STIR-FRY BURGERS

2 tablespoons vegetable or peanut oil
1 tablespoon finely grated peeled fresh ginger
1 clove garlic, chopped
1/4 cup hoisin sauce
1/4 cup spicy ketchup
1/4 cup dry sherry
1 teaspoon soy sauce
1 teaspoon toasted sesame oil
1 1/2 pounds ground chuck
3 tablespoons chopped fresh cilantro
Kosher salt and freshly ground black pepper
4 hamburger buns, lightly toasted
Serving suggestions: Lettuce, tomato, pickles and/or French fries

Steps:

  • Heat 1 tablespoon of the oil in a small saucepan over high heat. Add the ginger and garlic and cook until softened, about 2 minutes. Whisk in the hoisin sauce, ketchup, sherry, soy sauce and sesame oil and bring to a boil. Remove from the heat and cool slightly.
  • Mix together the beef with the cilantro, 1 teaspoon salt and 1/4 teaspoon black pepper using your hands until just combined. Form into four 3/4-inch-thick patties, about 4 1/2 inches in diameter. Heat a grill to medium-high heat. Cook the burgers, turning once, about 4 1/2 minutes per side for medium, brushing the burgers with some of the sauce in the last few minutes of cooking time.
  • Serve the burgers on the buns with the extra sauce on the side, lettuce and tomato on top if using, and pickles and fries on the side.

1 tablespoon sugar
1 tablespoon cornstarch
1 tablespoon ground mustard
1/3 cup water
1/3 cup low-sodium teriyaki sauce
1 lb lean ground beef
1 (16 ounce) package frozen asparagus stir-fry mixed vegetables (or your favorite stir-fry blend)
1 medium onion, halved and thinly sliced
2 teaspoons canola oil
2 cups hot cooked rice
2 teaspoons sesame seeds

Steps:

  • In a small bowl, combine the sugar, cornstarch and mustard.
  • Stir in water and teriyaki sauce until smooth; set aside.
  • In a large skillet or wok, stir-fry beef until no longer pink; drain and set aside.
  • In the same pan, stir-fry vegetable blend and onion in oil until crisp-tender.
  • Stir cornstarch mixture and add to pan.
  • Bring to a boil; cook and stir for 1-2 minutes or until thickened.
  • Add beef; heat through.
  • Serve with rice and sprinkle with sesame seeds.
