1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
6 tablespoons butter, softened
1 1/4 cup sugar
1 large egg
1/2 cup milk
1 teaspoon pure vanilla
1 pound strawberries, hulled and sliced in half or chopped
1 1/2 cups cubed rhubarb (I use 2 medium stalks)

Steps:

  • Preheat oven to 350 degrees. Butter a 10-inch pie plate or tart pan.
  • Using an electric mixer with the paddle attachment, cream together the butter and the sugar until light and fluffy. Add the egg, milk, and vanilla and mix until combined.
  • Gradually add the flour, baking powder, salt, and nutmeg and mix until combined. Remove bowl from the electric mixer and gently fold in the rhubarb.
  • Transfer batter to buttered pie plate and spread evenly. Arrange halved strawberries on top of the cake and sprinkle with an additional 2 tablespoons sugar.
  • Bake the cake for 10 minutes. Reduce oven to 325 degrees and continue baking until the cake is golden brown and firm to the touch -- about 1 hour. Let cool and cut into wedges.

1 orange
3 1/2 cups granulated sugar
2 lbs. rhubarb, trimmed and sliced
1 lb. strawberries (about 4 cup), trimmed and chopped, plus sliced strawberries for garnish
4 large egg yolks, room temperature
2 large eggs, room temperature
1 cup whole milk
3 tsp. vanilla extract
3 cups cake flour (not self-rising)
1 Tbsp. baking powder
12 Tbsp. butter (no substitutions), cut up room temperature
1 1/4 cup confectioners' sugar
8 oz. cream cheese, softened
2 cups heavy cream, cold

Steps:

  • 1. Into 4-qt. saucepan, squeeze juice from orange. Stir in 2 cups granulated sugar. Cook on med-high until sugar dissolves, stirring. Add rhubarb; cook 5 minute or until tender, stirring occasionally. Transfer to bowl; cool slightly. Refrigerate, uncovered, 2 hours. Stir in chopped strawberries; refrigerate. 2. Preheat oven to 350F. Grease and line bottoms of three 8 inch cake pans with parchment paper. Grease and flour parchment and sides of pans. 3. In med bowl, whisk egg yolks, whole eggs, 1/4 cup milk, and 2 tsp. vanilla until combined. in large bowl, with mixer on low speed, mix flour, baking powder, remaining 1 1/2 cup granulated sugar, and 1/2 tsp. salt; beat in butter and remaining 3/4 cup milk on med-high speed. Add egg mixture in 3 batches, beating well between additions. Divide batter evenly among pans. Bake 20 to 30 minutes or until toothpick inserted in centers comes out clean. Cool on wire rack 10 minutes. Loosen sides with knife. Invert cakes onto rack; cool completely. 4. Place 1 cake on plate. Strain liquid from rhubarb mixture; discard. Spread half of rhubarb on cake, leaving 1 inch border. Repeat with second cake remaining rhubarb. Top with third cake. 5. In large bowl, with mixer on high, whisk confectioners' sugar, cream cheese, and remaining 1 tsp. vanilla until fluffy. Slowly drizzle in cream. Whisk on high until stiff peaks form. 6. Cover cake with frosting. Garnish with berries. Serve immediately, or cover with plastic wrap (before garnishing) and refrigerate up to 1 day.

The cake itself is light yet moist and soaks up the juice released by the strawberries and rhubarb while baking. Sliced almonds add a gentle crunch. It can be a bit tricky to unmold, so don't forget to line the pan with parchment and grease it generously with butter.

4 tablespoons unsalted butter, plus 1 to 2 teaspoons for greasing the pan
3/4 cup light-brown sugar
1/3 cup sliced almonds
1 pint strawberries (about 12 ounces), stemmed, hulled and halved
3 cups rhubarb, trimmed, cut across into 1/4-inch-thick slices, blanched for 2 minutes and drained well
1/2 cup unsalted butter, softened
1 cup sugar
2 eggs
1/2 cup milk
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees. Line a 9-inch round pan (at least 2 inches deep) with parchment paper and grease the parchment with 1 to 2 teaspoons softened butter. 2 sticks (1 cup) unsalted butter, at room temperature, plus more for greasing the pan
2 cups cake flour, plus more for flouring the pan
2 teaspoons baking powder
1/2 teaspoon fine salt
1 cup sugar
1/4 cup heavy cream
3 large eggs
1/2 teaspoon finely grated lemon zest
1/2 teaspoon pure vanilla extract
1 pound rhubarb (about 4 stalks), cut into 1-inch pieces
1/2 cup sugar plus 1 tablespoon sugar
One 16-ounce container strawberries, trimmed and sliced (about 3 cups)
1 1/2 cups cold heavy cream
1 tablespoon sugar
1 teaspoon pure vanilla extract

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease a 9-inch round cake pan with butter and dust with flour, tapping out the excess. In a medium bowl, whisk together the flour, baking powder and salt; set aside.
  • Beat the butter in a large bowl with an electric mixer on medium speed until fluffy, about 2 minutes. Add the sugar and continue to beat until very fluffy, about 2 minutes longer. In a small bowl, whisk together the cream and eggs. Add half the flour mixture and half the egg mixture to the creamed butter and beat until combined. Repeat with the remaining flour and egg mixture.   • For the filling: Combine the rhubarb with 1/2 cup of the sugar and 1/4 cup water in a medium pot. Bring to a simmer over medium heat and continue to cook, stirring, until the rhubarb cooks down into a thick puree, 18 to 20 minutes. Cool completely, then fold in half of the strawberries. Stir the remaining 1 tablespoon sugar into the remaining berries.
  • For the whipped cream: When ready to assemble the cake, whip the cream with the sugar and vanilla in a medium bowl with a mixer until stiff peaks form.
  • Using a serrated knife, slice the cake in half horizontally and place the bottom half on a cake stand or serving plate cut-side up. Spread with 1 cup of the whipped cream, stopping about 1/2 inch from the edge of the cake, then top with the strawberry-rhubarb mixture. Place the second half of the cake cut-side dow, over the strawberry-rhubarb filling and spread the remaining whipped cream over top, going close to the edge of the cake. Garnish with the remaining sliced strawberries.

2 cups sliced fresh or frozen rhubarb
1/3 cup water
2 tablespoons plus 4-1/2 teaspoons sugar, divided
3 tablespoons plus 1 teaspoon strawberry gelatin
2/3 cup heavy whipping cream
1/4 teaspoon vanilla extract
14 ladyfingers, split
1 teaspoon cornstarch
1 teaspoon cold water
1/2 cup sliced fresh strawberries

Steps:

  • In a small saucepan, bring the rhubarb, water and 2 tablespoons sugar to a boil. Reduce heat; simmer, uncovered, for 6-8 minutes or until rhubarb is tender. Cool slightly. Cover and refrigerate 1/3 cup rhubarb liquid for glaze., Place rhubarb and remaining liquid in a blender; cover and process until pureed. Return to saucepan. Bring to a boil; stir in gelatin until dissolved. Refrigerate for at least 15 minutes or until slightly thickened., Meanwhile, in a large bowl, beat cream until it begins to thicken. Add vanilla; beat until stiff peaks form. Fold whipped cream into rhubarb mixture., Arrange half of the ladyfingers on the bottom of an ungreased 6-in. springform pan. Spread half of the rhubarb mixture into pan. Arrange remaining ladyfingers over rhubarb mixture; carefully spread with remaining rhubarb mixture.
