Steps:

  • Whisk flour, baking powder, and salt together in a bowl. Mix butter mixture into flour mixture and form dough into a ball. Wrap ball with plastic wrap and refrigerate for 1 hour.

This is a recipe for gluten-free, cane-sugar-free hamantaschen. They don't have a hard sugar-cookie consistency; Rather, they are more like soft, cakey pastries. Delicious! I filled half of my hamantaschen with no-sugar-added apricot preserves. The other half I filled with lekvar, a puree of dried prunes that have been softened in boiling water. You can buy canned lekvar, which has sugar or corn syrup in it, or you can try making it yourself using a traditional recipe but omitting or replacing the sugar. This recipe has no refined sugars. It uses agave nectar, which is one of the least refined sweeteners available. Though it naturally contains fructose, it is much lower on the glycemic index (GI) than other natural sweeteners, which can makes it more suitable for some diabetics, sugar-sensitive people, low-carbers, and hypoglycemics.

3/4 cup agave nectar
1 egg
2 tablespoons lemon juice
1/4 teaspoon lemon zest

1 additional egg, well beaten and set aside

Steps:

  • With an electric hand mixer, or in the bowl of a standing mixer, cream the butter or margarine with the agave nectar. Add the unbeaten egg, lemon juice, lemon zest and vanilla and continue combining. In a separate bowl, combine all dry ingredients.
  • Slowly add the dry mixture into the liquid mixture. Mix until combined into a cohesive ball of dough. Refrigerate for 2 hours or overnight.
  • Line two cookie sheets with parchment paper. Flour a counter or other surface thoroughly. Remove dough from refrigerator and immediately roll into a ball and roll the ball in flour before placing it on the floured counter. Roll out until 1/4" to 1/8" thickness. Using a juice glass or biscuit cutter, cut into 3-4" circles. Immediately move dough circles to parchment-lined cookie sheets. If the dough begins to stick to the counter, use a pastry scraper to gently transfer the disks of dough.
  • Place approximately 1 teaspoon of filling (apricot preserves, lekvar, poppyseed filling, raspberry jam, etc) in the center of each circle. Using a pastry brush, apply well-beaten egg to the perimeter of each dough circle and immediately fold 3 sides of circle together so that the cookie becomes a triangle, and pinch corners to seal. Seal completely and firmly, using beaten egg so they do not come apart in baking. If you have trouble sealing the corners, try folding them over a bit. The final cookie should look like a triangle with the filling showing through only at the center.
  • Use the remaining beaten egg to lightly brush the top of each pastry.
  • Bake at 350 F for 12-15 minutes or until lightly golden on top but not overly browned on the bottom (lift one cookie up after 12 minutes to make sure the bottom hasn't become dark brown). Let cool slightly before serving or transferring to cooling rack.

8 -9 tablespoons fat-free buttermilk
1 tablespoon plain fat-free yogurt

  • Preheat oven to 450°F.
  • combine the flour, baking soda, cream of tartar, and salt in a large bowl. mix throughly with a fork, slightly fluffing the flour to create mild pockets of air in the mixture.
  • Add Splenda and mix again.
  • Add buttermilk (1 tbs at a time), fat free plain yogurt, vanilla and butter flavoring. SOFTLY AND GENTLY mix with a spoon and incorporating all the ingredients together until everything is mixed.
  • bake for about 15-20 minutes until the bottoms are browned (but not burnt) and they look done. (I have a convection oven so times may vary).

  • Combine flour, baking powder, baking soda, salt, cinnamon, cloves, ginger and nutmeg in medium bowl. Set aside.
  • Cream butter and Splenda in large mixing bowl.
  • Add pumpkin, eggs, and vanilla extract; beat until blended.
  • Gradually add flour mixture into pumpkin mixture at low speed until combined.
  • Stir in nuts, if using.
  • Drop using a cookie scoop or by rounded teaspoons onto ungreased baking sheets.
  • Bake for 12 to 15 minutes, or until edges are golden brown.
  • Remove to wire rack to cool completely.

1 Tbsp vanilla extract

Steps:

  • 1. Using a fork, smash the ripe bananas in a medium bowl.
  • 2. Mix in applesauce and almond milk.
  • 3. Blend in cinnamon and vanilla.
  • 4. Stir in oats and raisins, just mixing until all ingredients are well incorporated.
  • 5. Spoon onto cookie sheet by Tablespoon and bake in preheated oven at 350 degrees for 15 mins.

My personal version of a recipe I found on www.budget101.com. I wanted to do more than just have a good sugar free cookie since the starchy carbs in the flour will also jack blood sugar. This version comes out fantastic! They are more cake like than a standard crisp cookie and stay wonderfully moist in a cookie jar. Not that they will actually last long enough to worry.

1 1/2 cups rolled oats
1 cup Splenda sugar substitute
3/4 cup flour
3/4 cup almond meal
1/2 teaspoon salt
2 teaspoons baking powder
1 cup raisins
1/2 teaspoon cinnamon
1/4 teaspoon clove
1/4 teaspoon nutmeg
2/3 cup butter, melted
4 egg whites
1/2 cup light vanilla yogurt (1 single serving 4oz cup)
1 teaspoon maple flavoring

Steps:

  • Carefully measure each ingredient into layers in a 1 quart jar. Re-used glass ice tea jars work great as well. Judicious us of a slim rolled paper cone does wonders to keep the layers clean. If mix is to be shipped ingredients may be measured into a clear plastic disposable pastry bag or decorative food safe cello bag to reduce shipping weight and then carefully tied closed.
  • Be sure to attach instruction card or label with the following directions: Combine above listed ingredients (from the list of "additionally to make cookies from mix") with 1 package of "Sugar Free Oatmeal Cookie Mix". Drop by cookie scoopfuls 1" - 2" apart onto parchment lined baking sheets. Bake 10 - 15 minutes at 350oF. Cookies do not spread much so will still be rather round and cake like. Allow to cool 5 minutes on baking sheets before carefully removing to cooling racks to completely cool. Store in a cool dry place.
