As summer winds down, combine cucumbers with a taste of fall -- apples and fennel -- in this crunchy salad. Cottage cheese makes it substantial enough for lunch.

2 tablespoons rice-wine vinegar
3 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1 cup chopped cucumber
1 cup chopped fennel
1 cup chopped apple
Cottage cheese
Freshly ground pepper

Steps:

  • Combine rice-wine vinegar, oil, and salt. Toss with cucumber, fennel, and apple. Serve spooned over cottage cheese, sprinkled with pepper and fennel fronds.

1 1/2 c cottage cheese (regular, low-fat, fat free large or small curd ... your choice)
1 thin cucumber or 2 cucumber pickles peeled , halved and cut thin
1 - 2 green onions chopped partially up stem
1 - 2 pinches dill (optional)
salt/pepper to taste
garnish: w/ cherry tomatoes, cherry peppers, fresh green pepper strips, raddishes or whatever suits your fancy

Steps:

  • 1. In serving bowl add all ingredients starting with the cottage cheese first , mix/toss well .. top with garnishes of your choice. Enjoy !

2 medium ripe tomatoes, chopped
1 pint cottage cheese, small or large curd, light or regular
1/4 cup chopped green olives with pimentos
1/4 cup chopped onion, white, red or green
salt and pepper to taste

  • Mix all ingredients together and eat immediately or refrigerate. Just gets better with time. Enjoy!

My daughter-in-law from my Husband's side gave me this recipe and I have used it with MUCH success at several "bring a side dish" parties. Everyone Always asks for the recipe, so I thought I would share it here as well. Simple and Scrumptious ! The following recipe is enough for a party, but you can always scale it down for your family.

3 (32 ounce) containers small curd cottage cheese
2 large cucumbers, clean and dried
2 large green bell peppers (red or yellow can substitute or you can mix and match to suit; clean and dried)
2 large firm tomatoes or 5 firm roma tomatoes, clean and dried
2 (1 ounce) packages hidden valley ranch dip mix

Steps:

  • Chop Cucumbers, Peppers, and Tomatoes into manageable bite size hunks, and place in large mixing bowl.
  • Pour both packs of the dry dip mix over veggies and mix to coat.
  • Fold in cottage cheese and mix to distribute dip mix and veggies throughout then Chill until ready to go to party.
