1 cup sugar
1 teaspoon baking soda
1 teaspoon clove
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup buttermilk
1 egg, lightly beaten
1/2 cup butter, melted
1/2 cup raisins (optional)
1/2 cup pecans, chopped (optional)

Steps:

  • Combine dry ingredients. Stir in milk, egg, and butter, beating only enough to blend. Stir in raisins and nuts, of desired.
  • Fill greased muffin cups 3/4 full. Bake at 400º for 20 minutes or until muffins test done.

2 cups all-purpose flour
1 cup sugar
3/4 cup margarine, cold
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 cup buttermilk
1 egg, lightly beaten

Steps:

  • In a bowl, combine flour and sugar; cut in butter until crumbly. Set aside 1/2 cup for topping. Add baking soda, cinnamon and cloves to the remaining crumb mixture. Stir in buttermilk and egg just until moistened.
  • Fill greased or paper-lined muffin cups two-thirds full. Sprinkle with reserved topping. Bake at 375 degrees F for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool. Serve warm.

3/4 cup shortening
1 cup sugar
1 large egg
1/4 cup molasses
2 cups all-purpose flour
1-1/2 teaspoons ground ginger
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon ground cloves
1/2 teaspoon salt
LEMON FROSTING:
2 cups confectioners' sugar
3 tablespoons butter, softened
1 teaspoon grated lemon zest
3 to 4 tablespoons lemon juice

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg and molasses. Combine dry ingredients; gradually add to creamed mixture and mix well. , Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350° for 8-10 minutes. Remove to wire racks; cool. , For frosting, cream the confectioners' sugar, butter and zest in a large bowl. Gradually add lemon juice, beating until frosting achieves desired spreading consistency. 1 teaspoon pumpkin pie spice
½ teaspoon salt
⅓ cup white sugar
⅓ cup avocado oil
3 tablespoons aquafaba (chickpea water)
½ cup white sugar
½ teaspoon ground cinnamon
½ cup vegan margarine (such as Earth Balance®), melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a muffin tin with cooking spray.
  • Mix flour, baking powder, pumpkin pie spice, and salt together in a small bowl.
