ZUCCHINI AND SUMMER SQUASH CASSEROLE

1 1/2 tablespoons unsalted butter, divided
2 tablespoons olive oil
1 cup chopped onions
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon minced garlic
2 pounds summer squash (about 6 medium), sliced into thin rounds
2 pounds zucchini (about 6 medium), sliced into thin rounds
1 teaspoon finely chopped fresh thyme leaves
3 large eggs
1/4 cup heavy cream
1 cup crushed butter crackers
1/2 cup grated Parmesan cheese, optional

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9 by 13-inch baking dish with 1/2 tablespoon butter.
  • Heat the olive oil and the remaining 1 tablespoon butter in a medium pot over medium-high heat. Add the onions, salt, and black pepper and cook until the onions are soft, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the squash and zucchini and cook until tender, stirring occasionally, about 20 minutes. Stir in the thyme and remove from the heat. Using a slotted spoon, transfer the vegetables to the prepared baking dish, reserving the cooking liquid.
  • Combine the eggs and cream in a medium bowl and whisk to blend. Gradually whisk the reserved cooking liquid into the egg mixture. When all the cooking liquid is incorporated, pour the mixture over the vegetables in the baking dish. Using a spoon, gently shift the vegetables around so the egg mixture is evenly distributed. Bake until the mixture sets, about 30 minutes. Remove from oven and sprinkle first with the crackers and then with the Parmesan, if using, and return to the oven. Bake until golden brown, 10 to 15 minutes.

This recipe was created in response to a few picky veggie eaters in my household who love corn casserole, but aren't fond of some garden favorites. This gets gobbled up every time! No one ever guesses at the amount of veggies inside this firm but creamy yumminess! This great potluck pleaser freezes well. I used freshly chopped squash and zucchini as well as frozen chopped veggies (originally from my garden).

1 tablespoon vegetable oil
2 cups chopped yellow summer squash
1 ½ cups shredded zucchini
¼ cup chopped red onion
1 tablespoon garlic powder
⅛ teaspoon ground black pepper, or to taste
¼ cup grated Parmesan cheese
½ cup light margarine
1 (8 ounce) package cream cheese, softened
1 (14.5 ounce) can whole kernel corn, drained
2 (14.5 ounce) cans cream-style corn, divided
2 (8.5 ounce) packages dry corn muffin mix
2 eggs
1 tablespoon white sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Heat vegetable oil in a large saucepan over medium-high heat. Cook and stir yellow summer squash, zucchini, and red onion in hot oil until softened, about 10 minutes; season with garlic powder and black pepper. Stir Parmesan cheese into the squash mixture. Turn off the heat and add margarine and cream cheese, breaking them into smaller pieces as you stir them into the squash mixture; remove the saucepan from heat. Stir kernel corn and 1 can cream-style corn through the squash mixture.
  • Stir remaining can of cream-style corn, dry corn muffin mix, eggs, and sugar in a large bowl until thoroughly mixed. Add the cooled squash mixture, 1 to 2 cups at a time, until completely integrated; pour into prepared baking dish.
  • Bake in preheated oven until browned and bubbling on the edges and firm on top, 30 to 50 minutes. Allow to cool at least 5 minutes before serving.

2 tablespoons butter
1 lb zucchini, sliced
1 lb yellow squash, sliced
salt & freshly ground black pepper
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (8 ounce) carton sour cream
1 (7 ounce) can sliced button mushrooms, drained
1/2 cup butter or 1/2 cup margarine, melted
1 (8 ounce) package herb seasoned stuffing mix
1 large onion, chopped

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 9 x 13 inch baking dish or casserole and set aside.
  • In a large skillet, heat 2 tablespoons butter; add onions and cook until tender; add zucchini and yellow squash and cook, stirring until just tender; season to taste with salt and pepper.
  • Add the condensed soup, sour cream, and mushrooms, mixing well.
  • In a large bowl, combine the melted butter with the stuffing mix; pour half the stuffing mix into the baking dish.
  • Layer the squash mixture over the stuffing mix.
  • Cover with the remaining stuffing mix.
  • Bake uncovered at 350 degrees F for 30-35 minutes, or until topping is golden brown and casserole is bubbly.

I usually make the full fat version but we as a family are trying to watch what we eat. So I took my usual version and made some changes. It turned out pretty well.

1 1/2 lbs squash or 1 1/2 lbs zucchini
1 medium onion, chopped
3/4 cup reduced-fat sharp cheddar cheese, shreds
1 egg
1/2 cup 2% low-fat milk
15 low-fat Ritz crackers
salt and pepper

Steps:

  • Split squash and zucchini length wise then cut in to 1/2 inch pieces.
  • Chop onion medium dice.
  • Put all three items in pan cover with water and cook till fork tender.
  • Drain all vegetables put casserole dish.
  • Crush crackers into crumbs and add to vegetables.
  • Mix all other ingredients into the casserole dish with the vegetables.
  • Add salt and pepper to taste.
  • Sprinkle 2 extra crackers crumbled on top.
  • Cover and bake at 325 for 35 minutes.
  • Uncover and bake for 10 minutes more.
  • Remove from oven and let sit for 15 minutes then serve.

1 1/2 c zucchini, thin sliced
1 1/2 c yellow summer squash, thin sliced
1 medium onion, grated or finely minced
3 Tbsp mayonnaise, heaping tablespoons
4 large eggs
1 c baking mix
1 c cheese, shredded
1/2 tsp salt and pepper, each

Steps:

  • 1. Preheat oven to 350 degrees F. Spray a 9" x 2" round cake pan. Set it aside. (The pan needs to be at least 2" deep to prevent spill-overs.)
  • 2. Add the Zucchini, Squash and Onion to a large mixing bowl.
  • 3. Add the Mayonnaise to the bowl.
  • 4. Break the eggs into the bowl.
  • 5. Add the Baking Mix to the bowl.
  • 6. Add the cheese to the bowl.
  • 7. Add the salt and pepper to the bowl.
  • 8. Stir everything together. Leave no lumps. Make sure all of the vegetables are moistened with the mixture.
  • 9. Pour the contents of the bowl into the prepared pan. Smooth the top evenly.
  • 10. Place the pan in the oven (rack should be in the upper third of the oven) and bake on 350 for 45 to 55 minutes. The top will be golden brown and a knife will come out clean when inserted into the middle.
  • 11. Carefully remove from the oven and allow to cool in the pan 10-15 minutes before cutting. Can be cut into 4 large servings or 8 smaller wedges.
  • 12. Refrigerate leftovers. Reheat the smaller wedges in the microwave for 30 seconds (for 1 serving.)

Delish.. Zucchini recipe, with cumin, ground beef,red bell pepper and corn. You can use mexicorn ( 1 each 12 oz. can) instead of corn and red pepper. This recipe comes from an old Country Living Recipe Book. . When I make this for the kids, I omit the cumin. Quick and easy!!

3 ears corn (shaved-or 1 cup frozen or canned corn)

Steps:

  • Saute' ground beef,chopped red pepper ( omit if using mexicorn),onion and garlic in medium skillet, until meat is well browned.
  • Add zucchini, salt,cumin & pepper, cook over medium heat 8 minutes.
  • Add tomato sauce, crushed red pepper and corn or (canned mexicorn), bring to a boil, reduce heat, cover and simmer 10-15 minutes or until zucchini is beginning to soften.
  • If mixture is too thick, add a little water (about 1/2 cup. or chicken broth).
  • Top each serving with parmesan cheese or cheddar cheese. We like parmesan.

If you have lots of zucchini in the garden, then this is a great way to use them. It's different, but very tasty. It's so good that even my picky children like to eat it.

2 pounds sliced zucchini
¼ cup chopped onion
1 (10.75 ounce) can condensed cream of chicken soup
1 cup sour cream
1 cup grated carrots
1 stick unsalted butter, melted
1 (6 ounce) package chicken-flavored dry bread stuffing mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Boil the zucchini and onion in water for 5 minutes; drain well. In a medium bowl, combine the soup, sour cream and carrots. Stir in the zucchini and onion and mix well.
  • In a separate medium bowl, combine the butter and stuffing mix. Spread half of this mixture into the bottom of a 9x13-inch baking dish. Spoon the zucchini mixture over the stuffing, then top off with the other half of the stuffing.
  • Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until stuffing is golden brown.
