1 package (16 ounces) penne pasta
1/4 cup olive oil
3 tablespoons butter
3 cups cubed fully cooked ham
1 large sweet red pepper, finely chopped
1 medium onion, chopped
2 garlic cloves, minced
1/4 cup minced fresh parsley
1-1/2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
1-1/2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
1 can (14-1/2 ounces) chicken broth
1 tablespoon lemon juice
1/2 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions; drain. Meanwhile, in a large skillet, heat oil and butter over medium-high heat. Add ham, red pepper and onion; cook and stir 4-6 minutes or until ham is browned and vegetables are tender. Add garlic and herbs; cook 1-2 minutes longer., Stir in broth and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until liquid is reduced by half. Add pasta; toss to combine. Sprinkle with cheese.

1 tablespoon olive oil
2 ½ cups cubed fully cooked ham
½ cup chopped onion
3 cloves garlic, minced
1 teaspoon Italian seasoning
¼ teaspoon red pepper flakes
salt and pepper to taste
4 cups low-sodium chicken broth
1 ¼ cups fat free half-and-half
¼ cup all-purpose flour
1 (16 ounce) package farfalle (bow tie) pasta
2 cups frozen peas and carrots
½ cup grated Parmesan cheese
chopped parsley for garnish

Steps:

  • Heat olive oil in a large pot over medium heat. Add ham and onion; saute for about 3 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in Italian seasoning, red pepper flakes, salt and pepper; cook for 2 minutes.
  • Whisk together chicken broth, half-and-half, and flour in a bowl until smooth; pour into the pot. Stir in farfalle pasta, cover, and cook for 15 minutes.
  • Add peas and carrots. Cook until pasta is cooked through, about 8 more minutes. Stir in Parmesan cheese and garnish with chopped parsley. Serve immediately.

We love pasta and there are so many things you can with all the great pasta choices. And pasta no longer needs to be long thin noodles with red sauce ! So this recipe is kind of a combination of 2 of my other ham and pasta recipes plus some extra ideas that were floating around. It's easy .. it's quick .. it's truly comfort...

Number Of Ingredients 16

4 Tbsp butter
4 Tbsp all purpose flour
1 tsp better than bouillon roasted chicken flavor
1/2 tsp salt
1/2 tsp black pepper
2 c milk
3/4 c grated parmesan cheese
1/4 c chopped green onion .. white and green parts
1/2 c baby green peas - fresh or frozen
2 Tbsp finely chopped red bell pepper - you can use green if you prefer
1 - 2 c diced ham
4 oz rotini pasta
1/4 c very thinly sliced carrot - using a mandolin makes this easy
1/4 c very thinly sliced celery - using a mandolin makes this easy
canned onion rings for garnish
salt and pepper to taste

Steps:

  • 1. In medium size pot melt the butter over medium heat. Whisk in the flour and stir constantly for about 3 minutes. Add the Better Than Bouillon, salt and pepper and whisk until the BTB is melted and blended in. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes or so.
  • 2. Add the parmesan cheese, green onion, peas, red bell pepper and ham to the mixture and stir. Cook - uncovered - over low heat until heated through. Stir frequently to avoid scorching.
  • 3. While the sauce is cooking, boil the Rotini pasta, the thinly sliced carrots and thinly sliced celery for 10 minutes or until the Rotini is of the doneness you prefer.
  • 4. Do not drain the pasta. Using a slotted spoon, scoop it into the sauce and stir to coat. Use a little of the pasta water to thin the sauce if you find it to be too thick.
  • 5. Heat through then serve in a bowl with a sprinkling of canned onion rings for garnish if desired. Salt and pepper to taste and enjoy !

1 cup cubed process cheese (Velveeta)
1/2 teaspoon seasoned salt

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a small skillet, saute onion in butter until tender. Drain spaghetti; Place in a large bowl. Add the ham, corn, cheese, seasoned salt and onion mixture. , Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 30-35 minutes or until cheese is melted, stirring once.

8 ounces extra wide egg noodles
1 tablespoon vegetable oil
1 lb cooked ham, cubed (about 2 cups)
1/2 cup red onion, chopped
1/2 teaspoon dried thyme
1/8 teaspoon salt
1/8 teaspoon white pepper
1 (10 3/4 ounce) can cream of mushroom soup (Campbell's)
1/4 cup milk
2 cups shredded extra-sharp cheddar cheese

Steps:

  • Cook the noodles according to the package directions. Drain and slightly butter.
  • Meanwhile, heat oil in a 4 quart saucepan over medium-high heat. Add onion and saute for 1 minute. Add ham and cook for about 15 minutes, until the onion is tender. (Stirring occasionally.).
  • Stir in the soup and the milk. Reduce the heat to medium-low. Cook and stir for 5 more minutes.
  • Add the cheese and stir until it melts.
  • Gently mix in the noodles and cook just until heated through.

2 to 3 slices rustic bread, such as ciabatta, trimmed of crusts and cut into 1-inch pieces
1 tablespoon unsalted butter
Coarse salt and freshly ground pepper
1 pound spaghetti
3 large eggs, room temperature
1 ounce Parmesan, finely grated (about 1/2 cup)
1 ounce sharp cheddar, finely grated (about 1/2 cup)
1/2 cup heavy cream
1/2 teaspoon Dijon mustard

Steps:

  • Pulse bread in a food processor until coarsely ground (you should have 1 cup). Toast breadcrumbs in a large skillet over medium heat, tossing, until golden and crisp, about 7 minutes. Remove from heat and add butter, tossing to coat. Season with salt and pepper.
  • Cook pasta in a large pot of generously salted water until al dente, according to package directions. Reserve 1 cup pasta water; drain.
  • Meanwhile, whisk together eggs, both cheeses, cream, and mustard in a bowl.
  • Return pasta to pot and add egg mixture. Cook over low heat, stirring, until sauce has thickened, about 2 minutes. Add reserved pasta water, 1/4 cup at a time, until pasta is evenly coated. Season with salt and pepper. Serve immediately, topped with breadcrumbs.
