BAKED CHILI-GARLIC FRIES

4 large russet potatoes, peeled and cut into thick wedges
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 tablespoon chili powder
4 cloves garlic, grated

Steps:

  • Preheat the oven to 450 degrees F.
  • Put the potatoes in a large bowl and pour over the olive oil. Add big pinches of salt and pepper. Add the chili powder and garlic and toss together well.
  • Spread the potatoes in a single layer onto 2 baking sheets. Bake, tossing them halfway through the cooking time, until crispy, about 30 minutes. Remove to a platter, season with additional salt and serve.

I have not tried this recipe as yet. I saw it in the newspaper and decided to post it here.I have finaly got down to trying this recipe and I have to agree with the other reviwers these wedges are rather bland as is. I have amended the quanities of the spices.

5 medium potatoes
2 1/4 teaspoons sumaq
3/4 teaspoon chili powder
1/2 teaspoon salt
1 egg white, lightly beaten

Steps:

  • preheat oven to 195°C.
  • Grease an oven tray well with vegetable oil.
  • Wash and cut potatoes into wedges (do not peel potatoes).
  • Combine egg white and spices into a large bowl. Mix well.
  • Add potatoes and coat well.
  • Bake potatoes skin side down for 40 minutes or until tender and golden brown.
  • Serve with a relish or as a side.

1/2 bag (about 16 ounces) french-fried potatoes (recommended: Ore-Ida Golden Crinkles)
1 pound ground beef
1 (12-ounce) bottle chili sauce (recommended: Heinz)
1 packet chili seasoning (recommended: Lawry's)
1/2 cup water
1 teaspoon Worcestershire sauce
1 tablespoon yellow mustard
1/2 teaspoon onion powder
Shredded Cheddar, optional (recommended: Kraft)

Steps:

  • Preheat oven to 450 degrees F.
  • Lay fries in a single layer on a baking sheet. Bake in preheated oven for 20 to 25 minutes, turning halfway through cooking, until crisp and golden.
  • In a large pot over medium heat, break up ground beef and brown, stirring constantly to break up all the clumps to fine ground.
  • Add remaining ingredients through the onion powder. Bring to boil. Lower heat and simmer for 30 minutes. Serve hot fries on a plate smothered with chili and topped with shredded cheese, if using.

6 large jalapeno peppers
4 large poblano peppers
1 cup all-purpose flour, plus 2 tablespoons
3 large eggs, beaten
1/4 cup milk
2 tablespoons spicy mustard (recommended: Gulden's)
1 cup bread crumbs
1/2 cup grated Parmesan or Romano
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Remove the seeds from all of the peppers and cut into 1/2-inch lengthwise strips.
  • Set up a breading station: 1 pan of 1 cup of flour, 1 pan of eggs beaten with milk, 2 tablespoons of flour and mustard, and 1 pan of bread crumbs seasoned with cheese, and salt and pepper, to taste.
  • Coat the peppers in the flour, then in the egg mixture and then in the bread crumbs.
  • Arrange the chili fries on a nonstick baking sheet and roast for 18 minutes, turning once.
  • Remove from the oven and transfer to a serving platter.

FRIES SEASONED WITH SUMAC

Sumac is a typical spice in Middle Eastern cooking and adds a tangy, lemony flavor to foods.

1 tablespoon(s) olive oil
1 teaspoon(s) sea salt
1 1/2 teaspoon(s) sumac, or to taste

Steps:

  • Preheat oven to 425 degrees. Cut potatoes into 1/4 x 3-inch sticks. In a bowl, toss with oil and salt.
  • Spread out fries, on parchment-lined baking sheets, so they are not overlapping and bake them for 25 -30 minutes.
  • Remove fries from oven, carefully turn each one over and rotate sheet positions in the oven and bake an additional 10 minutes until fries are crispy and a deep golden brown. Remove from oven; sprinkle with sumac.
