Number Of Ingredients 10

1 lb. ground beef, divided into 8 portions
3 jalapeño peppers
1 oz. PHILADELPHIA Cream Cheese, softened
7 slices KRAFT Big Slice Colby Jack Cheese Slice
11 slices OSCAR MAYER Fully Cooked Thick Cut Bacon
1 tablespoon KRAFT Chipotle Aioli
4 hamburger buns or rolls
lettuce
tomato slices
onion slices

Steps:

  • Remove seeds from jalapenos, cut up and sauté for 5 minutes; set aside.
  • Finely chop three slices of KRAFT Big Slice Colby Jack Cheese and mix with the cream cheese.
  • Add jalapenos and three slices chopped bacon. Mix well and set aside.
  • Form the eight burger portions into thin patties. Make sure they are similar in size.
  • Distribute the jalapeno cheese mixture evenly over four burger patties. Use the remaining patties as tops. Mold together, making sure the edges are crimped tight.
  • Cook on a hot grill. Make sure you don't flip them over too much. Try to cook one side completely before turning. When burgers are about ready, add another slice of Colby Jack cheese on top and let melt.
  • Garnish burger with lettuce, tomato, onion, 2 slices of bacon and aioli.
  • Note: Don't worry if a little stuffing escapes during the cooking process.

4 jalapenos
4 ounces cream cheese, softened to room temperature
1 1/2 pounds ground beef (preferable 80/20 blend)
Kosher salt
8 strips thick-cut bacon, cooked until crispy
4 slices cheddar cheese
4 hamburger buns
1 avocado, sliced
for the Avocado-Jalapeno Ranch Dressing
1 avocado
1/2 cup ranch dressing

Steps:

  • Heat grill to medium-high heat. Grill jalapenos, turning as needed, until they are charred and blistered all over, about 7-8 minutes. Place jalapenos in a bowl and cover with plastic wrap for about 10 minutes to loosen skins. Peel off skin, cut in half, and remove seeds from jalapenos.
  • Chop roasted jalapenos and add half of them to the cream cheese (reserve rest for dressing). Mix well to combine.
  • Divide and form the beef into 8 equal pattties. Place 1/4 of the jalapeno - cream cheese mixture onto 4 of the patties, and then top with the remaining 4 plain patties. Completely pinch sides closed to seal in the mixture and reform patties.
  • Season generously with Kosher salt.
  • Grill burgers over medium-high heat with grill-lid closed until cooked to desired doneness, about 3-6 minutes per side (brushing the grill first with a little bit of oil will prevent burgers from sticking). During the last minute of cooking, top each burger with cheddar cheese slice.
  • Assemble burgers on buns with bacon, avocado slices, and the avocado-jalapeno ranch dressing. Devour immediately.
  • Combine 1 avocado with ranch dressing in a food processor until smooth. Stir in remaining roasted jalapenos.

One of my favorite recipes! I love jalapenos and make these when nothing else hits the spot. Topped with sour cream or ranch dressing and chopped fresh chives, this is a great appetizer or snack. Serve with homemade sangria. Also great on the grill.

12 slices hickory-smoked bacon, cut in half crosswise
12 large jalapeno peppers, halved lengthwise and seeded
1 (6 ounce) tub whipped cream cheese at room temperature
6 ounces shredded Cheddar cheese
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Place bacon in a skillet over medium heat, working in batches, and cook until bacon is translucent and still flexible, about 2 minutes per side. Set bacon aside.
  • Trim membranes from jalapeno pepper halves to reduce heat. Rinse peppers and set aside.
  • Place whipped cream cheese and Cheddar cheese into a bowl and mix until well blended; stir in Worcestershire sauce. Spoon cheese mixture into a pastry bag fitted with a large tip. Pipe the cheese filling generously into the pepper halves. Top each filled pepper with a precooked bacon strip and arrange onto prepared baking sheet.
  • Bake in the preheated oven until cheese filling is bubbling and the bacon strips are lightly browned, 8 to 14 minutes. Serve hot.

Bacon, Onion and Cheese Stuffed Burger image

1 1/2 pounds ground beef
1 clove garlic, minced
1 teaspoon hot sauce (recommended: Frank's Red Hot)
Salt and freshly ground black pepper
4 strips bacon, diced
1/2 onion, chopped
1 cup grated sharp Cheddar
4 burger buns
Lettuce, tomato, pickles for garnish

Steps:

  • Preheat grill to medium.
  • In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.
