CHOCOLATE COVERED STRAWBERRY DREAM BARS

These NO BAKE Chocolate Covered Strawberry Dream Bars are sure to be a favorite. In every bite you'll taste an Oreo crust, cheesecake, strawberry fruit filling, chocolate pudding, and whipped topping.

Number Of Ingredients 10

28 Chocolate Oreos with filling (divided)
4 tablespoons butter (melted)
3.9 ounces instant chocolate fudge pudding
1 ½ cups milk
6 ounces cream cheese (room temperature)
1/2 cup confectioners' sugar
1/2 teaspoon pure vanilla extract
8 ounces Cool Whip or 1 recipe of my Stabilized Whipped Cream (divided)
21 ounces Lucky Leaf Premium Strawberry Fruit Filling or Topping (divided)
1/3 cup semi-sweet chocolate chips

Steps:

  • Prepare an 8 X 8-inch baking dish by lining it with parchment, if desired. This will allow you to lift the bars out of the pan and cut them evenly into squares.
  • Melt the butter in a medium microwavable bowl, and place 20 of the Oreo cookies with filling into a blender or food processor to crush into fine crumbs. Add the crumbs to the butter and mix well.
  • Place the cookie mixture into the pan and spread to the sides, patting down to even it out. Place into the freezer to set for a minimum of 30 minutes.
  • In a medium bowl, mix the pudding with the 1 ½ cups of milk. DO NOT use 2 cups of milk as is called for on the package. We want the consistency of the pudding to be thicker and not runny. Place into the fridge to set.
  • In a mixing bowl, beat the cream cheese until smooth. Scrape down the bowl and add the confectioners' sugar and vanilla extract. Beat again until completely mixed. With a rubber spatula, mix in 1 ½ cups of the Cool Whip or Stabilized Whipped Cream, and mix well.
  • Remove the crust from the freezer and place dollops of the cheesecake filling onto the crust. Using an offset spatula, spread the cream evenly to all sides of the pan.
  • Using 1 cup of the Lucky Leaf Premium Strawberry Fruit Filling or Topping, place spoonfuls over the cheesecake layer and gently spread.
  • Put dollops of the pudding on top of the strawberry filling and spread evenly to all edges of the pan.
  • Place dollops of remaining Cool Whip or Stabilized Whipped Cream on top and completely cover. Place into the freezer for a minimum of two hours before serving.
  • Using the remaining strawberry fruit filling, put spoonfuls around the top of the whipped and cream and spread as best you can. Remove the bars by lifting the parchment out of the pan. Place the remaining 8 Oreos into a plastic bag and crumble them. Sprinkle them on top of the dessert.
  • In a small microwavable bowl, melt the chocolate chips for 30 seconds. Stir, and microwave for an additional 10 seconds and again if needed, stirring in between until chips are completely melted. Drizzle over the crushed Oreos and strawberry topping.

"But, I want something red, you know, for Christmas. . . I know, let's turn the lemon into strawberry!" And so, this recipe was developed, on the fly. It turned out...

1 pkg strawberry cake mix
1/2 c butter, softened
1 large egg
14 oz sweetened condensed milk
1/2 c strawberry fruit spread
red food coloring

Steps:

  • 1. Preheat oven to 350*F. Stir together cake mix, butter, and egg. Spread mixture evenly into bottom of a 13" x 9" pan.
  • 2. Blend together sweetened condensed milk, strawberry fruit spread, and food coloring (whatever is necessary to achieve the color you want). Pour mixture over top of cake mix mixture.
  • 3. Bake for 23 - 27 minutes. Cool completely. Cut into 1-½" x 3-¼" bars.

I used to make this for catering jobs in big sheet pans. A refreshing, cool dessert. You can make the crust 2 different ways. Great either way.

1 -16 oz container light cool whip
1 - 16 oz container dannon's fit & light strawberry flavored yogurt
1 1/2 large boxes sugar free strawberry jello
20 fresh strawberries for decoration (halved)
FOR OREO COOKIE CRUST:
1 pkg crushed oreo cookies in food processor
1 stick butter, melted
FOR FIBER ONE CRUST:
2 individual bags fiber one coarsly crushed in food processor
1 stick melted butter (+)
2 individual small envelopes splenda sweetner

Steps:

  • 1. In a half sheet pan (17 x 12 x1" deep) mix either crust & pat into pan going up sides of pan also.. Note: I used smaller dishes here for here at home.
  • 2. Mix the cool whip, yogurt, & jello by hand & spread over crust.
  • 3. Place in fridge overnight. Do not cover until tomorrow.
  • 4. NEXT DAY: SCORE THE DESSERT WHERE YOU WILL BE CUTTING IT SO YOU CAN PLACE THE STRAWBERRIES ON.SLICE STRAWBERRIES IN HALF FROM TIP TO TOP, LEAVING LEAVES ON & TOP WITH STRAWBERRY SLICES FOR STRAWBERRY YOGURT. I place it so the tip of strawberry points to a corner.
  • 5. You want it in something that isn't very deep, so you can spatula it out easily so it won't fall apart. It makes a beautiful presentation in a flat pan with all those strawberries in a row. I would make the point of the strawberry point to one corner of the bar, so when it sat on a plate by itself, it looked in diamond shape with a strawberry on top. Very pretty. To me, presentation is everything, along with taste. I wish I had a picture. Oh, I would also save some of the jello granules out & very lightly sprinkle on top of yogurt mixture before putting strawberry on top. I made a day ahead so it could set up good & didn't put strawberry on until ready to serve. But sprinkle jello granules on the day before.
