RED VELVET SWIRL BROWNIES

1 tablespoon unsalted butter, for pan
1 stick unsalted butter
1 cup sugar
1 teaspoon vanilla extract
1/4 cup cocoa powder
Pinch salt
1 tablespoon red food coloring
1 teaspoon vinegar
2 eggs
3/4 cup all-purpose flour
1/4 cup chopped toasted walnuts
8 ounces cream cheese, softened
1/4 cup sugar
1 egg
1/8 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter an 8 by 8-inch baking pan, and set aside.
  • Brownie layer: In a saucepan on medium heat melt the butter. Remove the butter to a large bowl and add the sugar, vanilla, cocoa powder, salt, food coloring, and vinegar, in that order, mixing between additions. Whisk the eggs in a small bowl and stir it into the cocoa mix. Fold in the flour until lightly combined. Stir in the walnuts and pour the batter into the prepared baking pan, saving 1/4 cup of the batter for the top.
  • Cream cheese layer: Blend together the cream cheese, sugar, egg, and vanilla in a medium bowl. Gently spread the cream cheese layer on top of the brownie batter in the pan. Dollop the remaining brownie batter over the cream cheese layer. Using a skewer or the tip of a knife, drag the tip through the cream cheese mixture to create a swirl pattern. Bake the brownies for 30 minutes. Remove to a cooling rack and allow them to cool completely before cutting.

1/4 cup toasted coconut flakes
1 pint raspberries
2 cups store-bought chocolate pudding
1/4 cup raspberry jam (no sugar added or sugar free)
Cinnamon sugar, for dusting

Steps:

  • Layer some coconut flakes and 3 or 4 raspberries in each of two parfait glasses. Layer 1/4 cup chocolate pudding in each glass, then add 1 tablespoon raspberry jam to each. Top with more coconut and more berries. Add the remaining chocolate pudding, then the raspberry jam, and more coconut. Garnish with a sprinkle of cinnamon sugar and serve.

LOOPY LIME AND LYCHEE GELATIN PARFAIT

1 (20-ounce) can lychees in syrup or 8 lychees in syrup, sliced in half, 1/3 cup syrup reserved
1 (3-ounce) box lime-flavored gelatin (recommended: Jell-O)
2/3 cup vanilla-flavored vodka
1 cup heavy cream
1/4 cup sugar
1/4 teaspoon vanilla extract
Maraschino cherries, for garnish

Steps:

  • Evenly divide the lychees cut-side down among 4 parfait glasses.
  • Add the gelatin powder to a large measuring cup. Add 1/2 cup of boiling water and stir until the powder is dissolved. Stir in the lychee syrup and vodka. Pour over the prepared glasses and refrigerate until gelatin sets, about 2 hours.
  • Meanwhile, whip the cream. In a large bowl add the heavy cream and whisk briskly until soft peaks form, then add the sugar and vanilla and continue to whisk until firm peaks form when the whisk is removed.
  • Once the gelatin sets, top with whipped cream and a cherry for garnish.

Carton heavy whipping cream, cold
Powdered sugar
Coconut extract
1 store-bought red velvet cake (unfrosted)
Toasted coconut flakes

Steps:

  • In a large glass bowl, combine the heavy whipping cream and sugar. Beat with a hand mixer until thick and foamy. Add a small drizzle of coconut extract. Continue to whip until soft peaks appear.
  • Using a serrated knife cut the red velvet cake into 1-inch squares. Add about 1/3 of the squares to the bottom of the trifle bowl. Spread a layer of the whipped cream on top of the cake squares, followed by a layer of toasted coconut. Repeat layering 2 more times and serve.

1 (15.25 ounce) package red velvet cake mix
1 ¼ cups water
⅓ cup oil
3 large eggs
3 cups milk
2 (3.4 ounce) packages instant cheesecake-flavored pudding mix
1 (20 ounce) can cherry pie filling
1 (7 ounce) can whipped cream, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 10x15-inch jelly roll pan with parchment paper, then spray lightly with cooking spray.
  • Combine cake mix, water, oil, and eggs in a large mixing bowl. Beat with an electric mixer on low speed for 30 seconds, then on medium speed for 2 minutes. Pour batter into the prepared pan and smooth to even out.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Remove from the oven and let cool completely, about 30 minutes.
  • When the cake is almost cooled, whisk milk and pudding mix together for 2 minutes. Let sit until set, about 5 minutes.
  • Meanwhile, cut the cooled cake into 1-inch cubes.
  • Place 1/2 of the cake cubes in the bottom of an 8-inch trifle bowl. Layer with 1/2 of the pudding and 1/2 of the cherry pie filling. Repeat layers once more. Refrigerate for 4 to 8 hours before serving.
  • Garnish with whipped cream.
