni and sauce are mixed together, transfer to a 9 x 13 baking dish.
  • Cook uncovered for 25-30 minutes or until bubbly.
  • Sprinkle 1 or 2 cups of shredded cheddar cheese over the top and bake for 5 more minutes, or until cheddar cheese is thoroughly melted.
  • Remove from oven and allow to cool for 5 to 10 minutes before serving.

This is super cheesy and creamy. I started with the basic mac and cheese recipe from the back of the box and have over the years tweaked on it til it is just super!

2 cups dry elbow macaroni, cooked
2 tablespoons margarine, melted
2 tablespoons flour
1/4 teaspoon dry mustard
2 cups milk
8 ounces Velveeta cheese
1 (8 ounce) bag sharp cheddar cheese
2 slices American cheese

Steps:

  • melt margarine.
  • add flour and cook until pasty.
  • add dry mustard.
  • stir.
  • add milk and whisk til combined.
  • add velveeta and stir til melted.
  • Add 3/4 of bag of cheese and stir til melted.
  • add 2 slice of cheese and stir til melted.
  • Combine sauce with warm macaroni that has been drained but not rinsed.
  • Pour into casserole dish and let set for 5 minutes until macaroni absorbs cheese sauce and thickens.
  • Top with remaining1/4 bag of cheese.
  • Bake at 350 for 30-40 minutes til cheese bubbles.
  • Let set for 5 minutes before serving.
