I cut this recipe out of the newspaper last summer and have made it once, using Cointreau as the liquor and blackberries. I served it with pound cake and ice cream and it was wonderful. Easy to fix when you've already got the grill up and going. You can just throw these packets on while the burgers are cooking.

4 plums, thinly sliced
2 nectarines, thinly sliced
1 cup blueberries or 1 cup blackberry (or a combination)
1/4 cup fruit liqueur (Cointreau, Framboise or Chambord)
sugar

Steps:

  • Prepare a low fire in the grill.
  • Divide the fruit between 2 squares of heavy-duty foil.
  • Drizzle each with 2 tablespoons of liqueur.
  • Seal tightly into packets so no liquid or steam will escape.
  • Grill the packets, turning once, 15 to 20 minutes.
  • Open carefully over a bowl; the fruit will have formed a syrup.
  • Sprinkle with sugar to taste.
  • Serve warm or let sit for an hour so flavors will intensify.
  • Serves 2 on its own, 4 if used as an ice cream topping.

Any fruit, cantaloupe, peaches, nectarines, bing or Queen Anne cherries, seeded and halved, watermelon, pineapple, berries, grapes, whatever, just so it is in season and tasty.
whipping cream, sweetened lightly to cover the top
bitter chocolate to shave over the top

Steps:

  • Several hours ahead of time you can cut up the fruit and mix it together in casserole and put in frig. When ready to serve turn on the broiler and take the rack you will be using out. Whip enough cream to well cover the top of the fruit. If a lot of liquid has settled you can drain it off before adding fruit. Shave chocolate over the top so the cream is mostly covered but not densely. Can leave in frig a few minutes if you want to, but not long enough for cream to collapse. When ready to serve put casserole on cool rack under the hot broiler. Watch carefully! Take out as soon as chocolate begins to melt and serve.

Add summer raspberries, blueberries and juicy plums to orange juice for a nutritious breakfast mix

4 large plums , stoned and cut into wedges
200g punnet blueberry
zest and juice 1 orange
25g soft light brown sugar
150g punnet raspberry
thick yogurt and honey, to serve (optional)

Steps:

  • Cook the plums and blueberries in a small pan with the orange zest and juice, sugar and 4 tbsp water until slightly softened but not mushy. Gently stir in the raspberries and cook for 1 min more.
  • Remove from the heat and allow to cool to room temperature. Serve with yogurt and a drizzle of honey, if you like.
