CRAB STUFFED HADDOCK

An awesome meal for anytime, and especially impressive to guests yet so simple to make. Haddock fillets are stuffed with a crab and cheese stuffing then baked. A must try - it will be a keeper. Great with salad and rice or potato! Enjoy.

3 tablespoons olive oil
1 stalk celery, finely chopped
3 green onions, finely chopped
1 teaspoon minced garlic
1 (6 ounce) can lump crabmeat, drained
3 slices dry white bread, crusts removed and cubed
¼ teaspoon salt
¼ teaspoon ground black pepper
1 egg, beaten
½ cup grated Romano cheese
2 tablespoons lemon juice
1 tomato, seeded and diced
⅛ teaspoon ground black pepper
5 tablespoons butter, melted
6 (4 ounce) haddock fillets

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • Heat olive oil in a skillet over medium heat. Add celery, green onion and garlic, and cook and stir for a few minutes until soft. Remove from heat, and stir in the crabmeat, bread cubes, egg, Romano cheese, lemon juice, and tomato. Season with salt and 1/4 teaspoon of pepper, and mix until well blended.
  • Lay the haddock fillets in the prepared baking dish. Brush each one with melted butter. Place a heaping tablespoon of the crab mixture onto half of each fillet, and fold the other half over to cover. Secure with toothpicks if desired. Sprinkle on any remaining stuffing, and drizzle with any leftover melted butter. Cover the dish with a lid or aluminum foil. (The dish may be also made ahead of time and refrigerated at this point.)
  • Bake for 20 minutes in the preheated oven, then remove the cover and bake for an additional 10 minutes, until the top has browned and the fish flakes easily with a fork.

1 tablespoon chopped onion
1 tablespoon butter
5 butter-flavored crackers, crushed
1 haddock, sole or cod fillet (about 1 pound)
1/3 cup condensed cream of celery soup, undiluted
1 tablespoon sour cream
Paprika

Steps:

  • Preheat oven to 350°. In a skillet, saute onion in butter until tender. Stir in crackers and enough water to hold mixture together. Cut a pocket into side of fillet; stuff with cracker mixture. , Place in a greased baking dish. Combine soup and sour cream; spread over fish. Sprinkle with paprika. Bake, uncovered, 25-30 minutes or until fish flakes easily with a fork.

I was given this recipe at least 30 years ago and have yet to find anyone that doesn't love it. (Providing they like seafood) I always use haddock as I'm from Maine. Fresh is expensive right now but as far as I'm concerned there's no better tasting white fish. Can use frozen haddock or another white fish . Simple to make but soooo yummy...Don't worry about the mayo..I Promise you will not taste it.

2 -3 tablespoons mayonnaise
2 lbs haddock fillets (preferably. Can use another white fish like Cod, etc.)
1/2 cup plain breadcrumbs
1 teaspoon ground sage
1 tablespoon parsley flakes
1 -2 garlic cloves, crushed or 2 -3 good pinches garlic powder
1/2 teaspoon salt (optional)
1 teaspoon Bell's seasoning
15 Ritz crackers, crushed
6 tablespoons butter, melted (can use a little more or less)

Steps:

  • Heat oven to 350 degrees.
  • Rinse and pat dry the filets.
  • Lay in single layer in baking dish.
  • Spread a thin layer of mayonnaise over fish (I put it on a little thicker. You will not taste it).
  • In small bowl, combine bread crumbs with next 5 ingredients.
  • Sprinkle evenly over fish.
  • Top with crushed Ritz Crackers.
  • Bake 5 minutes.
  • Remove from oven and pour melted butter over crackers.
  • Return to oven, bake 15 more minutes or until filets flake.
  • Try not to overcook
  • (Total bake time about 20 minutes).

Talk about delicious? Try this... I make this when I want something extra delicious for company... This recipe works well with ANY white fish...I don't care what you use... Great on fresh water fish, as well as ocean fish... It would also be good with Salmon or Swordfish too!

2 lbs haddock fillets or 2 lbs other white fish, of your choice
1 -2 lemon, juice of
butter
36 Ritz crackers (1 sleeve)
1 (6 ounce) can crabmeat
1/2 cup butter, melted

Steps:

  • Lay your fish filets out in a lg. casserole dish, or a 9x13" baking pan.
  • Squirt with fresh lemon juice, and dot with pats of butter.
  • Take the sleeve of Ritz crackers and crush finely in a bowl.
  • Add crabmeat to it, and mix well.
  • Add 1 stick of melted butter to it, and mix well.
  • Spread a 1" thick layer over your fish fillets.
  • Put in a preheated 350 oven, and bake for 20-25 mins., or until fish is no longer opague in the middle.
  • Serve with fresh lemon squirted on top.

Crab-Stuffed Haddock Recipe - (4/5) image

4 - 4 oz haddock fillets, cut 1" thick ( we used Halibut)
6 oz can white crab meat, drained
4 The Laughing Cow Light Garlic and Herb Wedges
1/2 cup whole wheat bread crumbs ( I could not find any, so I used Italian bread crumbs)
Pinch red pepper flakes
Paprika, sea salt and ground pepper, to taste

Steps:

  • Preheat your oven to 375 degrees. Coat a baking sheet with olive oil cooking spray. Cut fish fillets in half, lengthwise, but leave the outer edge connected. Open the fish and season the inside with the salt and pepper. Stir together the crab, cheese wedges, bread crumbs and red pepper flakes. Spread equal amounts of mixture inside each fish fillet. Fold the top of fillets over the crab mixture and sprinkle with paprika. Bake for 15 minutes or until fish is cooked through.

Number Of Ingredients 6

Per person:
Flat piece of haddock to roll - the fishmonger can cut off the thick part - get one piece per person.
3-4 pieces of peeled shrimp
1/4 cup Seafood stuffing
1 Tablespoon butter
a little milk or Campbell's Shrimp Soup

Steps:

  • 1. Spray Pam in a glass baking pyrex dish. 2. Get out a flat plate. 3. Rinse off filet and place on plate. 4. Put 1/2 of stuffing and 2-3 pieces of shrimp on the filet. 5. Carefully roll it up and place it in the baking dish, seam side down. 6. Repeat process for however many filets/people you are serving. 7. Shake a little salt and pepper on the fish. I add a little bit (1/4") of milk to bottom of dish to prevent fish from drying out, but Bob likes to put undiluted Campbell's Shrimp soup over the top of the fish. 8. Add the remainder of the shrimp and stuffing on top of the filets (or not--your choice). Dot with butter. 9. Bake at 350-375 degrees for around 30 minutes, so that it is heated through. Room temperature fish works best at start. 10. Use a spatula to get it carefully out of dish. 11. Serve with hollandaise sauce or shrimp soup sauce.

I love baked stuffed scrod, cod, haddock - whatever you want to call it. This is one of my favorites done at home that I developed. What makes it different is the stuffing recipe I came up with to go with this fish recipe that can be found on this site "Recipe #511850"

2 -3 haddock, filets (or fresh cod. mild fish preferred. Fish should be boned. Skinned if preferred. Refer to Note below)
2 tablespoons extra virgin olive oil
salt (kosher or sea salt preferred)
black pepper
garlic powder
prepared stuffing (ForeverMama's Stuffing for Fish, Shrimp or Mushrooms)

Steps:

  • Preheat oven to 350 degrees F.
  • Cover the bottom of a pyrex casserole dish with olive oil and chopped onion. Salt and pepper the fish on both sides to taste.
  • Season skinless side of fish with sprinkling of garlic powder. Pile stuffing "Recipe #511850" over fish evenly, pressing stuffing mixture carefully to adhere.
  • Place casserole into hot oven and bake for 15 minutes, being careful not to over-bake so it won't be dry. Pronto, it is ready to serve.

CRANBERRY STUFFED HADDOCK

This recipe came from my cookbook "Crazed for Cranberries" very tasty.

2 1/2 lb haddock fillets
1/2 c chopped onion
1 Tbsp canola oil
1 Tbsp lemon juice
1 c cranberries
1/2 c packed brown sugar
1/2 c orange juice
1/4 tsp salt
2 Tbsp minced parsley
2 c cooked white or brown rice
1 egg, beaten
1 tsp canola oil
1 tsp paprika

Steps:

  • 1. Spray a large casserole with nonstick oil. Place half the fillets on bottom of casserole.
  • 2. Saute' onion in oil. Add lemon juice, cranberries, sugar, orange juice and salt. Simmer for 25 minutes.
  • 3. Preheat oven to 350 degrees F. In mixing bowl combine cranberry sauce with parsley, cooked rice and beaten egg. Spread mixture over haddock fillets. Place remaining fillets over cranberry mixture. Brush with oil, sprinkle with paprika. Bake 35 minutes.

1 box Kraft Stove Top Stuffing (herb)
2 cups clam juice
1/2 pound med size shrimp
1/2 pound bay scallops
2 eggs
2 lb haddock
1 cup bread crumbs
8-10 slices provolone cheese

Steps:

  • Preheat oven to 350°F. Make Stove Top Stuffing as the box says but instead of adding water use clam juice. When stuffing is done stir in peeled shrimp and scallops. Cover and set aside.
  • Beat eggs and roll haddock in egg then bread crumbs. Put half of haddock in 9x13 baking dish covering the bottom. Top with stuffing and cover with provolone cheese. Put remaining haddock on top.
  • Bake for 50-60 minutes.
