BELGIAN WAFFLES WITH BERRY CREAM
With their sweet whipped cream topping loaded with strawberries and blueberries, these waffles are equally popular for dessert!

Steps:
- In chilled medium bowl, beat whipping cream and powdered sugar with electric mixer on high speed until stiff peaks form. Fold in strawberries and blueberries.
- Heat Belgian or regular waffle iron (Waffle irons without a nonstick coating may need to be brushed with vegetable oil or sprayed with cooking spray before batter for each waffle is added.)
- In small bowl, beat eggs with electric mixer on high speed about 3 minutes or until thick and lemon colored. Beat in milk. Beat in Bisquick and granulated sugar on low speed until smooth. Gently fold in oil. Pour batter onto hot waffle iron. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle iron.
- Bake about 5 minutes or until steaming stops. Carefully remove waffle. Top each waffle with berry cream and additional berries.

WAFFLE RECIPE

- Preheat waffle iron. Preheat oven to 225°F or set on warm setting (only if you want to keep waffles warm and crispy while cooking remaining waffles.) Place a rack on a large baking sheet and place inside the oven.
- In a large bowl, whisk together all purpose flour, sugar, salt baking powder and baking soda (if using). Set aside.
- In a medium bowl, combine room temperature milk, eggs, vanilla extract and melted (and cooled) butter. Whisk to combine.
- Add the wet ingredients to the dry ingredients and stir just until combined. A few small lumps are fine. Let the waffle batter sit for 10 minutes.
- Grease waffle iron if needed with butter, oil or cooking spray (refer to product instructions if necessary) and scoop or ladle the batter onto the preheated waffle iron until batter is within ½ an inch from the edge. (I use about ¾ cup of batter for my iron.)
- Cook until golden brown and waffle iron indicates the waffle is ready. If your waffle iron doesn't have a light that goes off, keep an eye on the steam coming from the iron. When it is almost gone, check your waffle as that is in indication it is done cooking.
- Remove waffle from iron and serve with butter, maple syrup, berries and/or whipped cream. You can also keep warm by placing cooked waffles in the preheated oven on the rack while the rest of the waffles are cooked.

WHIPPED CREAM WITH FRESH BERRIES
Steps:
- Add the heavy cream and sugar to the chilled bowl of a stand mixer (you can also use a hand mixer or a whisk and a large chilled bowl). Whip on medium speed until the cream holds soft peaks. Add the vanilla bean paste, creme fraiche, orange zest and orange liqueur and whip on medium speed until the cream holds medium peaks.
- Layer fruit in a bowl, spoon over whipped cream and serve.
SUGAR WAFFLES
I mostly make these waffles for my kids to take to school on there birthdays, or just when I have friends coming around for a cup of coffee.

Steps:
- Mix flour, sugar and vanilla sugar.
- Add butter and eggs.
- Leave to rest for minute 2 hours in the fridge.
- Put dough on the waffle maker (use two teaspoons or tablespoons according to the size of waffles you would like to make).
- Bake for a few minutes until the waffles are golden brown.
- Leave to cool. You can keep these waffles for some time in a plastic box, but couldn't tell you how long as they never last for more than 2-3 days.
- Enjoy!
