STRAWBERRY-RHUBARB JAM WITH FROZEN YOGURT PARFAIT AND HOMEMADE WALNUT BRITTLE

Steps:
- For the frozen yogurt: Strain the yogurt through a fine-meshed strainer for 2 hours. Put the strained yogurt, the sugar, cinnamon and vanilla extract in a blender and blend until the ingredients are incorporated, about 2 minutes.
- Transfer the yogurt mixture to an 8-inch square baking dish and freeze until firm, about 1 hour.
- Meanwhile, make the homemade walnut brittle: Line a baking sheet with a silicone baking mat and grease it liberally with 2 tablespoons of butter.
- Bring the sugar and corn syrup to a boil in a large saucepan over medium heat, stirring constantly. Attach a candy thermometer to the side of the saucepan and cook until the mixture reaches 240 degrees F, about 6 minutes. Stir in the walnuts and cook until the mixture becomes golden-brown and reaches 300 degrees F, about 5 more minutes.
- Remove the saucepan from heat, and stir in 1 stick butter, the vanilla extract, baking soda and salt¿the mixture will come to a vigorous bubble, then it will settle. Stir until the butter is fully melted and pour onto the silicone baking mat. Let the brittle cool completely, about 30 minutes. Break apart before serving.
- To assemble the parfaits: Add a large spoonful of jam to each parfait glass, then a scoop of Frozen Yogurt, and top with a few pieces of Homemade Walnut Brittle.
SHANNON'S STRAWBERRY PINEAPPLE PARFAIT
This is a spin off from my Good For You parfait. It is also delicious, try them both :) If you like, this can be made into 2 smaller parfaits, just add another tablespoon of Grape Nuts to the list of ingredients and divide ingredients evenly between two parfait glasses.

- Strawberry Rhubarb Compote: In a medium saucepan over medium low heat add rhubarb, strawberries, cinnamon stick, sugar, cornstarch and lemon zest; stir the mixture occasionally so not to burn.
- Cook until rhubarb is soft and mixture thickens, about 8 to 10 minutes; cool completely& remove cinnamon stick.
- Cream Layer: In the bowl of a stand mixer fitted with a whisk attachment (or alternatively with an electric hand mixer), whip cream until soft peaks start to form.
- Add icing sugar and increase speed to high; continue to whip cream into firm peaks.
- Fold crème fraiche and Grand Marnier into whipped cream.
- Assembly: Divide 1/3 of the cream layer equally into 6 parfait glasses; divide half the strawberry rhubarb compote equally on top of the layers of the cream layer.
- Divide another 1/3 of the cream on top of the layers of the strawberry rhubarb compote; divide remaining half of strawberry rhubarb compote equally on top of the layers of cream.
- Divide the remaining 1/3 the cream equally on top of the strawberry compote mixture.
- Garnish each parfait with a whole strawberry, sprig of lemon balm and cookie (optional).

- Whisk together the yogurt, honey and lime zest in a small bowl.
- Place 4 small (6-ounce) juice glasses on a work surface and put a spoonful of the yogurt in the bottom of each glass. Add about 2 tablespoons of the quinoa to each glass, followed by about 2 tablespoons of the diced strawberries and kiwi. Repeat the layering in each glass, and scatter any additional fruit that is left over the top layer of yogurt. Serve immediately.

- MAKE THE WHITE CHOCOLATE CREAM:.
- Place solid ivory in medium bowl.
- In small saucepan, bring cream to gentle boil.
- Remove from heat.
- Pour hot cream mixture over solid ivory.
- Let mixture stand for 30 seconds to melt.
- Gently whisk until smooth.
- Whisk in mascarpone cheese and vanilla.
- Cover mixture with plastic wrap and refrigerate for at least 4 hours.
- MAKE THE STRAWBERRY COULIS:.
- Combine frozen strawberries and sugar in medium saucepan and cook over medium heat, stirring constantly with wooden spoon, until sugar is completely dissolved and berries are soft.
- Do not let mixture boil.
- Strain strawberry mixture through fine-meshed sieve into bowl.
- Stir in Grand Marnier, orange-flavored liqueur.
- Cover and refrigerate.
- PREPARE THE STRAWBERRIES:.
- Reserve 6 small, whole berries for garnish.
- Hull, wash and cut berries into quarters into medium bowl.
- Sprinkle with sugar and Grand Marnier or Framboise and stir (see others above in ingredients)
- Let macerate in refrigerator until ready to assemble parfaits.
- ASSEMBLE THE PARFAITS:.
- Cut pound cake slices into 1/4-inch cubes.
- Divide cubes among six parfait glasses.
- Pour 2 tablespoons strawberry coulis over cake cubes in each parfait glass.
- With teaspoon, toss cubes in coulis.
- Remove white chocolate mascarpone cream from refrigerator.
- Whisk to soft peaks.
- Fill pastry bag with large star tip (such as Ateco #8) with whipped white chocolate mascarpone cream and pipe some into each parfait glass.(You can use a plastic bag & cut a slit in one of the corners as a pastry bag.).
- Top with berries and pipe large rosette of white chocolate mascarpone cream on top of each parfait.
- Garnish with whole strawberries and refrigerate until ready to serve.

- Place the biscotti biscuits in a plastic bag and crush them lightly with the end of a rolling pin, leaving them slightly chunky. Tip the crushed biscuits into a bowl, drizzle over the Vin Santo and give it a stir. In small bowl, use a fork to slightly mash half of the strawberries with the sugar.
- Whip the mascarpone in a medium bowl, then fold into the whipped cream. If the mixture appears too thick fold through a little milk. In a 1-litre glass bowl, spread half of the soaked biscotti. Top with half of the mashed strawberries and then half of the mascarpone mixture. Repeat until you have used up everything. Slice the remaining strawberries and scatter over the top. Refrigerate, then pack into a cooler as this dessert should be served chilled.

STRAWBERRY-SHORTCAKE PARFAIT POPS

- Spray the insides of six 3-ounce paper cups with cooking spray. Pulse the cereal and coconut in a food processor until coarsely ground.
- Put about 1 tablespoon cereal mixture in the bottom of each cup and top with 1 tablespoon frozen yogurt. Add 2 tablespoons sorbet and press into the cup, then pack in another tablespoon of frozen yogurt and sprinkle with more cereal mixture. Insert a wooden stick into the center of each pop and freeze until hard, at least 4 hours.
- Before serving, snip the paper cup and peel it off.

This is such a pretty recipe. I just love parfaits and I adore this light and fluffy mousse one. Butter cookies are among my fave and I love the fact that they are used in this recipe. Easy recipe with little prep needed.

- Dice 1C Strawberries and mix with sugar and lemon. Cut remaining 1/3C into a large dice and set aside.
- Sprinkle gelatin evenly over water in a very small saucepan and let stand for 1 minute to soften. Then warm over low heat stirring until gelatin is dissolved. Stir gelatin into mashed strawberries.
- Set bowl in a a larger bowl of ice and cold water and stir frequently until a spoonful of gelatin mixture holds its shape briefly before dissolving back into mixture. About 5 minutes.
- Beat cream in another bowl with a whisk until it just holds stiff peaks. Fold about a 1/2C of cream into gelatin mixture.
- In a decorative glass or dish, begin layering whipped cream, mousse, cookie crumbs and whipped cream until glass is full.
STRAWBERRY AND ALMOND CREAM PARFAIT

- In a medium bowl, whisk together sugar, flour and egg yolks until thick and smooth, 3 to 5 minutes.
- In a medium pot, bring the milk and vanilla bean to a gentle boil. Pour about half of the milk mixture over the eggs whisking constantly. Pour the whole mix back into the pot and place the pot back over low heat, stirring with a wooden spoon, until the mixture thickens, 3 to 5 minutes. Note: you must stir this mixture constantly, scraping the bottom as you stir, so the flour doesn't stick to the bottom and burn.
- Remove the pot from the stove and whisk in the marzipan. Pour the mixture onto a baking sheet lined with plastic wrap and cover it with a coating of plastic wrap. Place the tray in the refrigerator to cool.
- In a medium skillet over low heat, melt the granulated sugar. Spray a tray with a light coating of nonstick spray. Spray the end of a wooden spoon as well. When the sugar turns light brown, add the almonds and stir to coat them with the sugar. Spoon the almonds on to the baking sheet and sprinkle lightly with salt.
- When the almond cream has cooled, remove and discard the vanilla bean and place the pastry cream in a medium bowl. Whisk until it is smooth. In another medium bowl, toss the strawberries and brown sugar together.
- Place 4 to 6 glasses on a flat surface. Begin by spooning a thin layer of almond cream in the bottom of each. Sprinkle with a few almonds. Add a layer of the whipped cream. Top with a layer of strawberries. Repeat the layers until the glasses are full. Refrigerate for a while before serving or enjoy immediately.
STRAWBERRY PARFAIT PIE
Steps:
- 1. Dissolve gelatin in hot water; use stainless steel bowl for it will cool quicker. Wash and stem strawberries, pat dry and slice. Cut ice cream into 2-inch chunks (4 or 5 scoops should work); add to gelatin and stir until ice cream melts. Chill until partially set. Stir in sliced berries and turn into piecrust; chill. Top with whipped cream if desired. Makes 6 to 8 servings.
- 2. Mix crumbs and sugar; add butter and mix well. Press into 9-inch pie plate. Bake in 375° oven for about 8 minutes; cool before filling.

- Save 4 whole strawberries for garnish, and slice the remainder.
- Set aside.
- Microwave 1 cup water until hot.
- Pour hot water over gelatine and sweetener in a small bowl, stirring until gelatine is dissolved.
- Refrigerate mixture 5-10 minutes to cool gelatine.
- Place sour cream in bowl.
- Add 1/4 of gelatine mixture and whisk until sour cream and gelatine are well-mixed and creamy.
- Slowly pour remainder of gelatine into sour cream mixture, whisking continuously to blend.
- Pour gelatine mixture into an greased 8x8-inch glass casserole.
