1/4 cup whole milk
1 large egg, lightly beaten
2 tablespoons sugar
2 tablespoons butter, melted
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon vanilla extract
TOPPING:
1/4 cup chopped pecans
1/4 cup packed brown sugar
1 tablespoon all-purpose flour
1 tablespoon butter, melted

Steps:

  • In a large bow, combine the first eight ingredients. Spoon into a greased 3-cup baking dish. Combine the topping ingredients; sprinkle over potato mixture. Bake, uncovered, at 350° for 30-35 minutes or until a thermometer inserted in the center reads 160°.

12 large sweet potatoes
3/4 cup (11/2 sticks) unsalted butter, at room temperature
3/4 cup light brown sugar
3/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup toasted pecan pieces
1 cup miniature marshmallows

Steps:

  • Preheat the oven to 400 degrees F.
  • Wash the sweet potatoes, scrubbing them well to remove any dirt. With a fork, prick the sweet potatoes in a couple of spots and place them on a sheet pan. Bake for about 45 minutes, or until a knife inserted in the center goes in easily.
  • In a large bowl, mix the butter, brown sugar, and flour together until it's crumbly-looking. Add the cinnamon, salt, pecans, and marshmallows; fold the streusel topping together to combine.
  • Slice the sweet potatoes lengthwise down the center and push the ends towards the middle so it opens up. Stuff the sweet potatoes generously with the streusel topping and return to the oven. Bake for another 20 minutes, or until the topping is bubbly and brown.

Steps:

  • Preheat oven to 400°F. Pierce sweet potatoes with fork. Place on rimmed baking sheet or in roasting pan and bake until almost soft, about 40 minutes. Add bananas to roasting pan alongside sweet potatoes and bake until banana skins brown, about 10 minutes. Let sweet potatoes and bananas stand at room temperature until cool enough to handle, about 15 minutes (maintain oven temperature). Cut sweet potatoes in half. 3 1/2 lbs medium sweet potatoes, peeled
3/4 cup maple syrup (divided use)
1/3 cup orange juice
1/4 cup unsalted butter (divided use)
1/4 cup all-purpose flour
3 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
1/3 cup chopped pecans

Steps:

  • Heat the oven to 325 degrees Farenheit, and lightly grease a 1 1/2 quart baking dish or casserole.
  • Cook the potatoes in a large pot of boiling water for about 20 minutes, or until firm-tender when tested with a fork.
  • Drain and cool under cold water.
  • Cut in 1/2-inch thick slices, and arrange the slices in the casserole dish in a spiral pattern, overlapping slices slightly.
  • Mix 1/2 cup of the syrup with the orange juice, pour over potatoes.
  • Dot with 1 Tablespoon of the butter.
  • Cover tightly with foil, and bake for 20-30 minutes, until hot and the potatoes have absorbed some liquid.

  • Pour the remaining 1/4 cup maple syrup over the potatoes and serve immediately.

Steps:

  • Scrub and pierce sweet potatoes; place on a microwave-safe plate. Microwave, uncovered, on high for 15-18 minutes or until tender, turning once., When cool enough to handle, cut each potato in half lengthwise. Scoop out the pulp, leaving thin shells. In a large bowl, mash the pulp with butter and eggs. Stir in juice and vanilla. Spoon into potato shells., Divide between two 13-in. x 9-in. baking dishes coated with cooking spray. Combine the topping ingredients; spoon over top. Bake at 375° for 20-25 minutes or until a thermometer reads 160°.

6 medium sweet potatoes, peeled
2 tablespoons butter or margarine
1/2 teaspoon salt
1/2 cup soft bread crumbs (1 slice)
1/4 cup dried cranberries
1/4 cup coarsely chopped pecans
2 tablespoons butter or margarine, melted

Steps:

  • Place sweet potatoes in 3-quart saucepan; add enough water to cover. Cover and heat to boiling; reduce heat. Simmer covered 20 to 25 minutes or until tender; drain. Shake potatoes in saucepan over low heat to dry.
  • Heat oven to 350ºF. Mash potatoes with 2 tablespoons butter and the salt until no lumps remain. Spoon into ungreased 1-quart casserole. Mix remaining ingredients; sprinkle over potatoes.
  • Bake uncovered about 30 minutes or until heated through and streusel mixture is golden brown.

This comforting side dish is a love letter to the sweet tooth in all of us: Unpeeled sweet potatoes and bananas are roasted together, then peeled, pureed, and topped with a crunchy pecan streusel.

10 medium-size tan-skinned sweet potatoes (about 6 pounds), scrubbed
4 bananas, unpeeled
1 cup (2 sticks) butter, room temperature
1/3 cup honey
1 1/2 cups pecan pieces
3/4 cup (packed) golden brown sugar
1/2 cup all purpose flour

Steps:

  • Preheat oven to 400°F. Pierce sweet potatoes with fork. Place on rimmed baking sheet or in roasting pan and bake until almost soft, about 40 minutes. Add bananas to roasting pan alongside sweet potatoes and bake until banana skins brown, about 10 minutes. Let sweet potatoes and bananas stand at room temperature until cool enough to handle, about 15 minutes (maintain oven temperature). Cut sweet potatoes in half. Scoop flesh from sweet potatoes into large bowl. Peel bananas; add to bowl. Add 1/2 cup butter and honey; beat with wooden spoon until blended and fluffy. Season to taste with salt. Transfer to 8- to 10-cup ovenproof baking dish.
  • Mix nuts, sugar, and flour in bowl. Add 1/2 cup butter; mix with fingertips until coarse crumbs form. (Potatoes and streusel can be made 1 day ahead. Cover separately; chill. Before continuing, preheat oven to 400°F.) Sprinkle streusel over potatoes. Bake until top is golden brown and potatoes are hot, about 25 minutes.

6 pounds medium Garnet sweet potatoes
For the streusel topping:
3/4 cup packed dark brown sugar
3/4 cup all-purpose flour
1 teaspoon kosher salt
7 tablespoons cold unsalted butter, cut into 14 pieces
1 1/2 cups pecan halves, finely chopped (about 6 ounces)
To assemble:
1/4 cup plus 2 tablespoons bourbon
6 tablespoons unsalted butter (3/4 stick), plus more for coating the dish
2 teaspoons finely grated orange zest (from 1 medium orange)
1 1/2 teaspoons kosher salt
3/4 teaspoon ground cinnamon
3/4 teaspoon freshly grated nutmeg
1/4 cup whole milk

Steps:

  • For the sweet potatoes: Heat the oven to 375°F and arrange a rack in the middle. Place the sweet potatoes on a foil-lined baking sheet and roast until very soft to the touch, about 45 minutes to 1 hour. Meanwhile, prepare the topping. For the streusel topping: Whisk the sugar, flour, and salt in a medium bowl until combined. Add the butter and, using a pastry blender or your fingers, cut it into the flour mixture until the butter's in pea-size pieces or smaller, about 5 minutes. Add the pecans and toss with your fingers to combine. Squeeze clumps of the mixture between your fingers to form irregularly shaped pieces about the size of kidney beans. Cover and place in the refrigerator until ready to use. To assemble: When the sweet potatoes are done roasting, place the baking sheet on a wire rack and set it aside until the sweet potatoes are cool enough to handle, about 20 minutes. Meanwhile, place the bourbon, measured butter, orange zest, salt, cinnamon, and nutmeg in a small saucepan over medium heat and cook, stirring occasionally, until the butter has melted and the mixture has started to bubble, about 5 minutes; set aside. Coat a 13-by-9-inch baking dish with butter and set it aside. When the sweet potatoes are cooled, cut them in half lengthwise. Scrape the flesh out with a spoon and transfer it to a large bowl; discard the skins. Using a potato masher, mash the flesh until it's almost smooth but some chunks remain. Add the bourbon mixture and the milk and stir until evenly combined. Transfer the mixture to the prepared baking dish. Evenly sprinkle the streusel topping over the sweet potatoes. Bake until the streusel is golden brown, about 20 minutes. Place the dish on a wire rack and let it sit 10 minutes before serving.
