I thought about it, and concluded that the cilantro would make a refreshing stuffing for the drumsticks I picked up at the store that day. 8 chicken legs - with skin
for the stuffing:
juice of 1 lime
1 cup cilantro or italian parsley
2 garlic cloves
1 tsp. sugar
½ tsp. cumin
½ tsp. turmeric
½ tsp. black pepper
½ tsp. salt
½ tsp. coriander
3 tbs. olive oil

Steps:

  • 1. Place all of the above in a food processor and give a few good chops. Preheat Oven 375 degrees. Gently pull the skin from the leg back and stuff the mixture into under the skin. Place the legs in a baking dish and bake for 45 - 50 minutes or until a beautiful golden color appears and the juices run clear.

1 tablespoon(s) butter
3 clove(s) garlic minced
3 tablespoon(s) parsley chopped
1/2 cup(s) ricotta cheese full fat
4 tablespoon(s) parmigiano-reggiano shredded
3 tablespoon(s) bread crumbs
salt and pepper
lemon slices
8 large chicken drumsticks

Steps:

  • Melt the butter in a small saucepan. Add the garlic and cook for 1 minute. Remove from heat and stir in the parsley, cheeses, and bread crumbs. Mix well.
  • Spray a baking pan. Preheat oven 375 degrees. Carefully pull the skin back on each side of drumsticks and carefully with a small spoon stuff some cheese filling on both sides and place in the baking pan.
  • Continue until all the drumsticks are stuffed. Season with salt and pepper. Place a lemon slice on each piece. Bake for about 45 minutes.

2 lbs chicken drumsticks
1 lb prawns, cooked
2 teaspoons cornstarch
1 teaspoon sugar
1/2 teaspoon salt
pepper
2 eggs
3 tablespoons milk
2 tablespoons sesame seeds
2 cups breadcrumbs
oil (for deep frying)

Steps:

  • Skin the chicken legs making sure to leave the meat intact.
  • Using a small sharp knife, scape the flesh from the bone up toward the top of the leg. Pull the meat over the knuckle so as to form a cup ready for stuffing.
  • Shell and devein the prawns. Chop prawns into small dice and mix with the cornstarch, sugar, salt and a grind of pepper.
  • Stuff the cups of the meat with the prawn mixture.
  • Combine the eggs and milk.
  • Combine the breadcrumbs with the seseme seeds.
  • Dip stuffed legs into the egg milk mix and then into the breadcrumbs, do this twice.
  • Heat oil in deep pan at medium heat. place chicken iinto oil and cook till golden brown.
  • Drain on kitchen paper.
  • Serve with salad or rice.
