STRAWBERRY KIWI VODKA SMASH
This Strawberry Kiwi Vodka Smash is the perfect summer cocktail! Light and refreshing with amazing fruity flavor from muddled strawberries and kiwis - it goes down easy!

Steps:
- Combine the water and sugar in a small saucepan and set over medium heat.
- Bring to a boil. Reduce the heat to a simmer and cook, stirring frequently, until all the sugar is completely dissolved in the water, about 5 minutes.
- Remove from the heat and allow to cool completely before using in cocktails.
- This will make extra syrup - store extra in an airtight container (a mason jar works great) in the fridge for about a week.
- To a cocktail shaker, add the strawberries, kiwi, and lime wedges. Muddle with a muddler or the handle of a wooden spoon/spatula until the fruit is pretty well mashed.
- Add the simple syrup, vodka, and some ice to the shaker. Shake well to thoroughly mix and chill the ingredients.
- Strain the mixture into two glasses filled with ice. Top off with sparkling water.
- Garnish as you please. I love to add a few more strawberries and kiwi to each glass, a lime slice, and a sprig of fresh mint.
- Serve immediately.

- Put the strawberries on a tray lined with plastic wrap and freeze uncovered for 2 hours or until they are frozen solid.
- Divide the frozen strawberries and ice into 4 batches and put the first batch in a blender or processor. Pulse about 5 or 6 times or until evenly crushed.
- Pour in a quarter of the sugar syrup and cream. Quickly blend for a few seconds just to incorporate the ingredients.
- Pour the frappé mixture into a pitcher and repeat with the remaining batches. Serve immediately, in glasses.

Steps:
- Preheat oven to 170˚F (70˚C).
- In a food processor or blender, puree strawberries, kiwi, sugar, and lemon juice.
- Over a bowl or jug, pour the puree into a strainer and stir to remove most of the seeds.
- On a baking sheet lined with parchment paper, pour the puree and spread evenly over the paper, being careful not to let it spill over the edges.
- Bake for 5 hours, or until it is mostly dehydrated and is no longer sticky. (This may take up to 6 hours depending on the oven.) It is done when it has a bendable, leathery texture.
- Cool completely and cut into strips, leaving the parchment paper attached.
- Roll each strip up and tie with a ribbon or twine.
- To serve, remove ribbon/twine and parchment paper.
- Enjoy!
