Number Of Ingredients 11

DOUGH:
1 c white whole wheat flour
2 Tbsp powdered sugar
1 tsp baking powder
1/4 tsp salt
6 Tbsp cold butter
3 Tbsp cold orange juice
1 Tbsp ice water
FILLING:
1 large egg, lightly beaten
1 1/2 c chopped raisins

Steps:

  • 1. Lightly grease 2 baking sheets, or line with parchment paper-(I use parchment) Dough: Whisk together the dry ingredients. Cut the butter into small cubes, and work it into the dry ingredients using your fingers, a mixer or a fork, mixing until the dough in unevenly crumbly.
  • 2. Drizzle with the orange juice and water,mixing until dough holds together and it doesn't seem all dry or crumbly-you've added enough liquid.
  • 3. Divide the dough in 1/2, and shape each 1/2 into a small rectangles ;pressing each of the 4 sides against the work surface to smooth any rough edges.
  • 4. Wrap the dough in plastic wrap and chill for 30 minutes. Remove 1 piece of dough from the refrigerator. Preheat oven to 350^. Place dough on a lightly floured parchment paper surface. Roll it into a rectangle 10x 14-inches, about a little less than 1/8 -inch thick; the THINNER the better. Ragged edges are OK. The thinner you can roll them without tearing the better!
  • 5. Brush dough lightly with some of the beaten egg, then spread 1/2 the surface with 3/4 cup of the raisins, pressing them in carefully. Fold dough over raisins and flatten dough again with rolling pin. to about 6x15-inches. Some raisins might pop though- that's OK. Slide dough off parchment paper onto the prepared cookie sheet. Brush dough with some of the beaten egg ,(if using the coarse sugar,sprinkle on now).
  • 6. Using a roiling pizza wheel or bench knife, carefully cut the rectangle of dough inti 3 strips,lengthwise. Then crosswise into 5 pieces.No need to separate they will break apart when you finish baking them. But you can separate them if you wish.Both ways work well. Because they don't expand much.Using a fork poke holes all over the top of the dough.
  • 7. Repeat with remaining dough. Bake for 18 minutes, until they're a light golden brown. Remove from oven and cool on rack. If you do not need the cookie pan you can cool them on the pan. I baked them apart this time- but like them left together with perforations then baked.

1 cup butter
1 ½ cups white sugar
1 egg
2 tablespoons vanilla extract
1 (20 ounce) can crushed pineapple, with juice
½ cup chopped pecans
3 ½ cups all-purpose flour
½ teaspoon salt
¼ teaspoon ground nutmeg
1 teaspoon baking soda

Steps:

  • Cream together butter or margarine, sugar, egg, and vanilla.
  • Add crushed pineapple with juice and chopped pecans. Sift together flour with salt, nutmeg and baking soda.
  • Drop by tablespoonfuls (if there is any left at this point) onto greased cookie sheet 2 1/2 inches apart. Bake at 350 degrees F (175 degrees C) 10-15 minutes or until lightly golden brown. Cool.

1 box duncan hines lemon supreme cake mix
1 large egg
1/4 c oil
1/4 c lemon juice
1 tsp lemon extract
powdered sugar/with lemon extract

Steps:

  • 1. Preheat oven to 350F. In large bowl combine all ingredients except powdered sugar. Drop dough in small balls onto a baking sheet. Bake for 8 minutes. Cool till cookie gets easy to handle and then roll in powdered sugar mixture.

1/2 cup soft butter
3/4 cup brown sugar
1 egg
1 teaspoon orange extract
1 cup flour
2 tablespoons flour
1/8 teaspoon salt (optional)
1/2 teaspoon baking soda
6 ounces chocolate chips
1/2 cup chopped nuts
2 teaspoons orange rind, grated

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 9-inch square baking pan.
  • Cream butter and sugar. Add egg and orange extract; mix well.
  • Combine dry ingredients; stir.
  • Add dry ingredients to batter a little at a time, mixing to incorporate.
  • Stir in chocolate chips, nuts and rind.
  • Pour batter into prepared pan.
  • Bake at 350 degrees for 25-30 minutes (or at 375 degrees for 20-25 minutes) until golden brown.
  • Cut into bars while still warm.
  • NOTES:.
  • Can double recipe and bake in a 10x15 inch jelly roll pan at 375 degrees for 20-25 minutes.
  • Can bake as drop cookies: chill dough, place rounds on ungreased cookie sheets and flatten each cookie slightly, bake at 375 degrees about 10 minutes.

These are my favorite orange cookies. They are different from most recipes because they call for orange juice concentrate rather than just orange juice. They pack alot of pure orange flavor and are frosted with an orange buttercream frosting. Sunshine in a cookie!

2/3 cup shortening
3/4 cup sugar
1 egg
1/2 cup orange juice concentrate
2 tablespoons orange zest
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1 -2 tablespoon orange juice concentrate
1 -2 teaspoon orange zest
1 cup milk (approximately)
4 cups powdered sugar

Steps:

  • Cream shortening and sugar.
  • Add rest of ingredients and mix well.
  • Drop by rounded spoonfuls on a greased baking sheet. Bake at 400* for 8-10 minutes or until just barely browned around the rim. Allow to cool; then frost.
  • ***Frosting***.
  • Cream sugar and butter together.
  • Add orange juice and zest; blend well. I start with the smaller amount than add more to increase orange flavor to desired level.
  • Add milk a little at a time until frosting is spreadable.

3/4 cup Jif® Extra Crunchy Peanut Butter
1 cup sugar
1/2 cup Smucker's® Simply Fruit® Orange Marmalade Spreadable Fruit
2 large eggs
1 tsp. vanilla extract
2 cups Pillsbury BEST® All Purpose Flour
1 tbsp. baking powder
1/2 tsp. salt
1 cup butterscotch-flavored chips

Steps:

  • HEAT oven to 350 degrees F. Coat baking sheet lightly with no-stick cooking spray.
  • BEAT shortening, peanut butter and sugar in large bowl of electric mixer at medium speed until well blended. Beat in marmalade, eggs and vanilla.
  • COMBINE flour, baking powder and salt in medium bowl. Mix into shortening mixture at low speed until just blended. Stir in butterscotch chips. Drop rounded teaspoonfuls of dough 2 inches apart onto baking sheet.
  • BAKE 10 to 12 minutes, or until lightly browned. Cool 2 minutes on baking sheet. Remove to cooling rack.

1/2 cup butter or 1/2 cup margarine, softened
1 cup firmly packed brown sugar
1 egg
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon grated orange rind or 1 tablespoon lime rind
2 tablespoons orange juice or 2 tablespoons lime juice
1 1/2 cups oats, uncooked
1/2 cup raisins
1/4 cup chopped pecans

Steps:

  • In a large mixing bowl, cream the butter.
  • Add in the sugar and beat with an electric mixer on medium speed until mixture is light and fluffy.
  • Add in egg; beat well.
  • In another bowl, combine the flour, baking soda, and salt.
  • Add dry mixture to the creamed mixture; stir to mix.
  • Add in rind, juice, oats, raisins, and pecans; stir to combine.
  • Drop cookie dough by rounded teaspoonfuls onto a greased baking sheet.
  • Bake at 350° for 10-12 minutes or until lightly browned.
  • Let cool a couple minutes on cookie sheet, then transfer to a cooling rack to continue cooling.
