When I moved to Nebraska, I discovered many ethnic foods that I had never heard of before. A friend introduced me to this runza recipe, a German-Russian beef sandwich, and it quickly became a family favorite. -Dolly Croghan, Mead, Nebraska

4-1/2 cups all-purpose flour, divided
1/4 cup sugar
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
3/4 cup 2% milk
1/2 cup water
1/2 cup shortening
2 large eggs, room temperature
FILLING:
2 pounds lean ground beef (90% lean)
2 medium onions, chopped
4 cups chopped cabbage
2 teaspoons seasoned salt
1 teaspoon garlic powder
1 teaspoon pepper

Steps:

  • Place 1-3/4 cups flour, sugar, yeast and salt in a large bowl. Heat the milk, water and shortening to 120°-130°. Pour over flour mixture; add the eggs. Beat with an electric mixer on low speed until blended. Beat 3 additional minutes on high. Stir in the remaining flour; knead until smooth and elastic, 6-8 minutes., Place dough in a greased bowl; cover and let rise in a warm place until doubled, about 1 hour., Meanwhile, in a large skillet, cook beef and onions over medium heat until meat is no longer pink; drain. Add the cabbage, seasoned salt, garlic powder and pepper; cook until cabbage is wilted., Punch dough down; divide into 12 portions and cover. Working with 1 piece at a time, roll into a 6-in. square. Place 3/4 cup meat mixture in the center of each square. Fold dough over filling, forming a rectangle. Pinch edges tightly to seal and place on greased baking sheets., Bake at 350° for 18-20 minutes or until golden brown. Serve hot.

1/2 cup chopped onion
1 can (15 ounces) tomato sauce
1 can (4 ounces) chopped green chiles
1/2 cup chopped fresh mushrooms
2 tablespoons chili powder
2 tablespoons sliced ripe olives
1/4 teaspoon garlic salt
1 cup shredded cheddar cheese
8 sourdough rolls

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the tomato sauce, chilies, mushrooms, chili powder, olives and garlic salt. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until heated through. Add cheese; cook and stir until melted. , Cut 1/4 in. off the top of each roll; set aside. 1/2 pound bacon
1 pound fresh spinach, stems removed, soaked in salt water to remove grit, and dried
2 avocados, slipped from skin and sliced
2 tablespoons balsamic vinegar
1 pomegranate, peeled and seeds removed from pith
1 tablespoon honey
1/2 teaspoon salt
1/8 teaspoon ground black pepper
3/4 cup olive oil
3 to 4 liters canola oil, as needed, for deep-frying
1 1/2 cups all-purpose flour
3/4 cup cornstarch
4 1/2 teaspoons baking powder
1 1/2 cups seltzer water
4 frozen, store-bought, stuffed sandwiches, sliced on the bias

Steps:

  • For the salad: Boil eggs for about 10 minutes until they are hard-boiled. Rinse with cold water and set aside until cool enough to handle. Peel hard-boiled eggs and chill.
  • Fry bacon and drain on paper towels.
  • For the vinaigrette: Through the feed opening of a running blender add, 1 at a time, the vinegar, pomegranate seeds, honey, salt and pepper. Leaving the blender running, add the olive oil in a slow, thin stream. Strain through a fine mesh strainer and set aside until needed.
  • For the tempura and sandwiches: Heat oil in a deep-fryer to 375 degrees F, or as directed in manufacturer's instructions for similar foods.
  • In a mixing bowl large enough to accommodate the stuffed sandwiches, combine flour, cornstarch, and baking powder. Add seltzer water in a stream while whisking constantly. Dip the stuffed sandwiches in the batter to coat. Add, 1 at a time, to the deep-fryer basket which has been immersed in the hot oil. Fry until golden brown and drain on paper towels.
  • Chop eggs and gently toss with spinach, crumbled bacon, and avocado with enough of the dressing to coat.
  • Arrange salad on plates with tempura fried stuffed sandwiches.

1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 1/2 cups flour
3/4 teaspoons baking soda
1/4 teaspoon salt
1/2 cup peanut butter
Grape jelly ice cream, recipe follows
1 quart vanilla ice cream
1/2 cup grape jelly

Steps:

  • Preheat oven to 400 degrees.
  • Cream the butter well in a mixer with a paddle attachment. Add the sugars and continue to mix well. Add the egg and vanilla and mix well. Sift the flour with the baking soda and the salt then add it to the mixer and blend. Add the peanut butter and mix well. Roll into 1/2-inch balls and place on a greased sheet pan 1-inch apart. Press a fork down on the surface lengthwise then crosswise to make a grid pattern. Bake for 5 to 8 minutes at 400 degrees until light golden brown. Let cool on the pan.
  • Place a small scoop of grape jelly ice cream on the bottom (flat) side of a cookie and top with another cookie to make a sandwich. Place in the freezer and repeat with the remaining cookies.
  • Fold grape jelly into vanilla ice cream, leaving some streaks of jelly. Freeze until ready to use in the sandwiches.

6 hard-boiled eggs, cooled and shelled
2 cups watercress, trimmed and chopped
1/4 cup minced red onion
2 tablespoons cream cheese, softened
2 tablespoons light mayonnaise
1 tablespoon Dijon mustard
1/4 teaspoon curry, poweder
1 pinch cayenne pepper

Steps:

  • Cit the baguette in half crosswise, then cut off the ends. Using a wooden spoon, push the bread out from inside to hollow our each half, leaving 1/2" thick walls. Reserve the crumbs for another use.
  • Mince the eggs, stir in watercress, cream cheese, mayonnaise, mustard, salt, pepper, curry powder and cayenne.
  • Holding each half of cut baguette on end, pack filling into bread shells with wooden spoon. Cut 3/4 of the way through each baguette at 1" intervals, so that guests can pull off individual sandwiches. Wrap tightly in plastic wrap and keep chilled until serving.

Nonstick cooking spray, for the baking sheet
24 chocolate sandwich cookies, such as Oreos
Two 16.5-ounce packages chocolate chip cookie dough, at room temperature
One 18.3-ounce box brownie mix (plus required ingredients)
24 vanilla sandwich cookies, such as Golden Oreos
4 cups (1 quart) vanilla ice cream, softened

Steps:

  • Preheat the oven to 375 degrees F. Line an 18-by-13-inch rimmed baking sheet with foil, leaving a 2-inch overhang on at least two sides. Coat with cooking spray.
  • Arrange the chocolate sandwich cookies on half of the baking sheet in 6 rows, with 4 cookies per row. Cover the chocolate sandwich cookies with the cookie dough: pressing and spreading the dough into and over the cookies to make one giant chocolate chip cookie that covers half of the baking sheet.
  • Prepare the brownie batter according to package directions. Pour the batter into the empty half of the pan. Arrange the vanilla sandwich cookies on top of the brownie batter in 6 rows, with 4 cookies per row Press the cookies into the batter.

  • Using a warm serrated knife, trim the rough edges of the giant cookie so it is an even rectangle (about 12-by-16-inches). Cut it in half crosswise so you have one brownie half and one chocolate chip cookie half (each 8-by-12-inches). Lay the chocolate chip cookie piece on the prepared baking sheet so the chocolate sandwich cookies are facing up. Working quickly, spread the ice cream across the cookie all the way to the edges. Smooth out the top and sides. Place the brownie half, with the chocolate cookies facing down, on top of the ice cream and gently press to adhere. Fold the plastic wrap around the assembled ice cream sandwich to help hold its shape and freeze until hardened, at least 6 hours and up to overnight. 4 large eggs, beaten
Warm 1/4 cup half-and-half
1/4 teaspoon grated nutmeg or ground -- eyeball it
1/2 teaspoon coarse ground black pepper -- eyeball it
2 tablespoons butter
8 thick cut sliced whole-grain soft bread, white, or challah
1/2 cup brown mustard
1/2 cup whole berry cranberry sauce
1/2 pound sliced havarti cheese
1 pound sliced ham
1 pound sliced turkey breast
1 1/2 cups medium to dark amber maple syrup

Steps:

  • Heat a griddle pan or large skillet over medium high heat. Cook bacon and remove to paper towels to drain, 5 minutes. Drain off fat. Reheat griddle over medium heat. Make sandwiches in 2 batches.
  • Beat eggs with half-and-half, nutmeg and pepper. Add 1 tablespoon butter to the griddle or pan and melt. Turn 4 slices bread in batter, then add to griddle or pan. Turn bread after it browns, 2 to 3 minutes. Top 2 bread slices with mustard, the other 2 with cranberry sauce. Add 2 slices of cheese and bacon on the cranberry covered bread. Add ham, then turkey to the mustard covered bread. Use a spatula to assemble 2 sandwiches and turn and press gently to set sandwiches in place. Repeat to make 2 more sandwiches. Cut sandwiches from corner to corner.
  • Heat syrup in microwave safe container for 30 seconds. Drizzle syrup over sandwiches at the table.

3 -4 medium potatoes, peeled and roughly chopped
1 onion
2 carrots
1/2 tablespoon garam masala
1 tablespoon black pepper

Steps:

  • Boil the potatoes.
  • Cut the remaining vegetables finely.
  • Take the boiled potatoes and mash them with the other vegetables well.
  • Add all the ingredients mentioned under the heading"masalas".
  • Mix well using your palm.
  • Take 2 bread slices and cut their sides.
  • Apply some butter or margarine on both.
  • Put the above prepared mixture on one bread slice.
  • Cover with the other slice.
  • Now toast it in the bread toaster if you desire or munch on right away!

This recipe is from Secrets of Fat Free Cooking by Sandra Woodruff. Layer turkey, spinach leaves, pepper strips, and artichoke hearts over cream cheese on French bread, and create a memorable appetizer. It is a great dish to take to any gathering. Best if made ahead and allowed to chill for several hours or overnight. I have made it (not so low-fat) using onion and chive flavored cream cheese and I have also made it by adding 1/2 teaspoon of ranch dressing mix to the cream cheese instead of Italian seasoning. You can also use marinated arthichoke instead of canned. Delicious!

1 loaf French bread (about 24 X 2 inches)
2/3 cup low-fat cream cheese, softened
1/2 teaspoon italian seasoning
3/4 teaspoon garlic, crushed
4 ounces turkey, thinly sliced
10 -12 fresh spinach leaves
1/2 red bell pepper, thinly sliced
1/2 cup artichoke heart, chopped

Steps:

  • Slice French bread lengthwise cutting off the top third of the loaf. Using your fingers, remove and discard enough of the soft inner bread to leave a 1/2-inch-thick shell.
  • Combine cream cheese, Italian seasoning and garlic in a small bowl and stir to mix well. Spread half of this mixture evenly over the inside of the bottom shell.
  • Roll up turkey slices and arrange them in an even layer on the cream cheese.
  • Lay spinach leaves over the turkey.
  • Put a layer of red pepper strips over the spinach leaves.
  • Put a layer of arthichoke hearts over the red pepper strips.
  • Spread remaining cream cheese over the inside of the top shell.
  • Place the top shell over the bottom shell to reform the loaf. Wrap the loaf tightly with aluminum foil or plastic wrap.
  • Chill for several hours or overnight.
  • When ready to serve, unwrap the loaf, and using a serrated knife, cut the loaf diagonally into 1-inch slices. Secure each piece with a wooden toothpick and arrange on a platter and serve.

I love making these sandwiches for my family, I usually make a ham and cheese with a brown mustard or a pizza one you can be very creative.

1 package(s) frozen bread dough
1 cup(s) your favorite pizza sauce
2 cup(s) grated chees mozzarella and jack
- genova salami
- pepperoni

Steps:

  • let dough defrost overnight. then add some flour to cutting board cut open bread and knead it out some make it look like and open bread loaf
  • brush pizza sauce less on edges and more in the middle but don't make it soggy
  • Add cheese's and pepperoni and salami close and pinch closed all around the edges you are going to have to work with it to make sure it closes well it should look like a regular uncooked bread loaf. brush with olive oil and bake at 350 for about an hour or so when you see the bread is cooked take it out and let it rest for about 15 min before cutting into it. Enjoy

Stuffed Sauteed Sandwiches, Two Ways image

Yield 2 kids servings and 2 adult servings

4 slices turkey bacon, for the kids
Mesclun salad dressed with vinaigrette, for the adults
8 slices quality whole wheat bread
1/3 cup peanut butter, for kids
2 tablespoons plumped up raisins, dried cranberries or sliced bananas, for kids
Slices of fresh mozzarella, for adults
Anchovies, capers and torn basil, for adults
3 to 4 eggs, lightly beaten
2 tablespoons butter
2 tablespoons olive oil
1 clove garlic

Steps:

  • Preheat the oven to 375 degrees. Lay uncooked bacon on a baking sheet and bake until crisp. Get the salad ready for the adults.
  • Meanwhile for the kids, remove the crusts from half of the bread and spread the bread with some peanut butter and top with either raisins, cranberries or slices of banana. You'll have 2 closed sandwiches which you should then cut into squares or triangles to create smaller bite sized pieces.
  • For the adults, layer their bread with mozzarella and top with anchovies or capers and basil.
  • Heat two skillets until warm, one with butter for the kids portion, the other with olive oil for the adults. Gently cook some garlic in the adult's portion as the oil is heating up.
  • Dip the adults and kids sandwiches in the egg and let it soak up. Saute the kids portion in butter and the adults in olive oil; saute until crisp and warm; drain briefly on paper towels.
  • Serve kids stuffed sandwiches with bacon and adults with salad.

4-1/2 cups all-purpose flour, divided
1/4 cup sugar
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
3/4 cup milk
1/2 cup water
1/2 cup shortening
2 eggs
FILLING:
2 pounds lean ground beef (90% lean)
2 medium onions, chopped
4 cups chopped cabbage
2 teaspoons seasoned salt
1 teaspoon garlic powder
1 teaspoon pepper

Steps:

  • Place 1-3/4 cups flour, sugar, yeast and salt in a large bowl. Heat the milk, water and shortening to 120°-130°. Pour over flour mixture; add the eggs. Beat with an electric mixer on low speed until blended. Beat 3 additional minutes on high. Stir in the remaining flour; knead until smooth and elastic, about 6-8 minutes.
  • Place dough in a greased bowl; cover and let rise in a warm place until doubled, about 1 hour.
  • Meanwhile, in a large skillet, cook beef and onions over medium heat until meat is no longer pink; drain. Add the cabbage, seasoned salt, garlic powder and pepper; cook until cabbage is wilted.
  • Punch dough down; divide into 12 portions and cover with plastic wrap. Working with one piece at a time, roll into a 6-in. square. Place 3/4 cup meat mixture in the center of each square. Fold dough over filling, forming a rectangle. Pinch edges tightly to seal and place on greased baking sheets.
  • Bake at 350° for 18-20 minutes or until golden brown. Serve hot. Yield: 12 servings.
