CARAMELIZED ALMONDS
Caramelized almonds are the perfect addition to any salad or great to just snack on. They're sweet, nutty, and add so much beautiful texture.

Steps:
- Line a baking sheet with parchment paper and set aside
- Place sliced almonds and granulated sugar in a skillet over medium-high heat. Stir constantly for 3-4 minutes. (I like using a heat proof rubber spatula.)
- Remove pan from heat once the almonds are toasted and sugar has melted and sticks to the almonds.
- Pour the nuts onto the parchment paper and quickly spread out as much as possible using a spatula or some forks.
- Let nuts cool completely and then break into clusters if stuck together.
- Store in an airtight container for up to 1-2 weeks. Snack on or use on salads or yogurt.

- Combine almonds and sugar in a small skillet over medium-high heat; cook and stir until sugar is melted over almonds, about 3 minutes. Spread almonds in a single layer on waxed paper to cool.
- To make the salad dressing, whisk together the vinegar, salad oil, sugar, mustard, poppy seeds, and salt in a bowl; set aside.
- Toss together the romaine lettuce, spinach, mushrooms, Swiss cheese, onion, and oranges in a large bowl. Sprinkle almonds and drizzle dressing over top of salad just before serving.

- Melt butter on a non-stick frying pan over medium heat.
- When the butter is melted, add sugar and stir to combine.
- Add the slivered almonds and cook, stirring every 30 seconds, for 4 minutes, or until slightly browned.
- Remove the toasted sugared almonds from a frying pan onto the parchment paper and spread in a single layer.
- Let the almonds cool, then transfer to a serving dish.

- In a large bowl, combine the romaine lettuce, oranges and green onions.
- Heat 2 tablespoons sugar with the almonds in saucepan over medium heat. Cook and stir while sugar starts to melt and coat almonds. Stir constantly until almonds are light brown. Turn onto a plate, and cool for 10 minutes.
- Combine red wine vinegar, olive oil, one tablespoon sugar, red pepper flakes and black pepper in a jar with a tight fitting lid. Shake vigorously until sugar is dissolved.
- Before serving, toss lettuce with salad dressing until coated. Transfer to a decorative serving bowl, and sprinkle with sugared almonds.

ALMOND CRUMBLE TOPPING
Steps:
- Combine flour, sugar and nutmeg in a mixing bowl; stir well to mix and stir in sliced almonds.
- Stir in the butter evenly. Set aside for 5 minutes, then, using your fingertips, break the mixture into 1/4 to 1/2 inch crumbs. Set aside again while you prepare the filling.
