1 egg

Steps:

  • Melt the butter in a medium frying pan over high heat.
  • Crack the egg into the pan and let it cook until the egg whites begin coagulating, about 1 minute. Sprinkle with salt and pepper. Cover with a lid on for 1 minute to finish cooking the egg. Then, uncover and remove the egg from the pan.
  • Enjoy!

1 teaspoon olive oil
2 large eggs
Toast, for serving, optional
Kosher salt and freshly ground black pepper

Steps:

  • Heat the oil in a medium nonstick skillet over low heat until slightly shimmering, about 5 minutes. Crack an egg into a small ramekin and slowly add it to the skillet; repeat with the other egg, adding it to the other side of the skillet. Cover with a tight lid and cook, uninterrupted, until the whites are completely set but the yolks are still runny, 2 to 2 1/2 minutes. Slide the eggs out of the skillet onto a plate or toast. Season with salt and pepper.

1 pizza dough (10-inch)
1/2 lb fresh spinach, washed and trimmed
2 teaspoons olive oil
1/4 lb feta cheese
6 artichoke hearts in brine, drained and quartered
1/3 cup pitted Greek olives or 1/3 cup ripe california olive

Steps:

  • Preheat oven to 475°F.
  • Coarsely chop the spinach and steam 3 to 5 minutes until wilted.
  • Set aside until cool enough to handle.
  • On a floured surface, roll out the pizza dough into desired size and place on a pizza screen or baking sheet dusted with cornmeal.
  • Turn the outer edge under ½ inch to form a rim.
  • Brush the crust with olive oil.
  • Cover the pizza with spinach and top with feta cheese, artichokes and olives.
  • Bake until the cheese melts and the crust turns golden brown, about 8 minutes.
