A wonderful recipe using fresh strawberries from Netherhill Strawberry Farm in Australia. This recipe also yields a tried and true (and reviewed) great Blueberry & Cream Bread.

Number Of Ingredients 13

1 3/4 cups flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/2 cup butter, softened
3/4 cup sugar
1/4 cup light brown sugar (use if you want a sweeter bread)
2 eggs, room temperature
1/2 cup sour cream, room temperature
1 teaspoon vanilla
1 1/4 cups strawberries, fresh & coarsely chopped (do NOT use frozen) or 1 1/4 cups fresh blueberries
3/4 cup walnuts (optional)

Steps:

  • Combine flour, baking powder, baking soda, salt and cinnamon; set aside.
  • In small bowl, beat butter until creamy. Gradually add sugar, beat 1 minute or until light and airy. Add brown sugar. Beat in eggs, one at a time. Beat in sour cream and vanilla.
  • Stir into flour mixture only until dry ingredients are moistened.
  • Fold in strawberries and nuts.
  • Pour into a greased 8 x 4 inch loaf pan.
  • Bake at 350°F for 60 to 65 minutes or until toothpick comes out clean.
  • Let stand 10 minutes in pan.
  • Turn out on rack to cool.

1 3/4 c all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/4 tsp ground cinnamon
1/2 c butter, room temperature
3/4 c white sugar
2 eggs, room temperature
1/2 c dairy sour cream, room temperature
1 tsp pure vanilla extract
1 c coarsely chopped fresh strawberries
3/4 c toasted chopped walnuts

Steps:

  • 1. Grease an 8" X 4" loaf pan; set aside. Preheat oven to 350 degrees F (175C).
  • 2. In a large bowl, combine flour, baking power, baking soda, salt and cinnamon; set aside.
  • 3. In a small bowl of electric mixer, cream butter. Gradually add sugar; beat 1 minute or until light and airy.
  • 4. Beat in eggs one at a time. Beat in sour cream and vanilla.
  • 5. Stir into flour mixture only until dry ingredients are moistened.
  • 6. Fold in strawberries and nuts.
  • 7. Turn into prepared pan; smooth top. Bake 60-65 minutes or until a wooden pick inserted in center comes out clean.
  • 8. Let stand in pan 10 minutes. Turn out onto a rack to cool. (Makes 1 loaf.)

I love all things strawberry so when I was asked to make bread pudding I decided to try adding strawberries. The results were heavenly. I have never liked bread pudding... until now that is. I will definitely be adding this to my list of favorites.

2 tablespoons butter, melted
7 (1 ounce) slices day-old bread, torn into small pieces
¾ cup chopped fresh strawberries
3 eggs
1 ¼ cups milk
¾ cup light cream
¼ cup strawberry preserves
¾ cup white sugar, or to taste
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter the bottom and sides of an 8 inch square baking dish with the melted butter.
  • Toss bread with the chopped strawberries, and place into the prepared pan. Beat the eggs, milk, cream, strawberry preserves, sugar, and vanilla in a medium bowl until frothy. Pour over the bread and lightly press down with a spatula until the bread has absorbed the milk mixture.
  • Bake in the preheated oven for 40 to 45 minutes, or until the top springs back when lightly tapped.

My husband and I are strawberry lovers, so each spring we pick about 30 quarts. This recipe makes two delicious loaves. One we eat right away; the other we freeze and pull out when family comes to visit.

3 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
1 egg plus 3 egg whites, lightly beaten
1-1/4 cups vegetable oil
2 cups chopped fresh or frozen strawberries
1-1/2 cups chopped walnuts

Steps:

  • In a large bowl, combine flour, baking soda, sugar, cinnamon and salt. Add egg, egg whites and oil; stir just until moistened. Fold in strawberries and nuts. Spoon into two greased 8x4-in. loaf pans. , Bake at 350° for 70 minutes or until bread tests done. Cool in pans 10 minutes before removing to a wire rack.

Awesome flavors!!! If you are a strawberry lover, this one is for you! A rich creamy texture to enjoy. The nuts are optional, but does add to flavor combination. If used, chopped pecans are recommended.

1/2 cup butter, softened
1 cup sugar
1 (3 ounce) cream cheese, softened
2 eggs
1 teaspoon vanilla extract
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup milk (half 'n half)
1 1/2 cups strawberries, chopped
1/2 cup finely chopped pecans (optional)

Steps:

  • With electric mixer cream butter, sugar and cream cheese until fluffy. Add eggs one at a time. Mix in vanilla.
  • In separate bowl, mix flour, baking powder, baking soda and salt. Blend flour mixture with butter mixture just until blended. Add half 'n half and only stir just to blend -- do not overstir!
  • Drain strawberries and blot dry. Carefully just fold in strawberries and nuts. Dough mixture will be thick.
  • Grease and flour a 9x5 inch loaf pan. Bake in a 350 degree oven for 50 to 60 minutes. Let bread mellow for one day and then serve.
