1 large spaghetti squash
2 boneless, skinless chicken breasts, cut into strips
2 eggs, beaten
flour
italian bread crumb
marinara sauce
shredded mozzarella cheese
grated parmesan cheese
italian seasoning, to taste
salt, to taste
pepper, to taste
oil, for frying

Steps:

  • With a sharp knife, slice the squash in half. (If the squash is too tough - puncture in several places forming a dotted line around the squash. Microwave for 3-5 minutes to soften. Allow to cool before cutting in half - following the dotted line).
  • Scoop out the seeds - brush with oil, salt, and pepper.
  • Roast face down in a preheated oven at 375˚F (190˚C) for 35-40 minutes (until a fork can easily pierce the skin).
  • Meanwhile - Slice the chicken breasts into strips. Season with salt and pepper.
  • Place flour, beaten egg, and breadcrumbs into three separate bowls.
  • Coat each strip with flour, then egg, and then roll in bread crumbs.
  • Pour oil in a cast-iron skillet to come ¼ inch up the side. Heat the oil over medium-high heat.
  • Fry the chicken strips (in batches if necessary) until golden brown on all sides and cooked through. Transfer to paper towels and remove pan from heat.
  • Once the squash has finished roasting - remove from the oven and let it set for a few minutes before turing over and pulling at it with a fork.
  • Shred the inside of each squash, being careful not to poke through the skin.
  • Pour marinara sauce over shredded squash. Top with chicken strips, then more marinara, and finish with mozzarella and parmesan cheese, and a pinch of Italian seasoning.
  • Return to the oven to bake for 10-15 minutes until the cheese has melted.
  • Enjoy!

1 spaghetti squash, halved and seeded
2 tablespoons olive oil, divided, or more as needed
1 clove garlic, diced, or more to taste
1 large red bell pepper, chopped
2 medium tomatoes, chopped
1 teaspoon dried basil
¾ cup chevre or other soft goat cheese, crumbled
salt and freshly ground black pepper to taste
3 tablespoons dry bread crumbs, or to taste
3 tablespoons butter, or to taste, cut into small cubes

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Brush the inside of the spaghetti squash with 1 tablespoon olive oil and place cut-side down on a baking sheet.
  • Bake in the preheated oven on the middle rack until squash is easily pierced with a fork, about 25 minutes.
  • Meanwhile, heat 1 tablespoon olive oil in a skillet over medium-low heat and cook garlic until fragrant, about 1 minute. Add bell pepper. Cook and stir until softened, about 3 minutes. Stir in tomatoes and basil, cover, and cook, stirring occasionally, until soft, about 10 minutes.
  • Remove spaghetti squash from oven, cool slightly, and shred the cooked squash into spaghetti-like strands. Place strands in a bowl. 1 large spaghetti squash (about 3 pounds)
Kosher salt
2 tablespoons olive oil
8 ounces sweet Italian sausage, casing removed and crumbled
1 pint cherry tomatoes, halved
2 teaspoons fresh thyme leaves, chopped
1/4 teaspoon red pepper flakes, plus more for serving, optional
2 cloves garlic, thinly sliced
1/2 cup dry white wine
1/2 cup heavy cream
One 15.5-ounce can white beans, drained and rinsed
One 5-ounce package baby spinach
2 tablespoons grated Parmesan

Steps:

  • Preheat the oven to 425 degrees F. Cut the squash in half lengthwise using a serrated knife and remove the seeds with a spoon. Brush the flesh of both halves with 1 teaspoon oil and season with 1/2 teaspoon salt and a few grinds of pepper. Put the halves flesh-side down on a baking sheet and cook until tender, the flesh can easily be flaked with a fork and the edges just turn brown, about 45 minutes. Separate the strands of squash by scraping the flesh with a fork. Leave the scraped strands inside the squash.
  • Meanwhile, heat the remaining oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon and taking care to keep some larger chunks, until it just starts to brown and crisp up, 5 to 6 minutes. Add the tomatoes, thyme, red pepper flakes and garlic and cook, stirring, until just fragrant, about 1 minute. Pour in the wine and cook until reduced by half, 2 to 3 minutes. Add the heavy cream and 1 teaspoon salt and bring to a boil. Lower the heat to medium and simmer until the sauce reduces by half, 3 to 4 minutes. Add the white beans and spinach to the skillet and cook, stirring frequently, until the spinach just wilts and is still vibrant green, 1 to 2 minutes.
  • Divide the sausage mixture between the 2 squash halves and mix with the squash strands until well combined. Sprinkle each squash half with 1 tablespoon Parmesan and serve with more red pepper flakes, if using.

Steps:

  • Preheat oven to 375˚F (190˚C).

A really good recipe, low cal, lots of veggies. And kids love it. I'll put a few variations in it as well. Everything is approximate, so hope you can cook this way!!

1 spaghetti squash
1 lb ground turkey (or veggie burger) or 1 lb ground chicken (or veggie burger)
2 -3 garlic cloves, crushed, diced
1/2 large onion, finely chopped
1/2-1 bell pepper, diced (use all colors, red, green, yellow, orange for color)
1 (28 ounce) can diced tomatoes
salt and pepper
1 teaspoon oil or 1 teaspoon cooking spray
italian seasoning mix (oregano, basil, etc)
1 cup cheddar cheese or 1 cup feta

Steps:

  • Pierce the squash along one side in a straight line. Don't poke holes all over. You are using the skin as a casserole dish and it will leak if you poke it all over.
  • Microwave the squash about 8-10 minutes, high heat. To softish stage so you can scrape the flesh out later.
  • Remove from microwave. Using the pierce marks, cut the squash in half so you have two long 'boats.' Cool.
  • Brown meat; add garlic, onion, s&p and peppers. Cook until tenderish. Add Italian spice mix and canned tomatoes. Simmer for a few minutes.
  • If you are not using meat, sauté the veggies until tender, then continue adding spices and tomatoes.
  • While it's simmering--spoon out the seedy portion of the squash and discard.
  • Use a fork to scrape the spaghetti into strands. Put the strands into the sauce mix. Stir. Transfer back into boats, piling high! If you have too much, put the remainder into a greased dish.
  • Place boats on an ovenproof pan with a lip so any juice will not drip onto oven.
  • Sprinkle cheese of choice onto top. Bake, 350°F for about 45 minutes. Enjoy!
  • You can of course use more or any veggies--add zucchini, mushrooms, etc. For a different flavor, add black olive slices, mix in 1/2 container of feta and sprinkle the remainder of feta on top. Or use parmesan on top.

2 medium spaghetti squash
16 plum tomatoes
2 teaspoons minced garlic
2 tablespoons olive oil
4 ounces basil leaves plus sprigs for garnish, cleaned
1 teaspoon salt
1/4 teaspoon freshly ground pepper
6 tablespoons grated Parmesan cheese

Steps:

  • Place both whole spaghetti squash in a large stockpot of water. Cover pot, and bring water to a boil. Reduce heat to a simmer, and cook the squash until it is slightly tender when you press it with your fingers, 20 to 30 minutes. Drain. Using a serrated knife, cut the squash in half crosswise. Stand the halves on end, with cut sides up, and set aside to cool 15 minutes.
  • Heat oven to 450 degrees. Remove the seeds from the squash halves; discard them. Using a teaspoon, scrape the flesh; it will separate into spaghetti-like strands. Transfer the strands to a large mixing bowl, and transfer the shells to a baking pan; set both aside.
  • Chop 12 of the tomatoes into 1/2-inch pieces, and add to the squash strands. Slice the remaining 4 tomatoes into 1/4-inch-thick rounds, and set aside.
  • Place the garlic, olive oil, basil leaves, salt, and pepper in the bowl of a food processor. Process until the basil has been very finely chopped, about 2 minutes.
  • Transfer the basil mixture to the mixing bowl with the squash strands and the tomato pieces; toss with vegetables to combine. Divide the mixture among the reserved squash shells, and top each shell with several tomato slices. Sprinkle 1 1/2 tablespoons Parmesan cheese over each shell.
  • Transfer the baking pan to the oven, and bake the stuffed squash until the cheese is golden and a metal skewer inserted down into the stuffing comes out hot when held there for 15 seconds, about 30 minutes. Transfer to a wire rack to cool slightly. Garnish with basil sprigs, and serve warm.

1 cup sliced button mushrooms
1 (15 ounce) can tomato sauce
½ cup sliced black olives
½ cup sliced green olives
1 tablespoon Italian seasoning
2 cups shredded mozzarella cheese

  • Preheat the oven to 400 degrees F (200 degrees C). Cover a baking sheet with foil.
  • Drizzle the squash flesh with olive oil and sprinkle with salt and pepper. Place both halves, cut-sides down, on the prepared baking sheet.

1 cup Ragú® Pasta Sauce (spicy Italian sauce)
1 large spaghetti squash
1 lb Italian sausage
2 medium zucchini, chopped- about 3 cups
1 large yellow onion, diced-about 2 cups
4 garlic cloves, minced
3 tablespoons chopped oregano, 1tsp reserved (to garnish)
4 tablespoons butter
1 cup panko Italian seasoned breadcrumbs
4 ounces goat cheese
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat Oven to 400.
  • Split clean, dry Spaghetti squash long ways and clean, removing all seeds. I like to use a large spoon for this.
  • Oil liberally with olive oil and salt and pepper to taste.
  • Place cut side down and roast 45-60 minutes until just tender enough to fluff with a fork. Time will vary depending on size of squash.
  • While squash is roasting, work on dicing vegetables and brown Italian sausage.
  • Once sausage is browned add in half of the butter and the entire onion. Cook until tender.
  • Add in garlic, zucchini, and Ragu Spicy Italian Sauce and simmer until all veggies are tender.
  • Season with chopped oregano, salt and pepper to taste.
  • Once roasted squash is tender, drag a fork from edge to edge just enough to loosen the flesh from the skin. Divide the Ragu ,mixture between the two halves. Sprinkle crumbled goat cheese evenly between the two pieces.
  • In a small bowl, melt remaining butter and add in bread crumbs. Sprinkle evenly on top of the two pieces or squash, careful to cover Ragu mixture.
  • Place back into oven and bake for 15 minutes or until the breadcrumbs are nicely golden brown.
  • Allow to cool 5 minutes. Serve and enjoy!

2 tablespoons olive oil (divided)
1 1/2 teaspoons kosher salt (divided + more to taste)
1/8 teaspoon freshly ground pepper + more to taste
1 cup diced onion (about ½ medium onion)
1 cup diced green pepper (about 1 medium pepper)
1/2 teaspoon dried oregano
2 teaspoons minced garlic (about 2 small cloves)
2 tablespoons chili powder
1 tablespoon cumin
1/4 teaspoon cayenne pepper (more or less to taste)
1 28-ounce can crushed tomatoes in tomato puree
1 14.5 ounce can fire-roasted diced tomatoes (plain diced tomatoes work too)
1 15-ounce can kidney beans, drained and rinsed (or about 1 3/4 cups cooked beans)
1 15-ounce can black beans, drained and rinsed (or about 1 3/4 cups cooked beans)
2 cups shredded sharp cheddar cheese (8 ounces)

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Line one large or two medium rimmed cookie sheets with parchment paper or foil.
  • Lop off the top of the spaghetti squash and cut it in half lengthwise. With a spoon, scrape out the seeds. Brush the cut side of each half with 1 tablespoon olive oil. Dust with 1/2 teaspoon salt and 1/8 teaspoon pepper. Place cut-side down on cookie sheet(s) and bake until tender and the squash can easily be pierced with a fork, about 40 minutes. You can also microwave the spaghetti squash if you need dinner on the table faster. Steps:

  • Brush the inner flesh of the spaghetti squash with oil, season with salt and pepper and roast, skin side up, in a preheated 400F oven until tender, about 30 minutes. 1 2 1/2- to 3-pound spaghetti squash, halved lengthwise and seeded
1 1/4 cup red enchilada sauce, divided (hatch flavor for lowest sodium)
1 zucchini, diced
1 cup pepper Jack cheese, shredded

Steps:

  • 1. Position racks in upper and lower thirds of oven, preheat to 450
  • 2. Boil chicken. Cover, reduce heat to low and gently simmer until internal temperature 165, 10 to 15 minutes. Shred and transfer to large bowl.
  • 3. Microwave squash cut side down with 2 tbsp of water for 10 minutes until flesh is tender. (alt. bake at 400 degrees for 40-50 minutes)
  • 4. Scrape squash from shell and add to chicken. Add 1 c enchilada sauce, zucchini, 1/2 tsp pepper and 1/4 tsp salt. Fill squash shells with mixture and top with remaining sauce and cheese.
  • 5. Place on lowest rack for 10 minutes. Move to upper rack and broil until cheese starts to brown. To serve cut each shell in half.

Steps:

  • Heat oven to 400°F. Line rimmed baking pan with foil.
  • Cut squash in half lengthwise; remove seeds, and brush insides with oil and season with salt and pepper. Place cut sides down in pan. Roast 35 to 40 minutes or until squash is tender. When squash is cool enough to handle, scoop flesh into bowl, and reserve squash shells on lined pan.

Chicken and Broccoli Stuffed Spaghetti Squash image

1 Spaghetti Squash
1 Chicken Breast
2 teaspoon Olive Oil
1/4 cup Shallot
1 clove Garlic
1/2 teaspoon Red Pepper Flake
2 cup Broccoli
1 ounce Cream Cheese
1/2 cup Mozzarella Cheese
1/4 cup Chicken Broth
1/2 cup Sharp Cheddar Cheese
1/4 cup Non-Fat Greek Yogurt
1 pinch Salt and Pepper

Steps:

  • INSTRUCTIONS Spaghetti Squash Preheat oven to 400 degrees and line a baking sheet with foil. Cut the spaghetti squash in half and scoop out the seeds. Rub or spray the interior with oil and season with kosher salt and black pepper. Place the halves cut side down on the baking sheet and roast in the oven for approximately 40 minutes or until a knife can be inserted in the flesh easily. Remove from the oven and let the squash cool until it can be handled. Using a fork scoop out the flesh in long strands and put them in a bowl. Place the skin/shell back on the baking sheet and set aside. Chicken and Broccoli Filling Preheat oven to broil. Spray a large non-stick skillet with oil and heat over medium high heat. When the skillet is hot add in the chicken, season with salt and pepper and sauté until cooked through. Remove the chicken from the skillet onto a plate. Turn the heat down to medium and add a couple teaspoons of olive oil to the skillet. Swirl the oil to coat the bottom of the skillet then add in the shallot, garlic and red pepper flakes. Sauté for about a minute then add in the broccoli florets. Season with salt and pepper then add in a couple tablespoons of water and cover with a lid. Let the broccoli steam for about 2 minutes, then uncover and add the chicken back in. Add in the cream cheese and chicken broth and stir everything until smooth and a sauce starts to form. Add in half of the shredded cheese and stir until melted. Remove from the heat and stir in the Greek yogurt until combined. Taste for seasoning then pour the filling into the bowl with the spaghetti squash strands and stir together until combined. Divide the filling evenly into the spaghetti squash shells and top with the remaining shredded cheese. Broil in the oven until the cheese is melted then serve.
