Easy pork carnitas are sure to win you over. They come out just right - and that means crispy on the outside and juicy on the inside!

4 lb boneless pork roast
3 Tbsp fine sea salt ((or 2 1/2 tsp table salt))
1 Tbsp ground black pepper
1 tsp dried oregano
1 large onion (diced)
5 garlic cloves
4 Tbsp lime juice ((from 2 limes))
1/2 cup orange juice ((from 2 oranges))
1 cup chicken broth
2 bay leaves

Steps:

  • Pat the pork dry with a paper towel. Combine salt, pepper and dried oregano and rub pork with the seasoning.
  • In the slow cooker, add chopped onion, garlic cloves, broth, lime juice, orange juice, and bay leaves.
  • Add the pork to the slow cooker. Cook on high for 5 hours or on low for 7-8 hours.
  • Remove the pork from the slow cooker. Shredded the pork with two forks. Keep the juice.
  • To get crispy edges, transfer the shredded pork to a baking sheet. Pour ½ cup of the juices on top of the meat and broil it for 5-7 minutes, or until golden brown.

Carnitas Tacos (pulled pork tacos) are THE BEST ever! The slow cooker Mexican pork is unbelievably tender and flavorful. Add a scoop of guacamole to a tortilla (or lettuce wrap!), top with a big pile of pulled pork and dig in!

Mexican Pork Carnitas
2 large ripe avocados
Juice from ½ lime
1 clove garlic (finely minced)
A pinch of salt
12 small tortillas (corn, flour, or paleo)
Minced red onions (to serve)
Other optional toppings: sour cream, minced cilantro, tomato salsa, a squeeze of lime juice

Steps:

  • Start by making the Mexican Pork Carnitas. This will take you about 8 hours to make in your slow cooker or in a pot.
  • In a medium-sized bowl, mash the avocados with the lime juice, garlic, and salt.
  • Put a scoop of carnitas in a tortilla, add a spoonful of the mashed avocados (guacamole), top with a sprinkle of minced red onions and any or all of the optional toppings.

Sunday Plastic Wrap Roasted Pork for Pulled Pork or Carnitas image

Did you know simple grocery store plastic wrap does not begin to melt until after 400F degrees? I didn't either until I heard Chef Robert Irvine tell that fun fact to a restauranteur. I had already made baby backs using this method, which worked GREAT...but this was my first attempt at cooking a full-on roast. Season and wrap the meat Saturday morning and put it in the oven Saturday night before bed. You will be rewarded Sunday morning.

5 -6 lbs pork shoulder
1 tablespoon salt
1 tablespoon pepper
1 tablespoon cumin
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon chili powder

Steps:

  • Rinse/dry roast. I clean and rinse a kitchen sink well with a bleach product (Comet) and use that for my "rub bowl". Stab the roast with a sharp knife all over all sides, so the spices get into the meat.
  • Combine all spices and herbs in a bowl. Please feel free to add brown sugar (if you want more BBQ pulled pork flavor) or more "mex"spice (for carnitas flavor).
  • Rub the roast well.
  • Lay out a sheet of plastic wrap large enough to cover the roast. Place and cover the roast. Repeat 4 or 5 times, pivoting and turning the roast over so it will be sealed from all angles and ends.
  • Lay out and form sheets of aluminum foil to completely envelope and seal your package. Place in large baking dish and refrigerate for at least 4 hours.
  • Before bedtime, set oven to 225F degrees. Place the dish in the oven and walk away/sleep for a minimum of 8 hours.
  • Remove dish from oven after a good night's sleep. Let rest for 45 minutes while you drink your coffee and have a nice breakfast.
  • I drain the fat that accumulates in the dish (notice, because of the low heat, there is no scorching on that dish) then replace the roast. cut away the foil/plastic wrap, letting the juices fall back into the dish. Now you can cut or shred the meat as you wish.
  • Enjoy!

Carnitas (or "little meats") are a traditional Mexican dish of cubed pork shoulder braised with spices and citrus until tender. Fresh orange, crushed garlic, earthy oregano and aromatic cinnamon and bay leaf create a rich and fragrant braising liquid that imparts its savory flavors into the pork as it cooks. There's very little hands-on work involved, and the carnitas can be made a day ahead. Store the pork in the liquid overnight, then gently reheat before serving. A final finish under the broiler creates a golden, crispy exterior on the meat.

3 pounds pork shoulder, cut into 2-inch chunks
1 tablespoon kosher salt (such as Diamond Crystal), plus more for seasoning
1 teaspoon black pepper, plus more for seasoning
1 1/2 teaspoons dried oregano
1 navel orange, quartered
1 white onion, quartered
7 garlic cloves, crushed
1 cinnamon stick, broken into 2 pieces
1 bay leaf (dried or fresh)
1/4 cup neutral oil, such as safflower or canola
Warmed tortillas, chopped white onion, chopped cilantro, sliced avocado and lime wedges, for serving

Steps:

  • Heat oven to 350 degrees. In a large Dutch oven, combine pork, 1 tablespoon salt, 1 teaspoon pepper and the oregano, and toss to evenly coat the meat in the spices. Squeeze orange juice all over the pork and add the juiced orange quarters to the pot. Add onion, garlic, cinnamon stick and bay leaf, and toss until well incorporated, nestling everything in an even layer. Drizzle oil evenly over the meat. Cover and braise in oven until pork is tender, about 2 1/2 hours, stirring once halfway through the cooking.
  • Heat broiler to high, setting a rack 6 inches from the heat source. Transfer pork to a rimmed baking sheet and shred the meat. Strain juices from the pot through a fine-mesh sieve into a small bowl, pressing on the solids; discard solids. Skim fat from top and reserve the juices.
  • Broil pork until golden and crisp in spots, about 4 to 5 minutes. Transfer carnitas to serving plates and drizzle with some of the reserved juices. Serve warm with tortillas and toppings of choice.
