CREAMY LEMON CHICKEN

One-pan creamy lemon chicken dinner ready in just 25 minutes from start to finish! Perfect for busy week-nights, this dinner is family-friendly and low-carb. Golden crispy chicken smothered in an incredible creamy lemon sauce, serve over mashed potatoes, pasta, or rice.

3 large boneless and skinless chicken breasts (sliced into thin cutlets)
½ teaspoon salt
¼ teaspoon ground black pepper
6 tablespoons all-purpose flour
2 tablespoons olive oil
2 tablespoons unsalted butter (divided)
3 cloves garlic (minced)
1 cup chicken stock (or chicken broth)
1 cup heavy cream
4 teaspoons fresh lemon juice
½ cup parmesan cheese (grated)
cooked pasta
parsley (chopped)
fresh lemon slices

Steps:

  • Season chicken with salt and pepper, then dredge in flour and shake off any excess.
  • In a large skillet, heat olive oil and melt 1 tablespoon of butter on medium heat. Swirl pan to coat with oil and butter evenly. Add the chicken cutlets to the pan.
  • Brown the chicken (do not overcrowd and work in batches if needed) for 4-5 minutes on each side or until golden brown and cooked through. Transfer onto a plate, cover, and set aside.
  • Melt 1 tablespoon of butter, and saute the garlic for a minute or until it's fragrant. Add the chicken stock, and deglaze the pan scraping any bits stuck to the bottom of the pan with a wooden spoon.
  • Adjust the heat to medium-low, and add the heavy cream, lemon juice, and the parmesan cheese to the skillet. Allow the sauce to gently simmer for a couple of minutes.
  • Season with salt and pepper to your taste, then put the chicken back in the sauce and the sauce simmer and thicken for a few more minutes. Garnish with chopped fresh parsley leaves and serve warm over pasta, mashed potatoes, or rice.

1/4 cup olive oil
4 cloves of garlic, minced
2 tablespoons sugar
2 whole lemons, one juiced and one sliced
2 whole oranges, one juiced and one sliced
1 tablespoon Italian seasoning
1/2 teaspoon paprika
1 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground pepper, to taste
10-12 pieces about 4 1/2 lbs. bone-in chicken parts, (thighs and legs are best), pat dry
1 medium onion, any kind, thinly sliced
1 teaspoon dried thyme, or fresh chopped
1 tablespoon dried rosemary, or fresh chopped
Chopped fresh herbs, rosemary, thyme, parsley, for garnish, optional

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl whisk together olive oil, garlic, sugar, lemon juice, orange juice, Italian seasoning, paprika, onion powder, red pepper flakes, and salt and pepper.
  • Place chicken in a rimmed 13-in. x 9-in. baking dish. Place parts skin side up and spread them out evenly in the pan. Pour olive oil mixture all over chicken, turning pieces to coat all sides. (If you marinated the chicken in this mixture, still add it all in). Arrange slices of lemon, orange and onion around and under the chicken. Sprinkle all over generously with thyme, rosemary, salt and pepper.
  • Bake uncovered for about 1 hour, or until chicken is cooked and juices run clear. Remove parts to a serving platter and garnish with additional chopped fresh herbs, if desired.

This delicious roasted chicken is flavored with zesty ingredients like lemons and oranges, among other aromatics like fresh rosemary sprigs and parsley. It's wonderfully easy to make, extra juicy and so tender!

5-6 pound whole chicken, giblets removed
2-3 tablespoons olive oil
1 orange, sliced into wedges
1 lemon, sliced into wedges
3 fresh rosemary sprigs
Fresh parsley
1/2 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 tablespoon lemon pepper

Steps:

  • Preheat the oven to 350°F. Grease a large cast iron skillet or shallow roasting pan with olive oil, set aside.
  • Rinse chicken and wash cavity. Trim away excess skin. Use paper towels to pat chicken dry. Place chicken breast side up in a prepared roasting pan.
  • Coat chicken skin and the inside of the bird with olive oil. Cover with spices inside and out. Squeeze the juice from 1/2 of the lemon and 1/2 of the orange over the breasts of the chicken. Place citrus rinds in the pan with chicken.
  • Insert the remaining lemon slices, orange slices, parsley and rosemary into the cavity of the chicken.
  • Roast uncovered for about 1 hour and 20 minutes, until chicken is cooked through.
  • Use a meat thermometer inserted deep into the breast, but making sure not to touch bone, and cook chicken until it reaches 165°F. You can estimate about 20 minutes of baking time per pound of chicken.
  • Remove chicken and oven and let rest for 5 minutes, then slice and serve as desired.

This take on the humble chicken breast yields a dish that is at once crisp and moist, tangy and sweet. You can use bone-in chicken breasts, but you'll need to adjust your cooking time by a few minutes.

2 tablespoons extra-virgin olive oil
2 tablespoons butter
4 boneless chicken breasts
Salt and black pepper
1/4 cup flour
1 large orange
2 limes
1 tablespoon sugar

Steps:

  • Put a large skillet over medium-high heat for 2 or 3 minutes. Add olive oil and butter to the skillet and swirl it around.
  • Season the chicken with salt and pepper. Put flour on a plate. When the butter foam subsides in the pan, dredge the chicken in flour, shaking to remove the excess.
  • Add the breasts to the skillet and cook, turning once, until the chicken is browned on both sides and nearly cooked through, about 5 minutes per side. (Chicken should be constantly sizzling but not burning.) Transfer the chicken to a plate and cover loosely with foil to keep warm.
  • Cut the orange in half. Section one of the halves as you would a grapefruit, removing any seeds. Juice the remaining orange half and one lime.
  • With the heat still on medium-high, add the orange juice, lime juice and sugar to the skillet and let it bubble, stirring, until it is reduced by half, about 2 minutes.
  • Add the orange sections to the skillet and turn heat to low, stirring, until mixture is slightly thickened.
  • Return the chicken to the skillet, turn it in the sauce, then serve, seasoned with salt and pepper to taste. Cut the remaining lime into wedges for garnish.

2 to 3 teaspoons curry powder
1-1/4 teaspoons salt, divided
1/4 teaspoon pepper
6 boneless skinless chicken breast halves (5 ounces each)
1-1/2 cups orange juice
1 cup uncooked long grain rice
3/4 cup water
1 tablespoon brown sugar
1 teaspoon ground mustard
Chopped fresh parsley

Steps:

  • Combine curry powder, 1/2 teaspoon salt and the pepper; rub over both sides of chicken. In a skillet, combine orange juice, rice, water, brown sugar, mustard and remaining salt. Add chicken pieces; bring to a boil. Reduce heat; cover and simmer until chicken juices run clear, 20-25 minutes. , Remove from the heat and let stand, covered, until all liquid is absorbed, about 5 minutes. Sprinkle with parsley.
