1/4 cup sugar
1/3 cup slivered almonds
1 bunch romaine, torn (about 8 cups)
1 small onion, halved and thinly sliced
2 cups halved fresh strawberries
DRESSING:
1/4 cup mayonnaise
2 tablespoons sugar
1 tablespoon sour cream
1 tablespoon 2% milk
2-1/4 teaspoons cider vinegar
1-1/2 teaspoons poppy seeds

Steps:

  • Place sugar in a small heavy skillet; cook and stir over medium-low heat until melted and caramel-colored, about 10 minutes. Stir in almonds until coated. Spread on foil to cool. , Place romaine, onion and strawberries in a large bowl. Whisk together dressing ingredients; toss with salad. Break candied almonds into pieces; sprinkle over salad. Serve immediately.

1/2 cup sliced fresh strawberries
1/4 cup honey-roasted sliced almonds
1 tablespoon cider vinegar
1 tablespoon honey
1-1/2 teaspoons sugar

1 small head of romaine lettuce
2 oz monterey jack cheese, shredded
1/4 c sliced almonds
1 c sliced strawberries
DRESSING:
2 Tbsp red wine vinegar
3 Tbsp granulated sugar
1/2 small clove of garlic, minced finely
1 dash(es) white pepper
2 Tbsp vegetable oil
1/8 tsp paprika

Steps:

  • 1. Clean romaine lettuce, chop and pat dry, place in large bowl. Add cheese, almonds and strawberries. Toss gently.
  • 2. Combine all dressing ingredients using a little jar or small bowl and refrigerate. Right before you eat shake or blend completely. Pour over prepared lettuce, etc. using just enough to your liking. Enjoy!
  • 3. Options: Use mozzarella cheese instead of Monterey jack. Sunflower seeds in place of almonds. NOTE: use dressing the same day as it does not keep well.
  • 4. All kinds of leafy lettuces can be used in this recipe. Red Leaf Lettuce, Bibb Lettuce, and for gardeners the wonderful Black Seeded Simpson in summer are great. Try others and decide which you enjoy the best!

2 tablespoons butter
1/3 cup sugar
1/2 cup sliced almonds or 1/2 cup slivered almonds
1 bunch romaine lettuce, coarsely cut
1 pint fresh strawberries, stemmed and halved
1/2 medium red onion, sliced thin
3/4 cup mayonnaise
1/4 cup milk
2 tablespoons poppy seeds
2 tablespoons raspberry vinegar
1/3 cup sugar

Steps:

  • In a saucepan, over medium heat, melt 2 tablespoons butter, stir in sugar and almonds and cook until golden brown; remove from heat and allow to cool slightly.
  • Combine lettuce, strawberries, onion and the sugared almonds.
  • Mix dressing ingredients together and toss with salad.
  • Chill for a short time and then serve.

This salad was served with lunch at a conference I went to, and I liked it so much that I requested the recipe. It is elegant but easy to make. The candied almonds really add flavour!

1/2 cup slivered almonds
1 tablespoon corn syrup
1 1/2 teaspoons granulated sugar
1 pinch salt
1 pinch cayenne pepper
12 cups Baby Spinach
1 pint strawberry, sliced
1/4 cup vegetable oil
2 tablespoons granulated sugar
2 tablespoons raspberry vinegar
1 pinch salt
1 pinch pepper

Steps:

  • In a small bowl, toss together almonds, corn syrup, sugar, salt and cayenne pepper until coated. Spread in a single layer on a parchment-lined baking sheet. Bake in 325F oven, stirring occasionally to break up clumps, for about 12 minutes. Let cool completely on pan on rack. Break into pieces.
  • For the dressing, whisk together oil, sugar, vinegar, salt and pepper in a small bowl.
  • In a large bowl, toss spinach with dressing. Sprinkle with candied almonds and strawberries.
