15-Minute Tofu and Vegetable Stir-Fry image

Tofu sometimes gets a reputation for being bland, but that's not the case in this quick stir-fry. We toss meaty baked tofu in a spicy Asian marinade with tons of bold flavor. Packaged stir-fry mix and pre-sliced shiitake mushrooms can easily be found in the produce section of most grocery stores, and make it possible for this healthy meal to come together in 15 minutes or less.

4 cups frozen cooked brown rice
1-inch piece ginger
1/4 cup low-sodium soy sauce
1 to 2 tablespoons garlic chili sauce
1 tablespoon toasted sesame oil
12 ounces baked tofu
3 tablespoons canola oil
One 3.5-ounce package sliced shiitake mushrooms (about 2 cups)
One 1-pound package fresh stir-fry vegetable mix (not frozen)
Kosher salt
1/2 cup roasted and salted cashew halves and pieces

Steps:

  • Prepare the rice according to the package directions. Peel and finely grate the ginger and put it into a small baking dish or medium bowl along with the soy sauce, garlic chili sauce and sesame oil. Whisk to combine.
  • Place a large saute pan over medium-high heat. Cut the baked tofu into 1-inch-by-1/2-inch pieces and add to the marinade. Stir to combine and reserve. Fill a small measuring cup or bowl with cold water and keep by the stovetop.
  • Add the canola oil to the hot pan and swirl to coat. Add the shiitake mushrooms and cook until tender and browned in spots, stirring frequently, about 2 minutes. Add the stir-fry vegetable mix and a large pinch of salt. Cook until crisp tender, 3 to 5 minutes (the cooking time will depend on the size of the vegetables in the mix). If at any time the pan seems too hot, stir in 1 to 2 tablespoons water. Add the marinated tofu to the vegetables along with 2 tablespoons water. Cook until the tofu is warmed through, 1 to 2 minutes.
  • Transfer the stir-fry to a large platter. Scatter the cashews on top and serve alongside the rice.

There are times when I just crave a wok full of vegetables, and this is my go-to dish. It's chock full of different textures and flavors. If there is something you hate, get rid of it and sub in something you love! This is a light, healthy but super flavorful vegetable stir-fry.

1/3 cup (90 milliliters) vegetable stock
3 tablespoons (45 milliliters) oyster sauce
1 tablespoon (15 milliliters) soy sauce
1/2 teaspoon brown sugar
1 teaspoon sesame oil
1 teaspoon cornstarch
Pinch white pepper
2 tablespoons (30 milliliters) vegetable oil
One 14-ounce (420-gram) package firm tofu (see Cook's Note), cut into large dice
2 teaspoons (10 grams) thinly sliced ginger
12 cremini mushrooms, sliced
4 ounces (95 grams) canned sliced bamboo shoots
6 canned water chestnuts, sliced
1 cup (240 grams) bean sprouts
1/2 cup (120 grams) julienned carrots
1 cup (240 grams) shredded Napa cabbage leaves
2 ounces (95 grams) snow peas, trimmed

Steps:

  • For the sauce: Stir together the stock, oyster sauce, soy sauce, brown sugar, sesame oil, cornstarch and pepper in a small bowl, making sure the cornstarch is dissolved well. Set aside.
  • For the vegetable stir-fry: Heat a wok or a large skillet over medium-high to high heat. Swirl in
  • the oil to coat the bottom. When you see wisps of white smoke, add the tofu and stir-fry until light brown on the edges, about 2 minutes. Then add the ginger and stir-fry it until aromatic, about 30 seconds. Add the mushrooms, bamboo shoots, water chestnuts, bean sprouts, carrots, cabbage and snow peas and keep them moving while searing. Don't be scared to scrape the pan and fold the vegetables over many times. Cook until the Napa cabbage gets bright green and starts to soften, 1 to 2 minutes.
  • Stir in the sauce, coat all the vegetables and tofu and bring the sauce to a boil. The cornstarch will thicken into a glaze, about 1 minute. Remove from the heat and serve immediately.

STIR-FRIED TOFU AND PEPPERS



Stir-Fried Tofu and Peppers image

This attractive stir-fry is inspired by a traditional Chinese dish called rainbow beef. The vegetarian version works well, and it's also easier to make. If you prefer a very firm tofu, take the extra time to weight it as directed in step 1. I am happy to skip this step and use firm tofu that hasn't been weighted.

1/2 pound firm tofu
2 tablespoons soy sauce
1 1/2 teaspoons brown sugar
2 tablespoons vegetable, peanut or canola oil
2 teaspoons hoisin sauce
1 teaspoon sesame oil
2 red bell peppers, seeded and cut in 1-inch squares
1 green bell pepper, seeded and cut in 1-inch squares
1 tablespoon minced fresh ginger
2 large garlic cloves, green shoots removed, minced
1/4 to 1/2 teaspoon dried red pepper flakes (to taste)
2 scallions, white and green parts, cut on the diagonal into 1-inch lengths
Cooked rice or noodles for serving

Steps:

  • Optional step for firmer tofu: Blot the tofu dry, wrap in a clean kitchen towel and place a cutting board on top. Let sit for about 15 minutes. Whether weighted or not, slice the tofu about 1/2 inch thick into 1- x 2-inch dominoes.
  • Mix together 1 tablespoon of the soy sauce, 1 teaspoon of the brown sugar and 1 tablespoon of the oil in a medium bowl. Toss with the tofu, and stir to make sure all of the pieces are coated. Let sit for five to 10 minutes while you prepare the other ingredients.
  • In a small bowl, stir together the remaining soy sauce and sugar, hoisin sauce and sesame oil. Set aside.
  • Heat a large nonstick skillet or wok over high heat until a drop of water evaporates on contact. Add the oil, turn the heat to medium-high and add the peppers. Stir-fry for a couple of minutes, until the peppers begin to soften, and add the garlic and ginger. Stir-fry for 20 seconds, until the garlic and ginger begin to smell fragrant, and add the tofu, dried red pepper flakes and green onions. Stir-fry two minutes, give the sauce a stir and add to the pan. Cover and cook for three minutes. Remove the lid, stir the ingredients in the pan, and taste and adjust seasonings. Serve with rice or noodles.

1 small carrot, peeled
1 medium zucchini
1/2 medium red pepper
2 tablespoons peanut oil
6 1/2 ounces five-spice baked tofu, finely sliced
1 medium red onion, finely sliced
1 tablespoon julienned gingerroot
1/4 cup chinese shaoxing wine or 1/4 cup dry sherry
2 teaspoons white sugar
2 teaspoons light soy sauce
2 teaspoons malt vinegar
1 teaspoon oyster sauce
1/2 teaspoon sesame oil
1 cup julienned scallion
2 tablespoons roasted sesame seeds

Steps:

  • Cut carrot and zucchini in half lengthwise, then finely slice on the bias. Remove seeds and membranes from pepper and cut into fine julienne.
  • Heat oil in a hot wok until surface seems to shimmer slightly. Add carrot, tofu, onion and ginger and stir-fry for 1 minute. Add wine or sherry, zucchini, pepper and sugar and stir-fry for 1 minute. Pour in soy sauce, vinegar, oyster sauce and sesame oil and stir-fry for a further minute or until vegetables are just tender. Toss in scallion and sesame seeds, stir-fry for 10 seconds, then remove from heat.
  • Transfer to a large bowl and serve immediately.

1/2 lb tofu
6 green onions
4 stalks celery
1 sweet red pepper
1/4 cup water
2 tablespoons oyster sauce
1 tablespoon cornstarch
1 tablespoon dry sherry or 1 tablespoon mirin (rice wine for cooking)
1 tablespoon soya sauce
2 tablespoons vegetable oil
1 tablespoon minced gingerroot
2 cups sliced mushrooms (, about 1/4 lb)

Steps:

  • Drain tofu and weigh down to press for 30 ins.
  • Cut into 1/2 inch cubes.
  • set aside Cut onions and celery into 1/2 inch diagonal pieces.
  • Cut red pepper into 1/2 inch chunks, set veggies aside.
  • Stir together water, oyster sauce, cornstarch, sherry and soya sauce, set aside.
  • In wok or large heavy skillet.
  • Heat 1 tbls of the oil over high heat, stir-fry ginger for 30 secs, add tofu and cook stirring gently, for about 3 mins or until light brown.
  • With a slotted spoon, transfer to heated platter.
  • Add remaining oil to wok and heat, stir-fry mushrooms, onions,celery and red pepper for 1 min.
  • Return tofu to wok, stir to mix well.
  • Stir oyster sauce mixture.
  • Pour into wok and cook, stirring until liquid comes to a boil and boils for 1 minute.
  • Serve immediately.
