1 large yellow onion (sliced)
2 tablespoons butter or ghee
1 teaspoon kosher salt
water

Steps:

  • Heat your cast iron skillet over medium heat.
  • Add the butter, onions and kosher salt. Cook stirring every few minutes.
  • As soon as the onions start to look a little dry, add in a few tablespoons of water. This will both prevent the onions from drying out and keep them juicy and cooking at an even temperature. The water will evaporate as it cooks, leaving you with perfectly juicy onions. I usually add water twice during the cooking process.
  • Continue to grill the onions uncovered until they are soft and golden brown. About 30 minutes.

4 large sweet onions
4 teaspoons beef bouillon granules
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
4 tablespoons butter
4 teaspoons white wine or beef broth, optional

Steps:

  • Prepare grill for indirect heat. Peel onions, leaving root ends intact. Cut a thin slice from the top of each, then carefully cut a 1-in. hole in the center. Cut each onion into quarters, cutting to within 1/2 in. of bottom. Place each onion on a double thickness of heavy-duty foil (about 12 in. square)., Sprinkle bouillon, thyme, salt and pepper into centers; top with butter. If desired, drizzle with wine. Fold foil around onions, sealing tightly., Grill onions, covered, over indirect medium heat until tender, 35-40 minutes. Open foil carefully to allow steam to escape.

A man from Georgia told my husband about this idea. He wasn't sure about measurements or times but I made this and just used my own judgment. It's a nice departure from the same old stuff on the grill. It tastes like French Onion Soup!

1 vidalia onion (medium or large)
1 teaspoon butter, to taste
1 chicken bouillon cubes or 1 beef bouillon cube
aluminum foil

Steps:

  • Slice the ends off the onion and peel the outer skin off.
  • Place the onion on the aluminum foil (you could spray it first with nonstick spray).
  • With a sharp paring knife, scoop out some of the onion in the center to make an indentation.
  • Place the butter in the hollowed out area.
  • Then place the bouillon cube in the butter.
  • Wrap the onion up in the foil, sealing it tightly and place on a medium to low temperature grill and cook 30 to 40 minutes.
  • The onion is done when it feels soft to the touch.
  • Open the foil packet and put the onion in a shallow bowl or right on your plate.
  • Be careful, it's juicy!
  • You can leave out the butter (although this might alter the flavor) or use a beef bouillon cube if you want.
  • If you find the bouillon flavor to be too strong, use half a cube per onion.

2 tablespoons olive oil
1/2 teaspoon peppered seasoned salt
1/4 teaspoon ground cumin
1/2 medium red onion, quartered
2 medium yellow summer squash, halved, cut into 1/2-inch-thick slices

Steps:

  • Heat gas or charcoal grill. In large bowl, mix oil, peppered seasoned salt and cumin. Add onion; toss to coat.
  • When grill is heated, with slotted spoon, place onion in grill basket (grill "wok"); reserve oil mixture in bowl to coat squash. Place basket on gas grill over medium heat or on charcoal grill over medium coals. Cook 10 minutes, turning basket occasionally.
  • Meanwhile, add summer squash to reserved oil mixture in bowl; toss to coat.
  • Place squash in basket with onion; cook 5 to 7 minutes longer, turning basket occasionally, until vegetables are tender.
