8 carrots
1 8-ounce can crushed pineapple in juice (drained)
1 cup raisins (see Notes)
½ cup mayonnaise (see Notes)
pinch salt

Steps:

  • Shred carrots in food processor.
  • Add all ingredients to large mixing bowl and combine thoroughly.
  • Chill salad in refrigerator for one hour, then serve.

This Carrot Salad is quick and easy to prepare, and makes the perfect recipe to bring to a potluck. I love the addition of raisins and crunchy pecans!

2 tablespoons extra-virgin olive oil
2 tablespoons freshly squeezed lemon juice
1 teaspoon spicy brown mustard
2 teaspoons pure maple syrup ((or honey))
1/4 teaspoon fine sea salt
freshly ground black pepper
1 pound carrots (, peeled and shredded (about 4 heaping cups))
2 green onions (, chopped (light green and white parts))
1 handful fresh parsley (, chopped (about 1/4 cup packed))
1/2 cup raisins ((optional))
1/2 cup pecans (, roughly chopped (optional))

Steps:

  • In a large bowl, combine the olive oil, lemon juice, mustard, maple syrup, salt, and about 5 grinds of black pepper. Stir well.
  • Add in the shredded carrots, green onions, and parsley, and gently toss everything together, to make sure the dressing coats all of the vegetables evenly. Taste and adjust the seasoning to your liking. You can add extra lemon juice if you want a more tart flavor, or a little more salt to punch up the flavor.
  • Stir in the raisins and pecans, if using, and serve. If you don't plan on serving this salad right away, don't add the pecans because they will get softer in the fridge. Add the pecans right before serving if you make this in advance.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.

1 lb carrots
1 clove garlic (minced)
5 Tablespoon olive oil
2 Tablespoon apple cider vinegar
1 Tablespoon honey
1/2 teaspoon ground coriander
salt and black pepper (to taste)
chopped fresh parsley

Steps:

  • Peel and shred carrots using the large shredding holes on a grater. Add minced garlic to the carrots.
  • Mix all salad dressing ingredients in a small bowl and stir until well combined. Pour dressing over the salad and toss everything. Add more salt and pepper if necessary.
  • Top with chopped fresh parsley and serve cold. If you have time, you can let it sit in the fridge for 1 hour to let all the flavors meld.

1 (20 ounce) can crushed pineapple, packed in its own juice
2 (3 ounce) boxes sugar-free orange gelatin
1 1/2 stalks celery, finely chopped
2 -3 carrots, peeled and grated

Steps:

  • Make jello according to directions on the box.
  • Chill until slightly thickened.
  • Drain pineapple and add to the jello along with the grated carrots and chopped celery.
  • Mix together and chill until firm.

2 pounds carrots, sliced
1 stalk celery, chopped
1 green bell pepper, chopped
1 onion, chopped
1 (10.75 ounce) can condensed tomato soup
.3 cup vegetable oil
½ cup distilled white vinegar
⅔ cup white sugar

Steps:

  • Bring a pot of water to boil, add carrots and boil until the carrots are just tender, approximately 10 minutes. Drain well.
  • In a mixing bowl combine the celery, green pepper, carrots and onion.
  • Bring tomato soup, oil, vinegar and sugar to a boil. Stir well. Remove the mixture from the heat and let cool, 10 to 15 minutes. Pour the mixture over the vegetables, mix until all of the vegetables are coated. Marinate this salad overnight before serving.
