STRAWBERRY ORANGE SAUCE

Yield Makes 3 cups; 1/4 cup per serving

1 tablespoon orange-flavored liqueur and 1 tablespoon fresh orange juice, or 2 tablespoons fresh orange juice
1 3/4 cups strawberries and 1 3/4 cups strawberries (about 1 quart total), all hulled and sliced lengthwise, divided use
1 tablespoon sugar

Steps:

  • In a small saucepan, heat the liqueur and orange juice over medium heat.
  • Stir in 1 3/4 cups strawberries. Cook for 2 minutes, stirring frequently.
  • Stir in the sugar. Cook for 2 to 3 minutes, or until the berries soften. Remove from the heat.
  • Stir in the remaining 1 3/4 cups strawberries. Serve hot or pour into a small airtight container and refrigerate until ready to serve.
  • Cinnamon Blueberry Sauce
  • Substitute fresh blueberries for the strawberries and use 2 tablespoons of fresh orange juice. Add 1/2 teaspoon ground cinnamon when stirring in the sugar.

According to legend, the French believed strawberries were an aphrodisiac and always served newlyweds these magical berries. What, then, could be more delicious for a romantic occasion? In this recipe, fresh ripe strawberries team beautifully with butterscotch sauce and a hint of orange.

1 pint fresh strawberries
3 tablespoons dark brown sugar
1/4 cup butter
1 orange, juice of
1 -2 teaspoon grated orange rind
1/4 cup cream
3 tablespoons brandy

Steps:

  • Hull strawberries, and if large, slice in half.
  • Melt butter in a medium sized pan, add brown sugar and cook until sugar is just starting to melt.
  • Add the orange juice and rind, and cook stirring until sugar has dissolved.
  • Stir in the cream.
  • Add the strawberries and warm through gently.
  • (Take care not to overheat strawberries as they can otherwise become acidic in taste.) Warm brandy separately, light, and pour over strawberries.
  • Serve over vanilla icecream or crepes.

2 tablespoons dark corn syrup

60 g good-quality dark chocolate
3 tablespoons double heavy cream

Steps:

  • Place the strawberries and Cointreau in a medium bowl and stir until well combined. Cover and place in the fridge for 1-2 hours to macerate.
  • Run a vegetable peeler to peel along the long edge of the block of chocolate to make chocolate curls. Set aside until serving.
