SUGAR COATED PECANS



Sugar Coated Pecans image

These sweet pecans are wonderful snacks for any occasion.

Number Of Ingredients 6

1 egg white
1 tablespoon water
1 pound pecan halves
1 cup white sugar
¾ teaspoon salt
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet.
  • In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.
  • Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet.
  • Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.

These pecans are a standard nibble at our house during the holiday season. Pecans can be made 1 week ahead. Store in an airtight container at room temperature.

1 ½ teaspoons onion powder
1 ½ teaspoons garlic powder
1 ¼ teaspoons coarse kosher salt, divided
¾ teaspoon curry powder
¼ teaspoon cayenne pepper
2 tablespoons honey
2 tablespoons unsalted butter
3 cups pecan halves

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Line a large-rimmed baking sheet with aluminum foil.
  • Mix onion powder, garlic powder, 1 teaspoon salt, curry powder, and cayenne pepper together in a small bowl.
  • Heat honey, butter, and remaining 1/4 teaspoon salt together in a saucepan over medium heat; stir pecans into the honey mixture. Remove saucepan from heat and add spice mixture. Toss to evenly coat pecans. Spread coated pecans in an even layer on the prepared baking sheet.
  • Bake in the preheated oven until pecans are dry and toasted, about 40 minutes. Remove from oven and cool completely. Separate pecans.

3 large egg whites
1 cup sugar
1 teaspoon ground cinnamon
4 cups pecan halves

Steps:

  • Preheat the oven to 350 degrees F. Line a large baking sheet with sides with aluminum foil. Pour the butter onto the lined sheet. In a large bowl, mix the egg whites, sugar and cinnamon. Add the pecan halves and toss until they are fully coated. Spread the pecans onto the baking sheet. Bake for 30 minutes, stirring the pecans every 10 minutes. Cool on the baking sheet for 10 to 15 minutes before serving.

2 tablespoons egg white (1 extra-large egg)
1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon chile powder
1/4 teaspoon ground cloves
Kosher salt and freshly ground black pepper
2 cups whole pecan halves (8 ounces)
1/2 teaspoon fleur de sel

Steps:

  • Preheat the oven to 300 degrees F. Spray a sheet pan with the cooking spray or brush it lightly with oil.
  • Place the egg white in a large bowl and whisk vigorously for 15 seconds, until light and frothy. Whisk in the brown sugar, vanilla, cinnamon, ginger, chile powder, cloves, 1 teaspoon kosher salt, and 1/2 teaspoon pepper. Add the pecans and mix well, until thoroughly coated. Pour the mixture, including any liquid, onto the prepared pan and spread in a single layer. Bake for 30 minutes, tossing twice with a metal spatula. Each time you toss the pecans, spread them out again in one layer. When they're done, sprinkle with fleur de sel and allow to cool completely; they will crisp as they cool. I think making someone else's recipes is a wonderful way to remember them when they're no longer with us. Garth's brother Jerry loved my cooking, and he was a good cook himself. He always made me feel he truly appreciated the meals I made for him, and I loved him for it. He had a wonderful smile and a great spirit. Jerry brought these pecans out to the house one day, and I only stopped eating them when they were gone! The butter and sugar make them crunchy, sweet, and rich.
