This is how my Mom made BBQ chicken. She normally didn't use recipes when she cooked but she got this one off the back of a can of Hunts Tomato Sauce.

2 1/2-3 lbs chicken pieces
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons vegetable oil
1 (8 ounce) can hunt tomato sauce with onion
1/2 cup water
2 tablespoons vinegar
1 tablespoon brown sugar, packed
1 teaspoon Worcestershire sauce
1/2 teaspoon salt

Steps:

  • Season chicken with salt and pepper.
  • Brown chicken in oil and drain fat.
  • Combine remaining ingredients; pour over chicken.
  • Cover; and simmer 45 minutes or until chicken is tender, basting several times.

1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon garlic powder
1 teaspoon smoked paprika
¼ teaspoon red pepper flakes
½ teaspoon dried oregano
½ teaspoon ground mustard
1 tablespoon light brown sugar
6 small chicken drumsticks, or 8 small drumsticks
1 cup applewood chips
heavy duty aluminum foil
vegetable steamer basket

Steps:

  • Soak the applewood chips in cold water for at least 30 minutes. Drain before using.
  • In a small bowl, whisk together the salt, pepper, garlic powder, smoked paprika, red pepper flakes, oregano, ground mustard, and brown sugar.
  • Add the chicken drumsticks to a large bowl and pat dry with a paper towel. Season the chicken with the dry rub and toss to coat evenly. Set aside while you build the stovetop smoker.
  • Line a Dutch oven or large, heavy-bottomed pot with a lid with 2-3 sheets of heavy-duty aluminum foil. Spread the drained applewood chips in an even layer in the bottom of the pot and place the steamer basket on top.
  • Place the pot over high heat. Once the wood chips start to lightly smoke, add the chicken drumsticks to the steamer basket, place another sheet of foil on top, and cover with the lid. Smoke the chicken over high heat for 8-10 minutes, then reduce the heat to medium-low and continue cooking for another 20 minutes. Turn off the heat and allow the chicken to sit in the smoker, covered, for an additional 10 minutes. The internal temperature of the chicken should register between 165-170°F (74-78°C).
  • Arrange a rack in the upper third of the oven. Turn the broiler on high. Remove the chicken from the smoker, place on a rimmed baking sheet, and broil for 5-7 minutes, until the chicken has crisped and charred in spots. Serve immediately.

4 boneless skinless chicken breasts (1 1/2 lb)
3 cloves garlic, finely chopped
1 tablespoon salt-free Southwest chipotle seasoning blend
1/4 teaspoon kosher (coarse) salt
1 tablespoon olive oil
1/2 cup honey-roasted garlic barbecue sauce
1/4 cup water

Steps:

  • Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2 inch thick. Rub garlic over chicken; sprinkle with seasoning blend and salt.
  • In 12-inch nonstick skillet, heat oil over medium-high heat. Add chicken; cook 6 to 8 minutes, turning once. Add barbecue sauce and water, scraping skillet to loosen brown particles; cook 1 to 2 minutes longer or until chicken is no longer pink in center.
