Fresh rhubarb and sweet strawberries topped with a crunchy oatmeal crumble makes a dessert no one will forget.

3 cups rhubarb (diced 1/4 inch thick)
2 cups fresh strawberries (diced)
2 tablespoons cornstarch
3/4 cup granulated sugar
1/2 cup flour
1 cup oatmeal (quick or old fashioned (I use quick))
1/2 cup brown sugar
1/4 teaspoon salt
1/2 cup cold butter

Steps:

  • Preheat the oven to 375 F. Grease an 8 x 8 glass baking dish and set aside. Toss together the rhubarb, strawberries, cornstarch and granulated sugar until coated. Dump the mixture into the greased baking pan and set aside.
  • In a medium bowl stir together the flour, oatmeal, brown sugar, salt. Cut in the cold butter with a pastry blender. Continue working in the butter until it clumps together into crumbs. Top the strawberries and rhubarb with the crumble.
  • Bake in a 375 F oven for 30-35 minutes or until crumble is browned and filling is bubbly. Serve warm with ice cream or whipped cream

I love Rhubarb so much, and changed up my recipe "Lulu's Apple Crisp" to accommodate rhubarb and added strawberry jello for sweetness and so that the rhubarb isn't so watery (which rhubarb tends to do when cooked). I use the sugar-free strawberry jello to cut down on some of the sugar, but you can use the jello with sugar as well. I've tried other flavors, but in my opinion, the strawberry tastes the best with the rhubarb.

4 cups rhubarb, chopped
1 (1/3 ounce) package sugar-free strawberry gelatin
1 1/2 cups brown sugar
1 1/2 cups flour
3/4 cup butter, melted
1/2 cup white chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Place chopped rhubarb in a 13 x 9 cake pan and sprinkle with gelatin.
  • Bake for 20 minutes.
  • While apples are baking, mix the rest of the ingredients.
  • Crumble mixture on top of cooked rhubarb and bake 40 minutes longer.

1 cup white sugar
3 tablespoons all-purpose flour
3 cups sliced fresh strawberries
3 cups diced rhubarb
1 ½ cups all-purpose flour
1 cup packed brown sugar
1 cup butter
1 cup rolled oats

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, mix white sugar, 3 tablespoons flour, strawberries, and rhubarb. Place the mixture in a 9x13 inch baking dish.
  • Mix 1 1/2 cups flour, brown sugar, butter, and oats until crumbly. You may want to use a pastry blender for this. Crumble on top of the rhubarb and strawberry mixture.
  • Bake 45 minutes in the preheated oven, or until crisp and lightly browned.

¾ cup white sugar
2 tablespoons quick-cooking tapioca
½ teaspoon salt
½ (10 ounce) package frozen sliced strawberries
1 cup rolled oats
⅓ cup brown sugar
¼ cup sifted all-purpose flour
¼ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix rhubarb, white sugar, tapioca, and salt in a large bowl and toss to coat; let rest, stirring occasionally, for 30 minutes.
  • Stir strawberries into the rhubarb mixture; spread into a casserole dish.
  • Stir oats, brown sugar, flour, and butter together in a separate bowl until crumbly; sprinkle over the fruit mixture in the casserole dish.
