Winnie's Mini Rhubarb & Strawberry Pies image

Every spring, we had strawberries and rhubarb on our farm outside Seattle. These fruity hand pies remind me of those times and of Grandma Winnie's baking. -Shawn Carleton, San Diego, California

3 tablespoons quick-cooking tapioca
4 cups sliced fresh strawberries
2 cups sliced fresh rhubarb
3/4 cup sugar
1 teaspoon grated orange zest
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
3 drops red food coloring, optional
Pastry for double-crust pie
Sweetened whipped cream, optional

Steps:

  • Place tapioca in a small food processor or spice grinder; process until finely ground., In a large saucepan, combine strawberries, rhubarb, sugar, orange zest, vanilla, salt, cinnamon, tapioca and, if desired, food coloring; bring to a boil. Reduce heat; simmer, covered, until strawberries are tender, stirring occasionally, 15-20 minutes. Transfer to a large bowl; cover and refrigerate overnight., Preheat oven to 425°. On a lightly floured surface, roll half of dough to an 18-in. circle. Cut 12 circles with a 4-in. biscuit cutter, rerolling scraps as necessary; press crust onto bottom and up sides of ungreased muffin cups. Repeat with remaining dough, cutting 6 more circles. Spoon strawberry mixture into muffin cups., Bake until filling is bubbly and crust golden brown, 12-15 minutes. Cool in pan 5 minutes; remove to wire racks to cool. If desired, serve with whipped cream.

2 (9 inch) frozen pie crusts
2 cups sour cream
4 large eggs
3 cups white sugar
4 tablespoons all-purpose flour
2 teaspoons vanilla extract
½ teaspoon salt
3 cups sliced strawberries
3 cups chopped rhubarb
½ cup packed brown sugar
½ cup all-purpose flour
6 tablespoons butter

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line 2 pie plates with the pie crusts.
  • Stir sour cream and eggs together in a large bowl. Stir in sugar, 4 tablespoons flour, vanilla extract, and salt. Stir in strawberries and rhubarb. Pour filling into the 2 pie crusts. Cover with aluminum foil.
  • Bake in the preheated oven until crust is lightly browned, about 15 minutes. Reduce heat to 350 degrees F (175 degrees C); continue baking until filling is soft and nicely thickened, about 20 minutes more. Leave oven on.
  • Stir brown sugar and 1/2 cup flour together in a bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle mixture over the pie fillings.
  • Return pies to the hot oven. Bake until filling is set, 20 to 25 minutes.

3 packages (3 ounces each) strawberry gelatin
1 tablespoon lemon juice
6 packages (3 ounces each) cook-and-serve vanilla pudding mix
6 pastry shells (9 inches), baked
3 pounds fresh strawberries, halved
Whipped cream, optional

Steps:

  • In a large saucepan, combine sugar and cornstarch; gradually stir in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in gelatin and lemon juice until gelatin is dissolved. Cool to room temperature. , Prepare pudding mixes according to package directions. Pour into pastry shells. Top with strawberries. 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
3 cups fresh strawberries, sliced

Steps:

  • Heat oven to 350ºF.
  • Beat first 4 ingredients with mixer until blended. Drop 2 Tbsp. batter, 2 inches apart, into 32 mounds on baking sheets sprayed with cooking spray. Bake 10 min. or until toothpick inserted in centers comes out almost clean. Cool on baking sheets 3 min. Remove to wire racks; cool completely.

One 15.25-ounce box strawberry cake mix
2 large eggs
1 stick (8 tablespoons) unsalted butter, melted and cooled
1 stick (8 tablespoons) unsalted butter, at room temperature
4 ounces cream cheese, at room temperature
1 teaspoon vanilla extract
2 cups powdered sugar
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
3 to 4 drops yellow food coloring

Steps:

  • For the whoopie pies: Line 2 rimmed baking sheets with parchment paper; set aside. In a medium bowl, mix together the cake mix, eggs and melted butter until incorporated, about 2 minutes. The mixture should be much thicker than cake batter and should hold its shape. Measure 1 rounded tablespoon of batter and place on the baking sheet (use a small ice cream scoop if you have one) 1 1/2 to 2 inches apart, ending up with 22 cookies. Freeze the baking sheets of cookie dough for 30 minutes.
  • While the cookies freeze, preheat the oven to 350 degrees F.
  • Bake the cookies until the tops spring back when touched, 12 to 15 minutes. Transfer the cookies to a wire rack and allow to cool completely.
  • For the filling: Using a mixer with the paddle attachment, beat the butter and cream cheese until light and fluffy, about 3 minutes. Add the vanilla and half the powdered sugar; mix until well incorporated. Then add the lemon juice, zest, remaining powdered sugar and the food coloring; mix again until smooth. Chill about 30 minutes.
  • Scoop 1 1/2 tablespoons of the filling on to the flat side of 11 cookies. Top with the remaining 11 cookies to create a sandwich. Store in the refrigerator until ready to enjoy!

Made in muffin cups, our mini strawberry and rhubarb pies capture all the goodness of a country fair. To save time, we used Pillsbury refrigerated pie crusts.

1 tablespoon butter
3 cups chopped fresh rhubarb
3 cups fresh strawberries
1 1/2 cups granulated sugar
Juice of 1 lime (1 to 2 tablespoons)
Dash ground ginger
Dash ground cinnamon
1/2 cup cornstarch
1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1 egg white, well beaten
1/4 cup turbinado sugar (raw sugar)

Steps:

  • Heat oven to 375°F. Generously spray 6 regular-size muffin cups with cooking spray.
  • In 10-inch skillet, melt butter over medium-high heat. Add rhubarb; cook about 7 minutes or until very soft. Add strawberries and granulated sugar; cook until mixture begins to thicken slightly. Remove from heat. Stir in lime juice, ginger and cinnamon.
  • Pour mixture into blender. Add cornstarch; cover and blend with on-and-off pulses until pureed. Set aside.
  • On large cutting board, unroll pie crusts. Cut 3 (4-inch) rounds from each crust. Press rounds into muffin cups, leaving crust edges hanging over sides of cups. With knife, trim crust edge slightly to even out crust hanging over edges.
  • Spoon 1/2 cup strawberry-rhubarb filling into each crust-lined muffin cup.
  • Using pizza cutter, cut remaining pie crust into 42 strips, about 3 inches long and 1/8-inch wide. For each mini pie, weave 8 strips together to create lattice square; cut square with 2 1/2-inch round cutter. Gently place lattice round over top of filling in crust-lined muffin cup. Roll overhanging pie crust edge to meet lattice top.
  • With pastry brush, brush tops of each mini pie with beaten egg white. Sprinkle with turbinado sugar.
  • Bake 25 to 30 minutes or until filling is set and crust is golden brown. Serve warm or cold.

½ (15 ounce) package refrigerated pie crust
1 cup diced fresh strawberries
2 tablespoons white sugar
1 large egg, beaten

Steps:

  • Bring pie crust to room temperature. Place strawberries in a bowl and sprinkle with sugar. Set aside.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Roll out pie crust. Use a 4-inch pastry cutter to cut out 6 rounds.
  • Divide strawberries equally amongst the 6 rounds. Wet fingers with water and run them along the edges of each round. 1 1/2 cups strawberries, hulled and cut in half or quarters, depending on size
2 tablespoons granulated sugar
1 tablespoon cornstarch
All-purpose flour, for work surface
1/2 recipe Pate Brisee for Strawberry Hand Pies
1 large egg, lightly beaten
Sanding sugar, for sprinkling

Steps:

  • Preheat the oven to 425 degrees. Line a baking sheet with a Silpat (a French nonstick baking mat). In a medium bowl, add strawberries, sugar, and cornstarch; stir to combine, set aside.
  • On a lightly floured work surface, roll dough into a large rectangle, about 1/8 inch thick. Using a 5-inch cookie cutter, cut out 6 rounds. Transfer rounds to prepared baking sheet.
  • Place about 2 tablespoons of the strawberry mixture onto one-half of each round. Lightly brush egg around the edge of the covered half of each round. Fold remaining dough over to enclose, forming a half moon. Gently press edges together to seal. Brush the tops of each pie with egg. Using a paring knife, slash the top of each pie. Sprinkle generously with sanding sugar.
  • Bake until golden brown, 20 to 25 minutes. Transfer pies to a wire rack to cool slightly before serving. Or let cool completely, and store in an airtight container at room temperature up to 4 days.

6 Tbsp mascarpone cheese
6 Tbsp strawberry jam
3 Tbsp melted butter
2 Tbsp brown sugar
1 grilled peeled peach (or canned)

Steps:

  • 1. Preheat oven to 350 F. Spray a six muffin pan with non-stick spray.
  • 2. Open the crescent rolls.
  • 3. Separate the individual rolls.
  • 4. Cut to cover the bottom of each muffin holder; doing your best to come up the sides a bit (use 3/4 of the dough for this).
  • 5. Add 1 tablespoon of mascarpone cheese to each tin.
  • 6. Add 1 tablespoon of strawberry jam to each tin (if you don't have strawberry jam, use whatever kind of jam you have!).
  • 7. Chop up the peach (I used a grilled peach because it was leftover from last night's dinner! But a canned peach would be just as good...or substitute with whatever fruit you have on hand).
  • 8. Place into the muffin tin.
  • 9. Use the remaining 1/4 of the dough to crisscross the top of each pie.
  • 10. Put 1/2 tablespoon butter on the top of each pie.
  • 11. Sprinkle with some brown sugar.
  • 12. Bake for 10 minutes or until golden on top.
  • 13. Let cool five minutes because the fruit is really hot! Serve with ice cream or whipped cream! Enjoy!

One 17.3-ounce package puff pastry, thawed (2 sheets, about 9-3/4-by-10-1/2-inches)

About 30 medium strawberries, hulled and sliced 1/4 inch thick (about 12 ounces) (2 1/2 cups)
1 large egg
1 tablespoon water
Sparkling or sanding sugar, for finishing

Steps:

  • Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment paper.
  • On a lightly floured surface, roll out each sheet of puff pastry to flatten slightly and lengthen to be about 10-by-12-inches. By hand, cut 5 strawberry shapes with a paring knife from each sheet. They should be about 3 1/2 inches at the widest (top portion), and about 3 inches long. Reserve the scrap pieces of dough off to the side.
  • Transfer the dough to the prepared baking sheets. Poke holes in the center portion of the dough with a fork (don't dock the outer 1/2 inch all the way around).

  • Arrange the strawberries in the center portion of the dough, overlapping to fit as many as you comfortably can while keeping them in an even, fairly flat layer. Leave the outer 1/2 inch of dough around the outside edge uncovered.
  • In a small bowl, whisk the egg and water to combine. Use the tip of a paring knife to cut pieces from the remaining scrap dough to emulate the tops of the strawberries. Don't worry if they're all different-so are real strawberries! Use a small amount of the egg wash to attach the stems to the top portion of each pastry, overlapping a portion of the strawberries.
  • Brush the egg wash on all of the exposed crust and garnish generously with sparkling or sanding sugar.
  • Bake until the strawberries are tender and the crust is deeply golden brown, 13 to 15 minutes. Cool at least 10 minutes before serving.

1 teaspoon baking powder

2 teaspoons grated lemon zest (1 lemon)
8 tablespoons (1 stick) butter, room temperature
1 1/4 cups sugar
1 large whole egg
3 ounces cream cheese, room temperature
2 tablespoons nonfat buttermilk
1 teaspoon pure vanilla extract
1 large egg white, lightly beaten
2 cups sun-dried strawberries
1 vanilla bean, split lengthwise
1 teaspoon freshly squeezed lemon juice plus 2 teaspoons grated lemon zest (1 lemon)
1 cup chunky strawberry preserves

Steps:

  • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and lemon zest; set aside. Line a baking sheet with parchment paper, and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, combine butter and 1 cup sugar; beat until light and fluffy, about 5 minutes. Add egg, and beat until just combined. Add cream cheese, buttermilk, and vanilla extract; beat until well combined. Add the reserved flour mixture, and beat until smooth.   • Remove dough from refrigerator. Sprinkle a clean work surface with flour; roll dough 1/8 inch thick. Using a 4 1/2-inch-round cookie cutter, cut out 20 rounds, and transfer to prepared baking sheet. Cover with plastic wrap, and refrigerate until firm, about 30 minutes.
  • Combine sun-dried strawberries and 1 1/2 cups water in a medium saucepan. Scrape in the vanilla seeds, and reserve pod for another use. Bring mixture to a boil. Reduce heat to low, and simmer until most of the water has been absorbed, about 20 minutes. Remove from heat, and stir in lemon juice, lemon zest, and preserves. Set aside to cool.
  • Heat oven to 375 degrees; have ready a small bowl of ice water. Remove chilled dough from the refrigerator, and let stand until pliable, 2 to 3 minutes. Spoon 1 tablespoon of filling onto the center of a round, and brush ice water around the edges. Fold round in half; using a fork, press down on edges to seal. Repeat with the remaining rounds. Chill 30 minutes.
  • Remove pies from refrigerator, and brush tops with egg white. Sprinkle remaining 1/4 cup sugar over tops. Bake until golden brown, about 20 minutes. Remove from oven; transfer to a wire rack to cool. Serve.

1 pie crust, purchased or home made, uncooked
10 1/2 tsp strawberry butter (recipe below)
1 egg yolk
1 tsp sugar
slow cooker strawberry butter-low sugar
2 qt strawberries, washed, hulled, and halved
sugar to taste

Steps:

  • 1. Preheat oven to 425 degrees. Line a large baking sheet with parchment.
  • 2. Cut pie crust into 7 4 inch circles. Place 1½ tsps. of strawberry butter in the center of each circle. Moisten edge of the circle and fold over. Crimp edges with the tines of a fork. Place on prepared baking sheet.
  • 3. Mix egg yolk with 1 tsp. water. Brush over pies. Sprinkle with sugar. Cut a small slit in each pie to vent, or cut tiny crows feet. Bake for approximately 10 minutes or until golden brown and filling is bubbly.
  • 4. Slow Cooker Strawberry Butter
  • 5. Put strawberries into a slow cooker. Cook on high approximately 2 hours. With a spoon, break the berries apart if they are still intact. Stir in sugar. Cook on high another 2 hours, stirring occasionally. Refrigerate

One 12-inch round store-bought refrigerated rolled pie dough
1/4 cup heavy cream, plus more for brushing
1 tablespoon coarse sugar
2 tablespoons cornstarch
1/4 cup plus 1 tablespoon granulated sugar
2 cups strawberries, hulled and finely chopped

Steps:

  • Position 2 oven racks to the top and bottom thirds of the oven and preheat to 400 degrees F. Line a baking sheet with parchment.
  • Roll the pie dough into a 13-inch round. Cut the pie dough into 6 rounds using a 3 3/4-inch round cookie cutter. Press each dough round into a muffin tin cup, making sure it covers the inside of the cup. Poke the rounds all over with a fork.
  • Bring the pie dough scraps together in a ball and re-roll into an 8-inch round. Cut into 6 rounds using a 2 1/2-inch round fluted cookie cutter. Using a paring knife, cut decorative slits into each fluted round and arrange on the prepared baking sheet. Brush with heavy cream and sprinkle with the coarse sugar. Bake the pie dough in the muffin tin and on the baking sheet until golden brown, about 10 minutes. Let cool completely.
  • Meanwhile, puree the cornstarch, 1/4 cup granulated sugar, half the strawberries and 1/4 cup water in a blender. Transfer to a small saucepan, bring to a boil over medium-high heat and cook, whisking constantly, until thick and glossy, about 30 seconds. Remove from the heat, let cool completely and fold in the remaining strawberries.
  • Whisk together the heavy cream and remaining 1 tablespoon granulated sugar in a medium bowl until soft peaks form.
  • Remove the pie crust cups from the muffin tin. Spoon the strawberry filling into the cups and top with the fluted rounds and whipped cream.

  • Process cream cheese, butter and flour in food processor until mixture forms ball. Flatten into disk; wrap in plastic wrap. Refrigerate 20 min. Meanwhile, combine strawberries, rhubarb and granulated sugar; set aside.
  • Roll out pastry on lightly floured surface to 1/8-inch thickness. Use 3-inch cookie cutter to cut pastry into 24 rounds, rerolling scraps as necessary. Discard any remaining dough.

2 1/4 cups all-purpose flour
1/2 cup graham cracker crumbs
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon fine salt
1 cup lightly packed light brown sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
2 teaspoons pure vanilla extract
1 large egg
1 cup milk
Confectioners' sugar, for dusting
One 8-ounce package cream cheese, at room temperature
1 cup marshmallow creme
1/2 cup finely diced strawberries
1/4 cup strawberry jam

Steps:

  • For the cookies: Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Whisk together the flour, graham cracker crumbs, baking powder, baking soda and salt in a medium bowl. Set aside.
  • Beat together the brown sugar, butter and vanilla in a large bowl with a stand mixer on medium-high speed until light and fluffy, about 2 minutes. Add the egg and beat until combined. Reduce the speed to low and add the dry ingredients in 3 batches, alternating with the milk, beginning and ending with the dry ingredients; beat after each addition until just combined.
  • Scoop tablespoon-mounds of batter and place on the prepared baking sheets about 1 inch apart. You should have 20 cookies per baking sheet.
  • Bake, rotating the baking sheets halfway through, until the tops of the cookies spring back when lightly touched, 10 to 12 minutes. Let cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely, about 30 minutes. Using a small fine-mesh sieve, dust the tops of the cookies with confectioners' sugar.
  • For the filling: While the cookies cool, whisk the cream cheese and marshmallow creme together in a medium bowl with a handheld mixer until smooth and well combined. Transfer to a piping bag fitted with a medium round tip.
  • Gently fold the strawberries and jam together with a rubber spatula in a medium bowl until combined; set aside.
  • Flip half of the cookies so they are flat-side up; pipe a ring of cream cheese filling around the edge of the cookies to create a "dam," then spoon about 1 teaspoon of the strawberry filling in the center.
